GRILLED SHRIMP PIZZA

3/4 pound medium shrimp, peeled and deveined
1 red onion, sliced into rounds
1/4 cup extra-virgin olive oil, plus more for brushing
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
1 pound prepared pizza dough, at room temperature
1 cup cherry or grape tomatoes, halved
1/2 cup crumbled feta cheese
2 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill to medium high. Toss the shrimp and onion in a bowl with the olive oil and oregano. Season with salt and pepper.
  • Stretch the pizza dough into a roughly 8-by-10-inch rectangle. Lightly brush the grill with olive oil. Lay the dough on the grill and cook until the top begins to bubble and the bottom is marked, about 3 minutes. Remove with tongs and put cooked-side up on a cutting board. Brush with olive oil.
  • Grill the shrimp and onion, turning, until the onion softens and the shrimp are lightly charred, about 5 minutes. Top the crust with the shrimp and onion, then slide the pizza back onto the grill. Top with the tomatoes and feta, cover and grill until the dough is cooked through and the cheese is soft, about 5 more minutes.
  • Carefully transfer the pizza to the cutting board. Sprinkle with the parsley and cut into pieces.

3 tablespoons unsalted butter
3 garlic cloves, minced
1/4 teaspoon crushed red pepper
1/3 cup dry white wine
Finely grated zest of 1/2 lemon
Kosher salt and freshly ground pepper
All-purpose flour, for dusting
1 pound refrigerated pizza dough, at room temperature
1/2 pound medium peeled and deveined shrimp with tails removed, halved lengthwise
3 ounces whole-milk mozzarella cheese, shredded
1/4 cup flat-leaf parsley, roughly chopped
Freshly grated Parmesan, for serving

Steps:

  • Set an inverted baking sheet on a rack in the center of the oven and preheat the oven to 450 degrees F. Invert another baking sheet and place a piece of parchment on top and set aside.
  • Melt the butter in a small saucepan over medium heat. Stir in the garlic and crushed red pepper flakes, and cook until fragrant, about 2 minutes. Pour in the wine and reduce until the alcohol smell is no longer present and the sauce is golden, 4 to 5 minutes. Remove the pan from the heat and stir in the lemon zest. Season with salt and pepper and set aside.
  • Dust the parchment paper on top of the inverted baking sheet with flour. On a lightly floured work surface, roll out and stretch the dough into a 12-inch circle then place it on the paper. Scatter the shrimp evenly over the dough leaving a 1/2 inch border all around. Spoon the butter sauce over the shrimp, and use a pastry brush to spread the sauce to the edges. Finish by sprinkling the mozzarella cheese over the top, staying within the border.
  • Place the sheet pan with the pizza on top of the preheated inverted baking sheet and bake until the dough is crisp and the shrimp are cooked through, 12 to 14 minutes. Sprinkle the pizza with the parsley and freshly grated Parmesan, slice into wedges and serve immediately.

2 ounces Dijon mustard
1 tablespoon chopped garlic
1 tablespoon chopped shallots
1 tablespoon thyme leaves, finely chopped
Juice of 2 lemons
6 ounces extra-virgin olive oil
1/2 cup extra-virgin olive oil
20 cloves garlic, sliced thinly using a mandoline
Eight U15 wild shrimp, peeled and deveined
Extra-virgin olive oil, for drizzling
Chopped fresh oregano, for sprinkling
One 250-gram pizza dough ball, stretched and ready for toppings (make or buy; I highly recommend using a Neapolitan recipe with 00 flour)
1 cup escarole
1/2 cup Manchego, grated
1/2 cup cubes fresh mozzarella
1 tablespoon capers
1 ounce Pecorino-Romano, grated
Dash crushed red pepper
Dash sea salt

Steps:

