2 slices fresh white bread, crusts removed
500g pack minced pork
1 onion, roughly chopped
1 garlic clove, roughly chopped
big handful of parsley
1 tbsp fresh chopped oregano or 1 tsp dried
4 tbsp freshly grated parmesan
1 egg, beaten
8 slices prosciutto

Steps:

  • Heat the oven to 190C/fan 170C/gas 5. Put bread in processor and blitz to make crumbs, then tip into a bowl with the pork.
  • Tip the onion, garlic and herbs into the food processor and process until finely chopped. Add to the bowl with the parmesan and egg. Finely chop 2 slices of the prosciutto and add to the mix with some salt and pepper. Mix well with a fork or your hands.
  • Use the rest of the prosciutto to line a 1.5 litre loaf tin. Spoon in the meatloaf mix and press down well. Flip the overhanging prosciutto over the top, then put the loaf tin into a roasting tray.
  • Pour hot water from the kettle into the roasting tray to come halfway up the loaf tin and bake for 1 hr until loaf shrinks from the sides of tin.
  • Cool in the tin for 10 mins, then drain off any excess liquid and turn out onto a board. Cut into thick slices and serve warm or cold with salad.

1 cup 2% milk
1-3/4 cups soft bread crumbs
1/4 cup chopped onion

1 can (15-1/4 ounces) whole kernel corn, drained

1/2 c grated onion
1 c fresh bread crumbs
1/2 c chicken broth
2 eggs, lightly beaten
2 clove garlic, minced
1 Tbsp tomato paste
2 Tbsp worcestershire sauce
2 Tbsp fresh chopped parsley, or 1 tbsp. dried
1/2 tsp salt
1/2 tsp ground black pepper
1 c frozen peas and carrots
TOPPING:
2 c cooked mashed potatoes (i use bob evans prepared)
1/4 c frozen peas and carrots

Steps:

  • 1. In a large bowl, mix together all meatloaf ingredients until well combined. Form into a loaf, about 9x5-inches and transfer to a loaf pan that has been sprayed with cooking spray.
  • 2. Bake in a preheated 350-degree oven for 40 minutes. Then increase oven temperature to 400 degrees.
  • 3. Remove meatloaf from oven and top with mashed potatoes, spreading out with spatula to seal edges. Sprinkle with remaining 1/4 cup peas and carrots. Return to oven and bake an additional 20 minutes.
  • 4. Remove meatloaf from oven to a cooling rack. Transfer meatloaf to a cutting board or platter and rest 10 minutes before serving.

2 tablespoons butter
1 onion (chopped)
4 cloves garlic (minced)
1 cup carrots (frozen, sliced)
2-3 cups meatloaf (leftover, crumbled)
2 tablespoons flour
1 cup beef broth
1/2 cup ketchup
2 tablespoons mustard
1 tablespoon Worcestershire sauce
1 teaspoon marjoram leaves (dried)
Salt and pepper (to taste)
1 (20-ounce) package mashed potatoes (refrigerated)
1 cup peas (frozen)
1/3 cup sour cream
1/3 cup Parmesan cheese (grated)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 375 F. In a large skillet, melt the butter over medium heat.
  • Add the onion and garlic and sauté for 4 to 5 minutes, or until the onions are turning translucent.
  • Add the carrots and sauté for 4 minutes, or until the carrots thaw.
  • Add the crumbled meatloaf and sauté for 4 to 5 minutes longer until the mixture is hot and combined.
  • Add the flour and sauté for 3 more minutes.
  • Add the broth, ketchup, mustard, Worcestershire sauce, marjoram, and salt and pepper to taste. Stir. Simmer the mixture for 10 minutes, stirring occasionally.
  • Meanwhile, heat the refrigerated potatoes as directed on the package, or use leftover mashed potatoes, if available.
  • Add the peas and sour cream to the beef mixture in the skillet and stir to combine.
  • Pour into a 2 1/2-quart casserole dish and spread the mixture level.
  • Top with the mashed potatoes and spread to cover, then run a fork over the potatoes to make small peaks that will brown in the oven. Sprinkle with the Parmesan cheese.
  • Bake the shepherd's pie for 25 to 35 minutes or until the filling is bubbly and the potatoes are golden brown on top. Let cool for 10 minutes before serving.

