PORK AND RICOTTA MEATBALLS WITH PARMESAN BROTH



Pork and Ricotta Meatballs with Parmesan Broth image

A delicious soup, perfect for dinner. With tender ground pork and ricotta meatballs, peas, spinach and a wonderful Parmesan broth.

1 cup fresh ricotta cheese
1/4 cup Parmigiano Reggiano cheese (grated, plus more for garnish)
1 large egg
1/2 cup dry breadcrumbs
1/2 tsp nutmeg (grated)
1 tsp Kosher salt (less if using fine salt)
1/4 tsp freshly ground pepper
1/4 cup water
1 1/4 lbs ground pork
2 Tbsp extra-virgin olive oil
4 cups chicken broth
1 3-by-1-by-1 inch piece of Parmigiano-Reggiano cheese (3 inches long, 1 inch wide and 1 inch thick)
1 cup frozen peas (thawed)
2 cups baby spinach
Warm cooked egg noodles
Shaved, crumbled Parmigiano Reggiano cheese

Steps:

  • Start water boiling in a large pot for egg noodles.
  • In a large bowl, stir together the ricotta and 1/4 cup of grated Parmigiano. Add the egg, breadcrumbs, nutmeg, salt, pepper and water. Add the pork and stir to combine well. Form into 15-18 approx. two-inch diameter meatballs.
  • In a large pot (preferably non-stick), heat the olive oil over medium heat. Add the meatballs and cook the bottom until well browned. Using a spoon, gently flip the meatballs over and brown that side well. Again, using a spoon, flip the meatballs on their sides and brown all sides to seal the meatball well. Pour in the broth and add the the piece of cheese. Reduce heat to medium low and simmer the broth very gently, stirring once or twice (so the Parmesan doesn't stick to the bottom of the pan), until the meatballs are cooked through and the broth is slightly reduced, about 15 minutes. Stir in the thawed peas and spinach. Taste, then season with salt and pepper to taste. Simmer until the peas are warmed through.
  • Meanwhile, cook egg noodles in boiling water per the package directions. Drain and keep warm.
  • Place some warm cooked egg noodles in the bottom of shallow bowls. Spoon the meatballs and broth over the egg noodles. Garnish with additional grated Parmigiano and serve.

This hearty, easy meatball soup combines Italian-style meatballs, chopped veggies and pasta, all simmered in a rich tomato broth. Add a side of your favorite salad, and you've got dinner!

1 ½ lb lean ground beef (or ground chicken or ground turkey)
2 to 3 garlic cloves, minced
1 raw egg, whisked
½ cup freshly grated Parmesan cheese
1/3 cup plain bread crumbs
2 tsp dry oregano
½ tsp sweet paprika
Kosher salt and black pepper to taste
½ to 1 cup fresh chopped parsley
Extra virgin olive oil (I used Private Reserve EVOO)
Extra virgin olive oil (Private Reserve EVOO)
1 small onion, chopped (about ½ cup)
2 carrots, chopped
1 small green bell pepper, cored and chopped
2 celery stalks, peeled and chopped
1 to 2 garlic cloves, minced
5 to 6 cups broth (vegetable or beef broth)
1 28-oz can peeled tomatoes with juices
1 tsp dry oregano
½ tsp paprika
Salt and pepper
¾ cup dry small pasta like ditalini or small shells
½ cup chopped fresh parsley

Steps:

  • Place the meatball ingredients in one large mixing bowl. Drizzle a little extra virgin olive oil. Mix until the meat mixture is well incorporated.
  • Form the mixture into meatballs about 1 ½ tbsp each (whatever size you choose, stick to it). Arrange the meatballs on a large, lightly oiled sheet pan and broil for 5 to 8 minutes until browned (they will cook some more in the soup).
  • In a large pot, heat about 2 tbsp extra virgin olive oil over medium-high heat. Add onions, carrots, celery, bell peppers, and garlic. Cook, stirring occasionally, for 5 minutes.
  • Add broth and tomatoes. Season with oregano, paprika, salt and pepper. Cook over mediu/medium-high heat for 10 minutes.
  • Add the meatballs and pasta. Cook for 10 minutes or until pasta is cooked.
  • Remove from heat and stir in parsley. Transfer to serving bowls, and if you like sprinkle a bit more grated Parmesan cheese. If you like heat, add some crushed pepper flakes. Enjoy!

