Teriyaki salmon parcels image

These easy steamed fish parcels with Japanese seasoning are an ideal way to get kids in the kitchen

Provided by Barney Desmazery

Categories     Main course

Time 35m

Number Of Ingredients 10

2 tbsp low-salt soy sauce
1 tbsp clear honey
1 garlic clove, finely chopped
1 tbsp mirin (optional)
a little sunflower oil
300g Tenderstem broccoli
4 x 100g salmon fillets
1 small piece of ginger, cut into matchsticks
a little sesame oil (optional)
sliced spring onions, toasted sesame seeds and cooked rice, to serve

Steps:

  • KIDS: The writing in bold is for you. ADULTS: The rest is for you. Make the sauce and marinade. In a small bowl, whisk together the soy, honey, garlic and mirin and set aside.
  • Cut out some squares of foil. Using scissors, cut out 4 squares of foil, each about 30cm square. Brush each piece of foil with a little oil and bring the edges of the foil up a little.
  • Fill your parcels. Place a couple of broccoli stems on each one, then sit a salmon fillet on top and scatter over the ginger.
  • Spoon over the sauce. Spoon the sauce over each salmon fillet and drizzle with a little sesame oil, if you like.
  • Close the parcels. Fold over the edges of the foil together to seal and place the parcels on a baking sheet. Can be prepared up to 1 day ahead.
  • Cook the parcels. Heat oven to 200C/180C fan/gas 6. Get your child to place the parcels in the oven for 15-20 mins, but ensure an adult removes them, then leave to stand for a few mins. Serve each parcel on a plate and let each person open it themselves. Serve with spring onions and sesame seeds for scattering over, and some rice on the side.

SALMON TERIYAKI BAKED IN FOIL PACKETS

Salmon Teriyaki Baked in Foil Packets image

I make sure to note in all my recipes involving salmon to use the brand True North Salmon. I absolutely believe it makes a difference in the quality of the finished dish. If you cant find True North, look for Atlantic Salmon from Gulf of Maine or Canada. This too is a good fresh option.

Provided by cchurchh

Categories     < 60 Mins

Time 1h

Yield 4 serving(s)

Number Of Ingredients 11

3 tablespoons soy sauce
2 tablespoons tomato ketchup
2 teaspoons seasoned rice wine vinegar
1 tablespoon sugar
2 garlic cloves, minced
3 tablespoons fresh ginger
2 tablespoons olive oil
2 leeks, thinly sliced, rinsed and drained
4 small red chili peppers, thinly sliced
2 sprigs fresh cilantro
4 (6 ounce) true north salmon fillets, skin removed

Steps:

  • In a stainless bowl, whisk together the soy sauce, ketchup, rice wine vinegar, sugar, garlic and 1 tbs of grated ginger. Place the salmon in a shallow nonmetallic dish. Pour the mixture over the salmon, toss well and marinate for about 30 minutes while you prepare the leeks.
  • Place a large stainless saute pan over high heat. Add the olive oil, 2 tbs chopped ginger and the leeks and quickly saute them for 3 minutes. Lightly season the leeks with salt. Remove them from the pan and allow to cool on a tray.
  • Pre heat the oven to 400 degrees. Lay out four large squares of heavy duty aluminum foil on the table (aprox, 18 x 12 inch.) Fold them in thirds and open them back up. In the center of the foil, place a small mound of the cooked leeks and top with the marinated salmon, include the marinade. Garnish the salmon with the chile pepper slices and fold the foil over to form a sealed packet. Repeat with the remaining ingredients to make 3 more packets.
  • Set the packets on a baking sheet and bake for 15 minutes in a convection (with fan) oven or 20 minutes in a regular oven.
  • Open each packet carefully. There is going to be a small burst of hot steam. Slide the cooked fish and vegetables out onto a plate, with any juices. Garnish with fresh cilantro.

GRILLED SALMON IN A FOIL PACK

Grilled Salmon in a Foil Pack image

This simple salmon foil pack will inspire you to grill all year round. Instead of four smaller fillets, we cook a big piece and split it up. The lemon, onion, garlic and butter come together to make the perfect sauce.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 7

1 red onion, halved lengthwise and very thinly sliced
1 lemon, very thinly sliced, seeds removed
1 clove garlic, sliced
Kosher salt and freshly ground black pepper
One 1 1/2-pound piece center-cut skinless salmon fillet
4 tablespoons (1/2 stick) unsalted butter, melted
1 tablespoon dried Italian seasoning

Steps:

  • Prepare a grill for medium-high heat.
  • Toss the onion, lemon and garlic with a generous pinch each of salt and pepper. Spread the mixture in the center of a 24-inch-long piece of heavy-duty foil. Put the salmon on top of the onion mixture, drizzle with the butter and sprinkle with the Italian seasoning and a generous amount of salt and pepper. Bring the 2 long sides of foil together and fold over twice to seal. Bring the ends of the foil in and crimp to seal, leaving a bit of room for steam to circulate inside.
  • Place the packet on the grill and cook for 10 to 15 minutes. Careful of the steam, open the packet and check the salmon. It should be mostly opaque with a slightly rosy center. Transfer the package to a cutting board and set aside for about 5 minutes.
  • Cut the salmon into 4 equal pieces and transfer to 4 plates. Evenly spoon the onions, lemons and collected juices over the salmon.

