GREEK GREEN BEANS (FASOLAKIA)



Greek Green Beans (Fasolakia) image

All-star recipe for Greek Green Beans. Velvety, tender green beans & potatoes, braised in a tomato-olive oil sauce. Flavor-packed, satisfying, vegan, and gluten-free.

Greek extra virgin olive oil (I used Private Reserve Extra Virgin Olive Oil)
1 large yellow onion, finely chopped
5 garlic cloves, minced
1 tsp ground cumin
2 tsp dried oregano
1 28-oz can peeled whole tomato
1 cup water
1 bay leaf
1 1/2 lb fresh French green beans, trimmed and cut into 1 1/2-inch pieces (frozen green beans work wonderfully in this recipe)
3 Yukon Gold potatoes (about 1 lb), cut into small piece (1/2 to 3/4-inch pieces)
Salt and black pepper
lemon juice
1/2 cup chopped fresh parsley leaves

Steps:

  • Preheat the oven to 300 degrees F.
  • In a large Dutch Oven, heat 1/4 cup extra virgin olive oil over medium heat. Add the onions and cook until tender, stirring occasionally (about 5 mins). Then add the garlic, cumin, and oregano. Cook another 2 mins, stirring regularly, until fragrant.
  • Add tomatoes, water, bay leaf, beans, and potatoes. Season with salt and pepper. Raise the heat and bring to a high simmer for 15 minutes, stirring occasionally.
  • Cover and transfer to the heated oven. Cook until the sauce slightly thickens, and the beans and potatoes can easily be cut with side of your fork; about 35 minutes or so. (It's a good idea to check once partway through cooking, add a little bit of water if needed.)
  • Remove from oven and stir in 2 tbsp lemon juice and chopped fresh parsley. Stir in a generous drizzle of olive oil (at least another 1/4 cup).
  • Serve immediately with Greek pita bread or your favorite rustic bread to sop up the sauce!

1 1/2 pounds green beans, trimmed and cut into 2- to 3-inch lengths
1 tablespoon tomato paste
1(14.5-ounce) can diced tomatoes, drained with juice reserved, chopped coarse
1teaspoonsalt
1/4 teaspoon pepper
1/4 cup chopped fresh parsley
Red wine vinegar

Steps:

  • 1. Adjust oven rack to lower-middle position and heat oven to 275 degrees. Heat 3 tablespoons oil in Dutch oven over medium heat until shimmering. Add onion and cook, stirring occasionally, until softened, 3 to 5 minutes. Add garlic and cayenne and cook until fragrant, about 30 seconds. Add water, baking soda, and green beans and bring to simmer. Reduce heat to medium-low and cook, stirring occasionally, for 10 minutes. Stir in tomato paste, tomatoes and their juice, salt, and pepper. 2. Cover pot, transfer to oven, and cook until sauce is slightly thickened and green beans can be easily cut with side of fork, 40 to 50 minutes. Stir in parsley and season with vinegar to taste. Drizzle with remaining 2 tablespoons oil and serve warm or at room temperature.

Coarse salt and ground pepper
8 ounces green beans, trimmed and halved
2 navel oranges
2 tablespoons olive oil
2 tablespoons white-wine vinegar
1 1/2 cups crumbled feta (6 ounces)
1 head romaine lettuce (about 1 1/2 pounds), halved and roughly chopped
1 small red onion, halved and thinly sliced
1 can (15 ounces) white beans, rinsed and drained

Steps:

  • In a medium saucepan of boiling salted water, cook green beans until crisp-tender, 4 to 6 minutes. Drain green beans, and rinse with cold water to stop the cooking.
  • Using a sharp knife, slice off both ends of each orange. Cut off peel, following the curve of the fruit. Halve fruit from top to bottom, and thinly slice each half crosswise.
  • In a bowl, whisk together oil and vinegar; season with salt and pepper. Add feta, oranges, lettuce, onion, beans, and green beans. Toss to combine.

2 tablespoons vegetable broth
1 tablespoon fresh lemon juice
1 tablespoon extra virgin olive oil
1 1/4 lbs green beans, trimmed
salt
freshly ground black pepper
2 tablespoons slivered almonds

Steps:

  • Preheat oven to 425*.
  • Lightly oil a baking sheet and set aside.
  • Combine the broth, lemon juice and oil in a glass measuring cup.
  • Place the beans on the prepared baking sheet and drizzle with the broth mixture.
  • Spread the beans out into a single layer.
  • Roast for 8 minutes.
  • Remove the baking sheet from the oven.
  • Season beans with the salt and the freshly ground pepper, then stir and turn over.
  • Sprinkle with the almonds.
  • Roast for an additional 5-7 minutes, or until the beans are wrinkled and tender and the nuts are fragrant and browned.
  • Serve immediately.

4 teaspoons olive oil
600 g lamb, diced
1 large red onion, chopped
1 kg fresh green beans, washed and trimmed
680 g passata (pureed tomato pasta sauce)
180 ml water
salt
fresh ground black pepper
1/8 cup mint leaf, chopped roughly

Steps:

  • Heat the oil in a large frying pan over a medium high heat.
  • Add the diced lamb and cook until the meat is browned.
  • Stir in the trimmed beans and onion. Cook for approx 10 minutes, stirring occassionally.
  • Stir in the passata sauce, water, salt and pepper to taste and the chopped mint.
  • Reduce the heat to low. Cover and simmer for 3/4 hour to one hour -- until the meat is cooked through and the beans are tender.
  • Check the liquid content of the dish at the 30 minute mark and if there seems to be too much liquid, simmer uncovered for the remaining cooking time.

  • Prepare the spices. Mix all together and store in an airtight container. I know this recipe calls for a lot of spices but this is an all-purpose spice that you can use in any recipe calling for Baharat or 7-spice.
  • Clean and season: clean your chicken with water to remove any gross bits. In a small bowl, mix the turmeric, Bharat, and black pepper. Coat the chicken with 1 tsp of the spice mixture. Set aside the rest of the mixture for later use.
  • Warm the olive oil, on medium heat, then add the onion, cook, until transparent, then add the rest of the spices and give it a little stir. Make space for the chicken, by moving the onions to the side or making pockets for the chicken to sit. Then lay the chicken skin-side down in the pan.
  • Let it get crispy, no peeking! The chicken will let you know when they're ready to flip because they won't stick. The skin should be crispy and release very easily from the pan. Flip the chicken thighs and let's move on to the next step. Some times they don't release easily, but this isn't very common, but it can happen it your heat is too high.
