1 lb ground beef
1 egg
½ tablespoon kosher salt
½ tablespoon black pepper, freshly ground
1 tablespoon garlic powder
¼ cup grated parmesan cheese
2 tablespoons fresh basil, chopped
1 tablespoon canola oil
1 cup marinara sauce
1 pack dinner roll, 12 rolls left intact, not pulled apart
6 slices mozzarella cheese
4 tablespoons unsalted butter, melted
2 tablespoons garlic, chopped
2 tablespoons fresh basil, chopped
2 tablespoons grated parmesan cheese

Steps:

  • Preheat the oven to 350° F (180°C).
  • In a large bowl, combine the ground beef, egg, salt, pepper, garlic powder, parmesan, and chopped basil until thoroughly mixed.
  • Take a golf ball-sized amount of the beef mixture and roll it into a ball. Repeat with the rest of the beef mixture, setting the meatballs aside on a plate.
  • Heat oil in a pan over high heat. Sear meatballs on one side for about one to two minutes, then flip. Cook for another one to two minutes, then remove the meatballs from the pan and drain any excess fat.
  • Pour the marinara sauce into the pan and place the meatballs in the sauce. Cook for about eight to 10 minutes, flipping the meatballs in the sauce until the sauce has reduced to a thick consistency. Remove from heat.
  • Cut the 4×3 sheet of dinner rolls in half lengthwise. Arrange the bottom half into a 9×13 inch (23x33 cm) baking pan.
  • Place the meatballs evenly in a 4×3 grid, putting one on each roll. Layer the mozzarella evenly on top. Cover with the top half of the dinner rolls.
  • In a small bowl, combine the melted butter, garlic, basil, and parmesan, stirring until evenly mixed. Pour the garlic butter mixture over the top of the sliders.
  • Bake for 20 minutes until the rolls are golden brown and cheese is melted.
  • Cut into individual sandwiches, and serve.

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a large bowl add the ground beef, Italian sausage, garlic, parsley, parmesan cheese, salt, pepper, bread crumbs, eggs, and milk and mix until thoroughly combined.
  • Roll the mixture into 5 ounce meatballs.
  • Add 1 tablespoon of olive oil to a pan over medium heat and brown the meatballs on both sides for 15 minutes total.
  • Slice the rolls in half lengthwise.
  • Place the bottom half on a 9 x 13-inch (23 x 33cm) baking dish.
  • Spoon a little marinara sauce on each bun. Top a meatball on each roll, add another spoonful of sauce, and top with mozzarella cheese.
  • Place the remaining half of the rolls on top and lightly brush them with oil.
  • Combine the parmesan cheese and the Italian seasoning in a small bowl and sprinkle it over the buns.

1 cup toasted almonds or walnuts
2 cloves garlic
1 cup panko breadcrumbs or matzo meal
1 cup shredded Parmesan, plus more for serving
2 tablespoons dried parsley
Kosher salt and freshly ground black pepper
2 large eggs
3 1/2 cups (28 ounces) tomato sauce of your choice
Flavorless oil, like canola or vegetable, for frying
12 ounces fresh mozzarella, sliced 1/4 inch thick
1 bunch fresh basil leaves
6 slider rolls, toasted
Chopped fresh parsley or basil, for serving

Steps:

  • In a food processor, combine the nuts and garlic and pulse to a coarse crumb. Add the breadcrumbs, Parmesan, parsley, salt and a few turns of pepper and pulse to combine. Add the eggs and process until the mixture holds together in a ball. Roll 1 1/2 tablespoon-sized balls, packing just firmly enough so they hold together but not so much that they toughen. Put the balls on a plate or sheet of parchment paper.
  • Warm the tomato sauce in a large pot over medium heat.
  • Heat 1/4 inch of oil in a skillet over medium-high heat and cook the balls in batches, turning until they're golden brown on all sides, 7 to 10 minutes. (Alternatively, you can deep fry the suckers if that's what you're into.) Add the balls to the tomato sauce.
  • Put 1 slice of mozzarella, 2 balls and 1 basil leaf on the bottom of each roll. Top with the top of the slider bun and serve with additional marinara sauce and chopped parsley or basil on the side.

  • Preheat the oven to 350 degrees F (175 degrees C). Place a baking rack sprayed with nonstick cooking spray onto a foil-lined baking pan.
  • Heat oil in a large saucepan over medium heat. Add onion and saute for about 3 minutes. Add garlic and cook until fragrant, about 30 seconds. Inspired by the tiny meatball sandwiches served at New York City's Little Owl restaurant, she came up with these kid-size treats that can be eaten with one hand (leaving the other one free to wreak kid-size havoc).