  • For the vinaigrette: Whisk together the vinegar, Dijon, garlic, shallots, thyme and lemon juice in a bowl. Pour in the oil slowly, whisking until emulsified. Reserve.
  • For the garlic confit: Heat olive oil in a saucepan, then pour over garlic in a bowl and allow to cool. Reserve.
  • For the pizza: Preheat the oven with a pizza stone in it to 500 degrees F.
  • Split shrimp in half lengthwise, then coat with a little olive oil and fresh oregano and set aside.
  • Place dough on a work surface. Spread escarole over the dough, then add Manchego and mozzarella. Place shrimp on the pie, leaving room so that they will not be overcrowded. Transfer the pizza to a peel, then transfer to the pizza stone.
  • Bake until the pizza and shrimp look cooked, 10 to 15 minutes.
  • Garnish pizza with capers, 1 tablespoon garlic confit, 2 ounces vinaigrette, Pecorino, crushed red pepper and sea salt. Slice and serve.

2 cloves garlic, grated
1 1/2 cups milk
1/2 cup grated Parmesan
1 pound frozen pizza dough, thawed
All-purpose flour, for dusting
1 cup deli mozzarella (part-skim, low-moisture), grated
Red pepper flakes, for sprinkling
3 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill pan over medium-high heat.
  • Sprinkle the shrimp in a bowl with the oregano, 1 tablespoon olive oil, 1/2 teaspoon salt and a pinch of pepper.
  • Heat a skillet over medium-high heat, then add the butter and let melt. Add the flour and cook, 1 minute. Add the garlic and continue to cook, whisking, 1 minute more. Whisk in the milk and cook until very thick, 2 to 3 minutes. Stir in 1/4 cup Parmesan and remove from the heat. Season with a pinch of salt and pepper.
  • Preheat the broiler to high.
  • Roll out the pizza dough on a lightly-floured work surface into two 10-inch ovals. Brush the grill pan with the remaining tablespoon olive oil. Grill the dough on both sides until there are grill marks, 2 to 3 minutes per side. Remove the crusts to a sheet tray. Add the shrimp to the grill pan and grill on both sides until fully cooked, pink and opaque, about 4 minutes total. Spread the white sauce on the dough in an even layer. Scatter the shrimp over the sauce. Sprinkle with the mozzarella and the remaining 1/4 cup Parmesan. Place under the broiler until the cheese is melted and bubbly, keeping a close eye so it doesn't burn, 2 to 7 minutes. Sprinkle the red pepper flakes and parsley on top before serving.

1 package dry yeast
1 1/2 teaspoons granulated sugar
1 1/2 cups lukewarm water
2 tablespoons olive oil
1 1/2 teaspoons salt
4 1/2 cups unbleached flour
3 cloves whole unpeeled garlic
5 tablespoons olive oil
1/3 cup grated romano cheese
1 lb large shrimp, peeled and deveined
2 tablespoons minced garlic
1 teaspoon crushed red pepper flakes
1/4 cup dry white wine
4 tablespoons butter
1 tablespoon fresh parsley or 1 tablespoon dried parsley

Steps:

  • For dough:.
  • Dissolve yeast and sugar in water and let stand 10 minutes.
  • Add oil and salt.
  • With dough hook mix onlow, adding flour slowly until sot ball forms.
  • Knead with machine for 3-4 minutes.
  • Knead by hand on lightly floured surface to a smooth ball.
  • Place dough in a greased bowl (use olive oil).
  • Cover and let stand until almost doubled.
  • While dough is rising, place garlic on a baking sheet, and drizzle 1 tablespoon oil on each bulb.
  • Roast at 375 degree oven until entire bulb is soft (20 minutes).
  • Let cool.
  • Remove cloves from the husks.
  • Mash garlic into a paste.
  • Punch down the the dough.
  • Stretch to fit a well-oiled 15 inch round deep pizza pan.
  • Let rise 30 minutes.
  • Preheat oven to 425 degrees.
  • Brush pizza with olive oil.
  • Spread with garlci paste and sprinkle with grated cheese.
  • Bake 20 minutes.
  • Remove from oven.
  • While dough is cooking, heat 2 tablespoons oil in frying pan.
  • Add shrimp and cook 2 minutes.
  • Remove shrimp.
  • Add garlic and pepper to pan and cook 30 seconds.
  • Add wine.
  • Simmer until wine is reduced to about 1 tablespoon.
  • Remove from heat.
  • Whisk in butter 1 tablespoon at a time.
  • Add parsley.
  • Arrange shrimp on top of pizza.
  • Pour sauce over shrimp.
  • Bake 10-15 minutes, until bottom is light brown.
  • Let it set for 5 minutes before cutting.