After doing a search, I couldn't find a decent Shepherd's Pie recipe... I did find recipes for meatloaf and mashed potato bake, however. And thus, Baked Meatloaf Shepherd Pie was birthed. This recipe is an adaptation of two highly rated recipes, Meatloaf #54257 and Mashed Potato Bake #41344. It is comfort food and a great dish to bring to someone who needs a meal, as it doubles easily, and freezes well. Enjoy!

1 lb lean ground beef
1/2 slice bread, finely chopped
1 whole egg
1/2 small sweet onion, finely chopped (such as Vidalia)

1 sweet onion, sliced in rings (such as Vidalia)
4 butter potatoes, cubed

Steps:

  • Preheat oven to 350 degrees.
  • Prepare meatloaf: Combine first eight ingredients in a large bowl.
  • Smooth into a loaf baking dish.
  • Bake uncovered for 1 hour.
  • While meatloaf is baking, prepare potatoes: Boil potatoes until tender, drain water.
  • Mash potatoes with fork, stirring in 1/3 cup of half & half.
  • In skillet melt margarine and brown slices of onions.

  • Mix peas and carrots together and add them on top of the beef.
  • Spoon mashed potato mixture on top of the vegetables. The potatoes should form the top layer, so be careful not to mix the vegetables with the potatoes.
  • Bake at 350 degrees for 20 minutes.

1 sweet potato or yam (200 grams)
1 pound ground beef
1 pound chorizo
1 yellow onion, diced
1 chipotle pepper in adobo sauce, minced
2 tablespoons adobo sauce
4 garlic cloves, minced
1 teaspoon chili powder
½ teaspoon garlic powder
salt and pepper, to taste
2 eggs, whisked
1 cup almond flour/meal
1 head of cauliflower, cut into florets (580 grams)
3 tablespoons coconut milk or broth (just some kind of liquid)
avocado, chopped, to garnish
goat cheese, to garnish (optional - do not use for strict paleo)
red pepper flakes, to garnish

Steps:

  • Preheat oven to 400 degrees.
  • Poke holes in the sweet potato or yam and wrap in foil. Place in oven and cook for 35-40 minutes or until sweet potato or yam is soft to the touch, and completely cooked through then remove from oven.
  • Turn oven temperature down to 375 degrees.
  • In a large bowl, mix together beef, chorizo, onion, chipotle pepper in adobo sauce, adobo sauce, garlic cloves, chili powder, garlic powder, salt and pepper, eggs, and almond flour until well combined.
  • Press meat mixture down into a bread pan or two bread pans, depending on the size you own.
  • Cook for 35-40 minutes.
  • While the meat cooks, steam the cauliflower until cauliflower is fork tender.
  • Place cauliflower in a blender or food processor (I used a blendtec which gets it's to a more fine puree). Puree cauliflower until completely soft and almost a soup consistency.
  • Then add baked sweet potato or yam (be sure to peel it first) and puree with cauliflower. Scrape down the sides, as needed. Then add coconut milk or some kind of mixture to get the cauliflower and sweet potato to completely come together in a smooth consistency.
  • Once meatloaf has cooked has cooked through (around 35-40 min) place cauliflower/sweet potato mixture on top, smooth out, and place the meatloaf back in the oven under a high broiler. Cook for about 5 minutes.
  • Top with chopped avocado, goat cheese, and red pepper flakes.

Steps:

  • Preheat the Traeger grill to 375 degrees F for about 10-15 minutes, or until it comes to proper temperature.
  • In a large bowl, add the ground beef, egg, bread crumbs, chopped onion, bbq sauce, and salt. Mix well, but be careful not to over mix.

For the Potatoes:
5 medium Yukon Gold potatoes, peeled and cut into chunks
5 tablespoons unsalted butter, divided
1/3 cup grated Parmesan cheese
1/4 cup milk
Kosher salt and freshly ground black pepper
For the Meatloaf:
1 tablespoon extra-virgin olive oil
1 medium onion, minced (about 1 cup)
1 rib celery, minced (about 1/2 cup)
2 medium cloves garlic, minced (about 2 teaspoons)
2 large eggs
1/4 cup homemade or store-bought low-sodium chicken stock
1/2 teaspoon unflavored gelatin
1 pound ground beef
1/2 pound ground pork
1/2 pound ground veal
1 tablespoon Worcestershire sauce
1 tablespoon Dijon or prepared mustard
1 1/2 tablespoons tomato paste
1/2 teaspoon smoked paprika
3/4 teaspoon dried thyme
21 Saltine crackers, finely crushed