For tomato sauce
2 (28-ounce) cans whole tomatoes in juice
1/4 cup olive oil
1 medium onion, finely chopped
5 garlic cloves, minced
1 teaspoon sugar
1 Turkish or 1/2 California bay leaf
For meatballs
3 cups coarse fresh bread crumbs (6 slices firm white sandwich bread)
2/3 cup whole milk
1 pound ground pork
1 pound ground beef chuck (not lean)
4 garlic cloves, minced
1 1/2 cups grated Pecorino Romano (1/4 pound)
2 large eggs, lightly beaten
1/2 cup finely chopped flat-leaf parsley
1/2 teaspoon dried oregano
2 cups vegetable oil
For assembling sliders
20 small (2-inch) soft buns or rolls, split

Steps:

  • Make tomato sauce:
  • Purée tomatoes with their juice, 1 can at a time, in a blender and transfer to a bowl.
  • Heat oil in a large heavy pot over medium-high heat until it shimmers, then sauté onion until golden, about 6 minutes. Add garlic and sauté, stirring, 1 minute. Add tomato purée, sugar, bay leaf, and 1 1/2 teaspoons salt and simmer, uncovered, stirring occasionally, until thickened, 40 to 50 minutes. Discard bay leaf.
  • Make meatballs while sauce simmers:
  • Stir together bread crumbs and milk in a large bowl and let stand 10 minutes. Add meat, garlic, cheese, eggs, parsley, oregano, 1/2 teaspoon salt, and 1/2 teaspoon pepper and blend with your hands until just combined well (do not overmix). Form level 1/4-cup portions into meatballs.
  • Heat oil in a 10-inch heavy skillet over medium-high heat until it shimmers, then fry meatballs, about 6 at a time, turning occasionally, until well browned and cooked through, 4 to 6 minutes per batch. Transfer to paper towels with a slotted spoon.
  • Simmer meatballs in sauce and assemble sliders:
  • Add drained meatballs to tomato sauce and simmer, stirring occasionally, until meatballs are heated through.

2 tablespoons olive oil, divided
1 yellow onion, diced
5 cloves garlic, minced, divided
1 pound ground beef

2 teaspoons kosher salt
freshly ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).

3/4 pound Italian pork sausage, casings removed
1 teaspoon red pepper flakes
6 garlic cloves, chopped, divided
1/2 cup panko bread crumbs
1/2 cup grated Parmesan
2 large eggs
1/4 cup chopped fresh parsley leaves
Kosher salt and freshly ground black pepper
4 tablespoons olive oil, divided
1 onion, chopped
1 (20-ounce) can tomato puree
1 (14-ounce) can diced tomatoes
Soft rolls, split horizontally
Fresh basil leaves

Steps:

  • Combine the ground pork and pork sausage, red pepper flakes, 2 cloves of the chopped garlic, panko, grated cheese, eggs, parsley, kosher salt and black pepper, to taste, in large bowl. Form into 2-inch-meatballs and set aside on a platter.
  • Heat 2 tablespoons of the olive oil in large skillet over medium-high heat. Add the meatballs and cook until brown on all sides. Transfer to plate.
  • Meanwhile, start the sauce. Add the 2 tablespoons of the remaining olive oil to a medium saucepan over medium heat. Add the onion, and the remaining garlic. Make these moreish meatball sliders with tomato sauce and melted cheese for a party or buffet. They're easy to make and the whole family will enjoy them

1 tbsp olive oil
12 beef meatballs
12 small bread rolls (check the bakery section of the supermarket for a batch of rolls that are baked together, so they're still attached to one another)
100g tomato pasta sauce
100g grated mozzarella
50g butter, melted
1 tsp dried oregano
20g grated parmesan

Steps:

  • Heat the oil in a large pan, and fry the meatballs for about 8-10 mins, or until browned and cooked through. Set aside. Heat the oven to 180C/160C fan/gas 4.
  • Carefully split the whole batch of rolls through the middle, ensuring they remain attached at their sides. Lay the bottoms of the rolls in a roasting tin lined with a sheet of scrunched-up baking parchment or foil. Spread the tomato sauce over, then place one meatball on every roll. Sprinkle over the mozzarella, then cover with the tops of the rolls, pressing down gently.
  • Brush with the melted butter, then sprinkle over the oregano and parmesan. Cover with foil and bake for 20 mins, uncovering for the final 5 mins so the tops become golden.

