1 red or yellow pepper, deseeded and cut into chunks
2 carrots, cut into thick slices
2 red onions, cut into wedges
8 chipolatas, cut into thirds
400g can peeled cherry tomatoes
400g can white beans, drained
200ml low-salt chicken stock
2 tsp Dijon mustard
100g frozen peas
potatoes, pasta or rice, to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Roast the pepper, carrots and onion in a deep baking dish for 15 mins. Add the sausages and roast for a further 10 mins.
  • Reduce oven to 200C/180C fan/gas 6, tip in the tomatoes and beans, then stir in the stock. Cook for another 35 mins. Stir in the mustard and peas and return to the oven for 5 mins. Rest for 10 mins, then serve with potatoes, pasta or rice.

1 can (15.5 oz) great northern beans, drained, rinsed
1 can (15 to 16 oz) garbanzo beans, drained, rinsed
1 jar (1 lb 10 oz) tomato pasta sauce with basil and garlic
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried basil leaves
Additional chopped fresh basil

Steps:

  • Heat oven to 400°F. In 10-inch skillet, cook sausage, bell pepper, onion and garlic over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain.
  • In ungreased 3-quart casserole, mix sausage mixture and remaining ingredients. Bake uncovered about 45 minutes, stirring once, until hot and bubbly. Garnish with additional basil.

12 slices white sandwich bread
Coarse salt and ground pepper
2 packages (1 pound each) smoked Polish sausage, halved lengthwise, cut into 2 1/2-inch pieces
2 large onions, chopped
8 cloves garlic, chopped
1/2 cup tomato paste
1 can (14.5 ounces) reduced-sodium chicken broth
1 cup dry red wine
1 teaspoon dried thyme
4 cans (14.5 ounces each) Great Northern or cannellini beans, rinsed and drained

Steps:

  • In a food processor, pulse bread until large crumbs form (you should have about 6 cups); season with salt and pepper. Set aside.
  • Preheat oven to 375 degrees. In a 6-quart heavy-bottom saucepan, cook sausage, onions, and garlic, stirring occasionally, until onions are translucent and sausage is starting to brown, 15 to 20 minutes.
  • Add tomato paste, broth, wine, thyme, and 2 cups water; bring to a boil. Reduce to a simmer; add beans. Simmer, stirring occasionally, until slightly thickened but still soupy, about 10 minutes.
  • Stir in 2 cups of the breadcrumbs. Divide sausage mixture between two 3-quart shallow baking dishes or eight 10-ounce ramekins. Top with remaining breadcrumbs.
  • Bake, on a baking sheet, until topping is golden, 30 minutes.

2 tbsp olive or rapeseed oil
1 onion, finely chopped
2 medium sticks celery, finely chopped
1 yellow pepper, chopped
1 red pepper, chopped
6 cooking chorizo sausages (about 400g)
6 pork sausages (about 400g)
3 fat garlic cloves, chopped
1 ½ tsp sweet smoked paprika
½ tsp ground cumin
1 tbsp dried thyme
125ml white wine
2 x 400g cans cherry tomatoes or chopped tomatoes
2 sprigs fresh thyme
1 chicken stock cube
1 x 400g can aduki beans, drained and rinsed
1 bunch chives, snipped (optional)

Steps:

  • Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
  • Add 1 finely chopped onion and cook gently for 5 minutes.
  • Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
  • Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
  • Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
  • Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
  • Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
  • Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
  • Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

2 cloves garlic, minced
1 cup sliced onion
1 teaspoon dried oregano

4 potatoes, peeled and cubed
½ pound spicy pork sausage links, sliced
½ cup packed brown sugar
2 cups baked beans
¼ cup barbecue sauce
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat one tablespoon olive oil in a skillet over medium heat. Add the garlic, and cook for 30 seconds. Stir in the onion, oregano, parsley, salt, and pepper. Cook for 1 minute, and remove from heat.
  • Spread 1 tablespoon olive oil over the bottom of an 8x8 inch glass baking dish. Layer the sliced, cooked potatoes in the dish. Top the potatoes with the onion mixture. Arrange sliced sausage over onions. In a small bowl, stir together the brown sugar, baked beans, and barbecue sauce. Pour evenly over the sausage. Top with shredded Cheddar cheese.
  • Bake in preheated oven for 45 minutes. Serve!

