Flavoured with honey, hoisin sauce and Chinese five-spice, this one-pan chicken dish makes a cheap and easy midweek family meal

8 chicken thighs, skin on and bone in
4 tbsp hoisin sauce
2 tsp sesame oil
2 tbsp clear honey
1 ½ tsp Chinese five-spice powder
thumb-sized knob of ginger, grated
2 garlic cloves, grated
bunch spring onions, chopped
50g cashew nuts, toasted
cooked brown rice, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Arrange the chicken thighs in a large roasting tin and slash the skin 2-3 times on each thigh. Mix together the hoisin, sesame oil, honey, five-spice, ginger, garlic and some seasoning. Pour over the chicken and toss to coat - you could now marinate the chicken for 2 hrs, or overnight if you have time. Roast, skin-side up, for 35 mins, basting at least once.
  • Stir through the cashew nuts and sprinkle the spring onions over the chicken. Return to the oven for 5 mins, then serve with brown rice.

Glossy, sticky, sweet... this simple marinade turns everyday, oven-baked chicken into what dreams are made of. To amp up the flavour even more, leave it overnight so soak up all that goodness. Gorgeous!

Number Of Ingredients 12

4 skin-on, boneless chicken thighs (or any skin-on chicken pieces)
3 tbsp hoisin
2 tbsp honey
1 tbsp oyster sauce
1 tbsp dark soy sauce
3 garlic cloves, finely grated
2 tsp Homemade Chinese Five Spice (you can use store-bought too)
400g Chinese broccoli (gai larn)
steamed rice to serve
Basting Sauce:
2 tbsp honey
1 tbsp dark soy sauce

Steps:

  • Step 1.In a large bowl, combine the hoisin, honey, oyster sauce, dark soy sauce, garlic and Chinese five spice. Add the chicken pieces and mix until well coated. Marinate for at least 2 hours and up to overnight.
  • Step 2.Preheat oven to 180°C/356°F (fan-forced).
  • Step 3.Line a large baking tray or roasting dish with foil. Top with a baking rack. Place the chicken pieces onto the baking rack. Cook in the oven for 10 minutes.
  • Step 4.While the chicken is cooking, steam the Chinese broccoli in a bamboo steamer. Or alternatively, place the broccoli in a microwave safe bowl, add a ¼ cup water. Then cover with cling film and microwave on high for 2 minutes. Leave covered until ready to serve.
  • Step 5.Mix the basting sauce ingredients together in a small bowl.
  • Step 6.Remove the chicken from the oven and brush the top of the pieces with the basting sauce. Place back into the oven to cook for a further 5 minutes or until cooked through.
  • Step 7.Serve with steamed Chinese broccoli and rice.

This recipe calls for boneless chicken breasts WITH the skin on. This is a quick recipe- Most of the prep/cook time is just spent allowing the chicken to marinate. While this recipe uses the grill, I don't see why you can't do it on the stove top or under the broiler with a little modification. From Cooking Light.

3 1/2 cups water
1/3 cup kosher salt
3 tablespoons brown sugar
2 tablespoons Chinese five spice powder
4 (6 ounce) boneless chicken breast halves
1 cup ice
2 tablespoons hoisin sauce
2 teaspoons dark sesame oil
2 teaspoons fresh ginger, minced
1 1/2 teaspoons brown sugar
1 1/2 teaspoons reduced sodium soy sauce
1/4 teaspoon Chinese five spice powder
cooking spray

Steps:

  • Combine water, kosher salt, 3 Tbsp brown sugar, and 2 Tbsp soy sauce in a large bowl and stir until salt and sugar have dissolved.
  • Stir in 2 Tbsp five-spice powder.
  • Pour mixture into a large ziplock bag.
  • Rinse chicken with cold water.
  • Place chicken and ice in bag with the salt mixture.
  • Refrigerate for 2 hours, turning several times.
  • Remove chicken from bag and pat dry with paper towels.
  • Discard the brine/marinade.
  • Combine hoisin sauce, sesame oil, ginger, 1 1/2 tsp brown sugar, 1 1/2 tsp soy sauce, and 1/4 tsp five-spice powder in a small bowl.
  • Heat one side of the grill to medium and leave the other side turned off.
  • Place chicken, skin side down, on grill rack coated with cooking spray.
  • Close lid and grill for 8 minutes on each side, brushing it occasionally with the hoisin sauce mixture.
  • Place chicken skin side up on the unheated side of the grill; brush again.
  • Grill an extra 5 minutes or until done.
  • Discard skin and serve.

8 chicken thighs and 8 drumsticks, skin on
3 spring onions , shredded, to finish
4 tbsp groundnut oil
6 garlic cloves , finely chopped
finger-length piece fresh root ginger , grated
4 tbsp Shaohsing rice wine or dry sherry
4 tbsp light soy sauce
4 tbsp clear honey
4 tsp five spice powder

Steps:

  • Whisk together the marinade ingredients, put the chicken into a dish, then pour over the marinade, mixing to coat. Cover, then chill for at least 20 mins, or up to a day if you have time.
  • Heat oven to 180C/fan 160C/gas 4, and lift the chicken out of the marinade into a roasting tin. Roast for 40 mins, pour over the remaining marinade, then cook for a further 30 mins until golden and sticky. Sprinkle with the spring onion, then serve.

1 tablespoon rice vinegar (not seasoned)
8 chicken thighs with skin and bones (2 3/4 pounds)

Steps:

  • Preheat oven to 500°F.
  • Whisk together all ingredients except chicken, then coat chicken all over with sauce. Arrange thighs, skin sides up in 1 layer without crowding, in a foil-lined large shallow baking pan (1 inch deep). Place chicken in a freezer bag and seal. Pushing out as much air as possible. Allow sauce to cool and place in its own freezer bag. Place both bags inside one large bag, seal, label and freeze. To serve: Thaw in fridge. Cook as directed in recipe. The cooked chicken can be frozen as well. Just allow to cool, then place in a freezer bag."