1 lb ground sirloin
1/2 lb mild Italian sausage
1 large egg, whisked
1/2 cup plain breadcrumbs or 1/2 cup panko breadcrumbs
1/4 cup whole milk
1 teaspoon dried Italian seasoning
1/2 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup grated parmesan cheese
1/4 cup chopped fresh Italian parsley
1 large ciabatta or 1 large focaccia bread, cut into squares
1 cup store-bought marinara sauce
3/4 cup shredded mozzarella cheese
1/4 cup sliced fresh basil (to garnish) (optional)

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with foil and grease with cooking spray, set aside.
  • In a large bowl, mix together the ground sirloin, sausage, egg, bread crumbs, milk, Italian seasoning, basil, salt, pepper, Parmesan, and parsley until well combined. Divide into 12 even pieces and then roll into balls, slightly larger than a golf ball in size, using your hands. Place on the prepared baking sheet, spacing them out evenly. Bake until golden brown and crispy, about 30 to 35 minutes. Drain the fat and set the meatballs aside.
  • To assemble the sliders, slice the squares of bread in half, and spread each half with marinara sauce. Place one meatball on the bottom halves, and top with a bit more sauce and shredded mozzarella. Bake until the cheese melts, about 3 to 5 minutes. Sandwich together with the tops and skewer with a long toothpick to hold in place.

½ cup panko breadcrumbs
1 teaspoon ground allspice
1 teaspoon ground nutmeg
2 ½ teaspoons kosher salt
2 ½ teaspoons freshly ground black pepper
3 teaspoons garlic powder
⅓ cup yellow onion, finely minced
½ cup fresh parsley, divided
1 tablespoon olive oil
16 slider buns
½ cup cranberry sauce
1 tablespoon unsalted butter
3 cups baby bella mushroom, (option to use frozen mushrooms)
1 tablespoon all purpose flour
1 ½ cups Swanson® Beef Stock, (option to use Vegetable or Chicken Stock)
1 can Campbell's® Cream of Mushroom Soup
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon ground nutmeg
½ teaspoon ground allspice

Steps:

  • Make the sliders: In a large bowl, combine the ground beef, ground pork, eggs, bread crumbs, allspice, nutmeg, salt, pepper, garlic powder, onion, and ¼ cup (10 g) parsley and mix until fully combined.
  • Roll the ground meat mixture into 2½-inch-wide meatballs. You should have 16-18 meatballs total.
  • In a large skillet, heat the olive oil over medium heat. Working in batches, cook the meatballs until browned on all sides and cooked through, about 2 minutes per side. Transfer the meatballs to a plate as they finish cooking and set aside.
  • Make the mushroom sauce: Wipe out any excess oil from the skillet, then return to medium-low heat. Add the butter. Once melted, add the mushrooms and cook until softened and crispy, about 5 minutes.
  • Add the flour and cook, stirring, until light beige in color, 1-2 minutes. Whisk in the Swanson® Beef Stock and Campbell's® Cream of Mushroom Soup until smooth. Stir in the salt, pepper, nutmeg, and allspice.
  • Add the meatballs, turning to coat in the sauce. Continue cooking for 2-3 minutes, until the sauce thickens.
  • Assemble the sliders: Dollop about 1½ teaspoons of cranberry sauce onto the bottom half of each slider bun, then scoop a meatball and a tablespoon of mushroom sauce on top. Garnish with the remaining ¼ cup parsley. Place the top halves of the slider buns on top and secure each slider with a toothpick.
  • Serve warm.

1 medium onion, finely chopped
3 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/2 teaspoon fennel seed, crushed
1 tablespoon chopped capers
1/8 teaspoon salt
1/4 teaspoon pepper
MEATBALLS:
1 cup shredded Parmesan cheese, divided
1/2 cup panko bread crumbs
1/4 cup 2% milk
1 large egg, beaten
2 tablespoons minced fresh parsley
1 garlic clove, minced
1/2 teaspoon pepper
1/4 teaspoon salt
1/2 pound lean ground beef (90% lean)
1/2 pound ground pork
1 tablespoon canola oil
15 dinner rolls

Steps:

  • Place tomatoes in a food processor; cover and process until pureed. Set aside. In a large skillet, saute onion in oil until tender. Add the garlic, pepper flakes and fennel; cook 2 minutes longer. Stir in the tomatoes, capers, salt and pepper. Bring to a boil. Reduce heat; simmer until thickened, about 15-20 minutes stirring occasionally., Meanwhile, in a large bowl, combine 1/2 cup cheese, bread crumbs, milk, egg, parsley, garlic, pepper and salt. Crumble meat over mixture and mix well. Shape into fifteen 1-1/2-in. balls. , In a large skillet, brown meatballs in oil; drain. Transfer meatballs to sauce; simmer, uncovered, until a thermometer reads 160°, about 15-20 minutes., Place a meatball on each roll. Top with sauce and remaining cheese. Freeze option: Freeze rolls in freezer bags. Freeze meatball mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little water if necessary. Place a meatball on each roll and top as directed.