Delicious Baked Salmon In Foil recipe that is moist, flavorful and ready in under 30 minutes! Just 5 minutes to prep and clean up is a breeze with this easy salmon recipe! The simple foil packets lock in all the flavor and moisture - so good!

Provided by Trish - Mom On Timeout

Categories     Dinner     Entree     Main Course     Main Dish

Number Of Ingredients 11

2 pounds salmon filets (about 1 pound each, pin bones removed, with skin on or off)
⅓ cup brown sugar (lightly packed)
5 tablespoons salted butter (melted)
2 tablespoons lemon juice (about ½ large lemon)
1 ½ tablespoons dijon mustard
1 ¼ teaspoons garlic powder
¾ teaspoons onion powder
½ teaspoon salt
½ teaspoon dried thyme
2 lemons (sliced)
fresh parsley (chopped)

Steps:

  • Preheat the oven to 400°F. Place each salmon filet on a large sheet (large enough to enclose each salmon) of heavy-duty aluminum foil to bring to room temperature before baking.
  • In a small bowl, combine the brown sugar, melted butter, lemon juice, dijon mustard, garlic powder, onion powder, salt, and dried thyme. Whisk together until completely combined.
  • Pour the liquid mixture evenly over both salmon filets and top with lemon slices. Fold the edges of the aluminum foil to enclose each piece of salmon. If you need to, use another foil to wrap the salmon.
  • Place the salmon on a sheet pan before baking in the oven for 15 to 20 minutes or until the salmon is 145°F at its thickest part. (Salmon that is thicker or larger will take longer to cook.) 145°F is for well done salmon. For medium to medium-rare salmon, you would want between 125˚F and 135˚F.
  • Remove from heat and let rest for five minutes.
  • Garnish with fresh minced parsley, optional, and then plate and serve.

  • Remove the salmon from the refrigerator and let stand at room temperature for 10 minutes while you prepare the other ingredients. Heat oven to 375 degrees F. Line a large baking dish or rimmed baking sheet with a large piece of aluminum foil. If you prefer not to bake the salmon directly touching the foil, place a sheet of parchment on top of it to act as a barrier. Lightly coat the foil (or parchment) with nonstick spay. Place the salmon on top.
  • In a small bowl or larger liquid measuring cup, whisk together the maple syrup, soy sauce, oil, ginger, and black pepper. Drizzle 3/4 all over the top of the salmon. Rub or brush to coat the salmon easily with the sauce. Some of the sauce will run over the salmon and down the sides, which is just fine. Reserve the remaining sauce.
  • Fold the sides of the aluminum foil up and over the top of the salmon until it is completely enclosed (wrap any of the sauce that has pooled right up inside the foil with the fish). If your piece of foil is not large enough, place a second piece on top and fold the edges under so that it forms a sealed packet. Leave a little room inside the foil for air to circulate.
  • Bake the salmon for 15 minutes, until it salmon is almost completely cooked through at the thickest part. The cooking time will vary based on the thickness of your salmon. If your side is thinner (around 1-inch thick) check several minutes early to ensure your salmon does not overcook. If your piece is very thick (1 1/2 inches or more), it may need longer.

  • In a small bowl whisk together the soy sauce, maple syrup, sweet chili sauce, lime juice, fresh ginger, garlic, salt and pepper. The salt can probably be omitted since the soy sauce should have plenty of sodium.
  • Place the salmon fillet over the foil then pour about half the marinade over and brush if necessary to cover the entire surface of the fish. Turn the fish over and pour the rest of the marinade. Also brush the marinade making sure that the entire fish is brushed with marinade.
  • Fold the edges of the aluminum foil over the salmon so that it is fully wrapped. Bake for about 20 to 25 minutes, depending on the size of your salmon. My salmon was quite a big piece, so I baked it for 25 minutes. You may also turn the broiler on and broil for about 2 to 3 minutes at the end if preferred.

  • Make the marinade: In a medium bowl beat together the soy sauce, rice vinegar, maple syrup, and smashed garlic clove with a fork. Gently press the garlic clove into the marinade to release its juices.
  • Place the salmon fillets into a gallon freezer bag in a single layer. Pour the marinade over them, massaging it into the fish fillets until they are well coated. Seal bag. Place in the fridge and let marinate for at least 30 minutes or up to 2 hours. Turn bag once or twice to evenly distribute the marinade.
  • Tear off 4 squares of parchment paper or aluminum foil, large enough to comfortably hold one salmon fillet each. If lining the foil with parchment paper, make it the same size as the foil and lay it on the dull side of the foil. Remove the salmon fillets from the marinade. Reserve the marinade discarding the garlic.
