EASY SOBA NOODLES



Easy Soba Noodles image

This easy Soba Noodles Recipe is healthy and simple. Loaded with tender vegetables, clean addicting flavor and succulent texture. Keep it vegan or add your favorite protein.

8-9 oz. soba noodles
1 tablespoon high heat oil (such as peanut oil, coconut oil or avocado oil)
2 cups napa cabbage, shredded
5-6 shiitake mushrooms, sliced thin
1 large carrot cut in thin strips
4 cloves garlic, roughly chopped
1-inch knob of ginger, minced
1 bell pepper, sliced in thin strips
1/2 bunch green onions, chopped fine- separating the white from the green stems
3 tablespoons sesame seeds, toasted
black sesame seeds for garnish (optional)
2 tablespoons toasted sesame oil
2 tablespoons rice vinegar
1 tablespoon maple syrup
2 tablespoons soy sauce, Braggs Liquid Aminos, or Smoked Shoyu

Steps:

  • Bring water to a boil and cook the soba noodles according to the package, (just slightly on the al dente side). Drain in cool water to remove gluten and starchiness. (This helps the texture and prevents the soba noodles from getting gummy and gluey). Set aside.
  • Stir together the sauce ingredients: sesame oil, rice vinegar, maple syrup, soy sauce.
  • Heat oil over medium-high heat in a wok or skillet. Add napa cabbage, shiitake mushrooms, carrot strips, and a sprinkle of salt. Stir constantly for 2-3 minutes. Stir in garlic and ginger for 1-2 minutes. Add bell pepper and white part of the green onion stir-frying for 2-3 minutes until just tender but still crisp.
  • Add the soba noodles and sauce. Toss together 1-2 minutes letting it thoroughly heat through.
  • Sprinkle with sesame seeds and green onions. Add black sesame seeds for garnish if desired.

Salt
One 1-pound package soba noodles
5 tablespoons soy sauce
1/4 cup peanut butter, preferably freshly ground
2 tablespoons sesame oil
2 tablespoons light brown sugar (see Cook's Note)
1 tablespoon chili paste, preferably sambal oelek
2 tablespoons sesame seeds, toasted
3 scallions, sliced
2 mini English cucumbers, sliced or 1/2 large English cucumber, diced
2 carrots, julienned

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook until al dente, about 8 minutes. Drain, rinse with cold water and place in a large mixing bowl.
  • In a blender, combine the soy sauce, peanut butter, sesame oil, brown sugar and chili paste. Blend until the sauce is smooth and has a thick but pourable consistency. If it is too thick, add a tablespoon or 2 of hot water to thin. Add the sesame seeds and give it a quick pulse.
  • Pour the sauce onto the noodles and mix thoroughly to coat. Mix in the scallions, cucumbers and carrots and toss to coat. Refrigerate until ready to serve.

This tasty salad with Japanese buckwheat noodles is both quick and healthy; great for lunch or dinner. Most larger supermarkets have buckwheat soba noodles in the Asian food section.

2 tablespoons rice vinegar
1 tablespoon vegetable oil
1 tablespoon sesame oil
1 tablespoon brown sugar
1 tablespoon soy sauce
2 teaspoons minced fresh ginger root
4 ounces buckwheat soba noodles
2 teaspoons vegetable oil
1 boneless skinless chicken breast, cut into thin bite-size strips
1 teaspoon chopped garlic
salt and ground black pepper to taste
1 rib celery, sliced
1 carrot, sliced
½ red bell pepper, chopped
¼ cup chopped fresh cilantro
2 tablespoons chopped green onion
1 tablespoon sesame seeds

Steps:

  • Whisk rice vinegar, 1 tablespoon vegetable oil, sesame oil, brown sugar, soy sauce, and ginger together in a large bowl until dressing is combined.
  • Bring water to a boil in a large pot. Add soba noodles, stir, and return water to a boil. Boil noodles until tender, 4 to 5 minutes. Drain noodles in a colander under cold running water until cool, about 1 minute.
  • Heat 2 teaspoons vegetable oil in a skillet over medium heat. Cook chicken breast pieces until no longer pink in the center and the juices run clear, 2 to 4 minutes. Add garlic, salt, and pepper; stir until fragrant, about 1 minute more.
  • Toss soba noodles, chicken, celery, carrot, red pepper, cilantro, green onion, and sesame seeds together with dressing in large bowl.

SPICY COLD SOBA NOODLES



Spicy Cold Soba Noodles image

1/3 cup soy sauce
2 tablespoons brown sugar
1 tablespoon molasses
3 tablespoons sesame oil
3 tablespoons tahini
3 tablespoons chili oil
3 tablespoons balsamic or red wine vinegar
Salt
1/2 pound soba or Japanese buckwheat noodles
1/2 bunch scallions, white and green parts, thinly sliced

Steps:

  • Place soy sauce in a saucepan over medium heat, add brown sugar and bring to a boil. Turn heat to low, stir in molasses, and return to simmer. Transfer to a mixing bowl. Add sesame oil, tahini, chili oil, and vinegar, and whisk to combine. Season to taste with salt, if desired.
  • Bring a large pot of salted water to a rapid boil. Add noodles, bring back to a boil, and cook, stirring occasionally, until they just begin to soften, about 3 minutes. (Soba noodles can overcook very quickly, so stay nearby.)
  • Have ready a large bowl of iced water. Drain noodles, plunge in iced water, and drain again. Place in a colander and rinse well under cold running water. Combine noodles and sauce, toss well with scallions, and chill. Serve in small nests on lettuce-lined plates with Chopped Tofu and Parsley.

Tomoko and I made this for our dinner tonight. We adapted it from another recipe I have just posted. Prep time doesn't include cooking and cooling the chicken (I poached mine).

1 (300 g) packet soba noodles
4 cooked cooled chicken thigh fillets, shredded
300 g cooked prawns, shelled,deveined,and halved
1 cup bean sprouts
1/2 red capsicum, julienned
2 green onions, finely sliced
2 tablespoons chopped fresh coriander
2 tablespoons chopped of fresh mint
1/4 cup roasted peanuts, roughly chopped,to serve
fresh coriander leaves, to serve
1 lime, cut into 4 wedges,to serve (extra)
2 tablespoons soy sauce
2 tablespoons sweet chili sauce
2 tablespoons fish sauce
1 lime, juice of
1 clove garlic, crushed
1 teaspoon fresh grated gingerroot
1 small red Thai chile

Steps:

  • Cook the soba noodles according to the directions on your packet.
  • Drain and run under cold water to cool, drain well.
  • Place the noodles, chicken, prawns, bean shoots, capsicum, onions, mint and coriander in a large bowl.
  • Toss well.
  • Pour over the dressing and toss again.
  • Divide into 4 serving bowls and serve with coriander leaves and peanuts sprinkled over and a lime wedge on the side.
  • DRESSING: Mix all the ingredients together in a small bowl.