2 ears Corn, Cooked
1/2 lb. Shrimp, Peeled And Deveined, Cut In Half Lengthwise
1 Batch Pre-made Or Homemade Pizza Dough
1/2 tsp. Salt
1/2 tsp. Ground Pepper
1/4 c. Grated Parmesan Cheese
1/2 c. Grated Mozzarella Cheese
5 leaves Basil, Thinly Sliced
2 tbsp. Minced Flat-leaf Parsley

Steps:

  • Preheat oven to 500ºF. If using a pizza stone, put it in the oven to preheat. Otherwise, use a baking sheet coated with cooking spray.Heat ½ teaspoon olive oil in a medium nonstick skillet set over medium heat. Add zucchini and cook for 2 minutes. Transfer to a plate.Increase heat to medium-high and add ½ teaspoon olive oil to the skillet. Add shrimp and cook for 1 minute, turning halfway through. Transfer to a plate.Cut corn kernels off the cobs. Discard the cobs.Dust counter with flour and roll out pizza dough. Transfer to a pizza peel dusted with cornmeal or to the prepared baking sheet.Brush dough with 1 tablespoon olive oil and sprinkle with salt, pepper and Parmesan cheese.   • Stretch it:On a lightly floured work surface, stretch or roll 1 piece Basic Grilled Pizza Dough or 4 ounces store-bought dough into a 10-inch-long oval or other desired shape. Brush one side lightly with Herb Oil or olive oil and season with salt and pepper.
  • Grill it:Using your hands, place dough, oiled side down, directly over heat source. Brush dough with herb oil or olive oil and cook until underside is lightly charred and bubbles form all over top, 1 to 2 minutes. With tongs, flip dough and cook until lightly charred, 1 to 2 minutes. Slide dough to cooler side of grill.

  • If desired, halve shrimp lengthwise. Toss shrimp with 1 tablespoon of the pesto to coat. Spread the remaining 4 tablespoons pesto over baked crusts. Top with shrimp; sprinkle with mozzarella cheese. Bake for 5 to 8 minutes more or until bubbly. Cut each pizza into six slices.

1 -2 tablespoon olive oil

salt and pepper, to taste
3 -4 fresh basil leaves, chiffinod
1/2 teaspoon dried oregano
24 medium cooked shrimp, peeled and diveined
12 large cherry tomatoes, sliced in half and seeds removed
8 ounces shredded mozzarella cheese

Steps:

  • Preheat oven to 475.
  • Saute onions, garlic and spinach in 1 teaspoon oil{adding more is needed}till translucent.
  • Remove from pan season with basil, oregano, habanaro, salt and pepper, set aside.
  • Unroll pizza dough and shape into a circle and place on a pizza stone.
  • Brush 1 tablespoon oil on dough, arrange tomatoes, cut side up and shrimp on oiled dough.
  • Place spinach mixture around the shrimp and tomatoes.
  • Top with mozzarella then grated cheese.
  • Sprinkle remaining oil over all.
  • Bake 10-15 minutes till bubbling and lightly browned.

½ cup mayonnaise
2 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (10 ounce) container refrigerated pizza dough
2 tablespoons olive oil
1 teaspoon Italian seasoning
2 tablespoons olive oil
1 small red bell pepper, sliced
½ small red onion, sliced
2 teaspoons Italian seasoning
2 (6.5 ounce) cans small shrimp, drained

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Stir together the cream cheese, Parmesan cheese, mayonnaise, garlic, and spinach until evenly mixed; set aside.
  • Press the pizza dough onto a baking sheet, and brush with 2 tablespoons of olive oil. Sprinkle with 1 teaspoon Italian seasoning. Bake in the preheated oven until golden brown, 10 to 12 minutes.

  • Combine 3 cheeses and sprinkle evenly over pizza.