3/4 cup frozen pea and carrots mixture, thawed, or the equivalent fresh and blanched
For the Sauce:
4 ounces Stilton cheese
1 cup heavy cream
1/4 teaspoon freshly ground black pepper

Steps:

  • For the Potatoes: Cover potatoes with water in a large saucepan and place over medium-high heat. Bring to a boil and simmer until tender when pierced with a fork, about 20 minutes. Drain and return to pan. Add 3 tablespoons butter, Parmesan, and milk. Season with salt and pepper and whip potatoes using a hand-held mixer until airy, but do not over-mix.
  • For the Meatloaf: Heat olive oil in a medium skillet over medium heat until shimmering. Add onion, celery, and garlic and cook, stirring often, until tender and translucent, about 7 minutes. Transfer to a large bowl and let cool.
  • Adjust oven rack to lower-middle position and preheat oven to 375°F. Whisk eggs and chicken stock in a medium bowl. Sprinkle with gelatin and let stand for 5 minutes.
  • Add the beef, pork, veal, Worcestershire sauce, mustard, tomato paste, paprika, thyme, 3/4 teaspoon salt, 1/2 teaspoon black pepper, saltines, and Parmesan cheese to bowl with cooled onion mixture. Add egg mixture and combine using hands. Do not over-mix.
  • Spray loaf pan with cooking spray. Pack half of the meat lightly and evenly into the loaf pan, creating a well lengthwise down the center and leaving about an inch not indented on either end. Fill well with peas and carrots. Top with remaining meat, pressing gently to fuse top and bottom halves. Evenly spread mashed potatoes on the top and make a crosshatch pattern using the tines of a fork. Cut remaining 2 tablespoons of butter into small pieces and dot them on top of the potatoes. Transfer meatloaf to the oven to cook.
  • For the Cheese Sauce: While meatloaf cooks, combine cheese, cream, and pepper in a small saucepan. Heat over medium-low heat, stirring frequently, until cheese is melted and sauces has thickened, about 10 minutes. Cover and keep warm.
  • The meatloaf is done cooking when the potatoes are browned and an instant-read thermometer inserted into center of loaf reads 135°F to 140°F, 55 to 65 minutes.Remove from oven and let rest for 15 minutes before slicing. Serve immediately, passing Stilton sauce at table.

1/2 c grated onion
2 c fresh bread crumbs
1/2 c chicken broth
2 eggs, lightly beaten

This was on the box of Hormel Homestyle Meat Loaf & Tomato Sauce. It is a microwave meatloaf. I liked the recipe but changed it and used my own homemade meatloaf for it. My topping for the meatloaf was a bit different than theirs as well. I used 4 tbsp. ketchup, 4 tbsp. brown sugar and 1/4 c water mixed together well. I also put my topping on when I put the meatloaf in the oven instead of half way through cooking. I know that most Shepherd's Pie recipes use regular ground beef but the taste with the meatloaf is so much more satisfying and you know for sure you are eating comfort food! The prep time and cooking time will be more if you use homemade meatloaf and home cooked potatoes. But since the meatloaf will be leftover, it shouldn't be that much longer.

1 (17 ounce) package hormel refrigerated meatloaf & tomato sauce, crumbled (I use leftover homemade meatloaf)
1 (10 ounce) package frozen mixed vegetables (any kind you like)
1 (10 3/4 ounce) can cream of mushroom soup (I use Campbell's because I think it has the best flavor)
3 cups instant mashed potatoes (I use real cooked potatoes and mash them myself and sometimes, I even cook sweet potatoes and mash t)
1 cup cheddar cheese
4 tablespoons ketchup (I only used Heinz)
4 tablespoons brown sugar
1/4 cup water
mix all together well and top meatloaf before placing in oven if using homemade meatloaf

Steps:

  • Preheat oven to 400.
  • In large bowl, combine crumbled meatloaf, vegetables and soup.
  • Place mixture into a 10 inch deep pie dish.
  • Stir cheese into potatoes.
  • Spoon potatoes over meat mixture.
  • Place pie plate on baking sheet & bake for 25 minutes or until hot and potatoes are light golden brown.
  • Remove from oven and top with 1/2 cup more of shredded cheese. Then, bake 5 minutes longer until cheese is melted.