1 pound bulk pork sausage (or turkey sausage)
2 stalks celery (sliced)
1 onion (medium, chopped)
1 clove garlic (crushed)
42 ounces canned baked beans ( in tomato sauce)
15 ounces canned lima beans (drained)
15 ounces canned kidney beans (drained)
8 ounces canned tomato sauce
1 tablespoon dry mustard
2 tablespoons honey
1 tablespoon white vinegar
1/4 teaspoon red pepper sauce

Steps:

  • Heat the oven to 400ºF.
  • If you have sausage meat that is in casings, remove the casings from the meat. Cook the sausage, celery, onion and garlic in a 10 inch skillet over medium heat for 10 minutes, stirring occasionally, until the sausage is no longer pink. Drain of the fat.
  • Mix the sausage mixture with the remaining ingredients in an ungreased 3 quart casserole. Bake at 400ºF, uncovered, for about 45 minutes, stirring once, until everything is hot and bubbly.

2 (400g) Cans Cooked Cannellini Beans (drained)
3 Medium Carrots (peeled and finely diced, roughly 5mm square)
2 Medium Onions (peeled and finely diced, roughly 5mm square)
4 Sticks Celery (finely diced, roughly 5mm square)
4 Cloves Garlic (peeled and finely diced)
1 Teaspoon Dried Thyme (or one sprig of fresh thyme, de-stemmed and chopped)
1 Teaspoon Paprika
1 Bay Leaf
1 (400g) Can Plum Tomatoes
500 ml Vegetable Stock
50 g Breadcrumbs
30 g Fresh Parsley (roughly chopped)
3 Tablespoons Olive Oil
6 Vegan Sausages (chopped into 1 cm slices)

Steps:

  • Preheat your oven to 180˚c (fan-oven)
  • Heat 2 tablespoon of olive oil in a casserole dish over a gentle heat. Toss in the 3 diced carrots, 4 cloves diced garlic, 2 diced onions and 4 sticks of diced celery. Fry gently 8-10 minutes until the vegetables are soft.
  • Add in the 1 teaspoon of paprika and 1 teaspoon of dried thyme. Stir into the vegetables and then pour in the 1 can of plum tomatoes, 1 bay leaf, 2 cans of drained cannellini bean and 500ml of vegetable stock. Cover and place into the oven for 30 minutes until the beans are nicely soft.
  • When the casserole has about 10 minutes left, prep the vegan sausage. Heat a tablespoon of olive oil in a frying pan over a medium-high heat. Toss in the 6 chopped vegan sausages slices and fry for 2 minutes either side until they have a wonderfully crispy exterior.
  • After the casserole has cooked for 30 minutes, remove and season to taste with salt and freshly ground black pepper. Stir in the 30g of chopped parsley and crispy sausage slices. Layer a thick helping of breadcrumbs over the top of the casserole.
  • Place the casserole back in the oven, uncovered, for 5 minutes until the breadcrumbs start to turn golden brown.

ENGLISH SAUSAGE AND BEAN CASSEROLE

This is a recipe that my mum gave me and it makes a very comforting meal on a cold day. I am not certain if you can buy Cumberland sausages in other countries (doubtful!) but if not then go for a thick, heavily seasoned / peppery sausage. What I call Butter Beans I think are called White Lima Beans in the US. I think Worcestershire sauce is widely available but if not use a brown spicy sauce. Lastly, I think cider is referred to as "hard cider" in the US so just to clarify it's the version with alcohol for this recipe! I normally serve with baked potatoes.

6 cumberland sausages
2 onions, chopped
16 ounces butter beans (I used tinned)
16 ounces baked beans (tinned)
1/2 of chopped garlic clove (my mum said half but I like to use a whole clove)
1 tablespoon Worcestershire sauce
0.5 (440 ml) can cider
12 slices bacon
2 pints chicken stock
16 ounces of tinned chopped tomatoes

Steps:

  • Grill the sausages until brown.
  • Fry the chopped onions with the garlic and bacon.
  • In a large saucepan add all the ingredients except only add half the stock. Bring to the boil and then simmer slowly.
  • The recipe doesn't tell you how long to simmer for but sometimes I serve after 20-30 mins or so. If I keep it on for longer I haven't managed to overcook it yet. I just add in the rest of the stock as and when required if I'm waiting for guests to arrive.