1 egg, lightly beaten
1/4 cup dry bread crumbs
1/4 cup minced fresh parsley
2 tablespoons grated Parmesan cheese
1/4 teaspoon garlic salt, optional
1/8 teaspoon pepper
1/2 pound lean ground beef (90% lean)
4 cups reduced-sodium beef broth
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 medium carrot, thinly sliced
1 teaspoon Italian seasoning
1/4 cup uncooked tiny shell pasta
Minced fresh parsley, optional

Steps:

  • In a small bowl, combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into 1-in. balls. Brown meatballs in a large saucepan; drain. Add broth, beans, tomatoes, carrot and Italian seasoning. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Add pasta; simmer until meat is no longer pink and pasta is tender, 10 minutes longer. If desired, top with minced fresh parsley and additional grated Parmesan cheese. Freeze Option: Divide cooled soup in 1-1/2 cup portions; freeze up to 3 months.

2 quarts water
20 small meatballs
2 (8 ounce) cans tomato sauce
2 cubes beef bouillon cube
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon dried thyme
salt to taste
ground black pepper to taste
2 stalks celery, sliced
2 carrots, sliced
1 clove garlic, minced
1 cup elbow macaroni

Steps:

  • Bring water to a boil in a large saucepan. Add meatballs, tomato sauce, bouillon, oregano, basil, thyme, salt and pepper to taste, celery, carrots, and garlic, and simmer for 30 minutes.
  • Add macaroni and cook until pasta is done. Top with parmesan cheese to serve.

2 (14 ounce) cans diced tomatoes with onion and garlic, undrained
2 (14 ounce) cans beef broth
1 teaspoon Italian seasoning
1 (16 ounce) package frozen cooked Italian-style meatballs
2 cups frozen Italian-blend vegetables
1 cup small star-shaped dried pasta
¼ cup grated Parmesan cheese

Steps:

  • Stir water, tomatoes, beef broth, and Italian seasoning together in a large pot; bring to a boil. Add meatballs, Italian-blend vegetables, and pasta to the pot. Return broth to a boil, reduce heat to medium-low, and cook until the meatballs are heated through and the pasta is tender, about 10 minutes. Ladle soup into bowls and garnish with Parmesan cheese.

This is my all time favorite soup! It is so hearty and goes wonderful with some crusty bread. Altho it's a long list of ingredients, it's really very simple.

1 1/2 lbs ground beef
1 egg, slightly beaten
1/2 cup soft breadcrumbs
1/4 teaspoon salt
1 tablespoon chopped parsley
1 teaspoon minced garlic
1/4 cup parmesan cheese
2 tablespoons butter
1 (10 1/2 ounce) can beef broth
1 (28 ounce) can diced tomatoes (I prefer tomato puree)
1 envelope dry onion soup mix
2 cups sliced and peeled carrots
2 cups diced potatoes
1/4 cup chopped celery (optional)
1/4 cup chopped parsley
1/4 teaspoon pepper
1/4 teaspoon oregano
1/4 teaspoon basil
1 bay leaf

Steps:

  • In bowl, combine first 7 ingredients with 3 Tablespoons of water.
  • Mix lightly.
  • Shape into about 24 meatballs.
  • In hot butter in large Dutch oven, saute meatballs, a single layer at a time, until browned on all sides.
  • Drain off fat.
  • Set meatballs aside.
  • In same Dutch oven, combine 2 cups water with remaining ingredients.
  • Bring to boiling, then reduce heat, and simmer, covered, but stirring occasionally, 30 minutes.
  • Add meatballs and simmer 20-30 minutes longer.
  • Good served with Parmesan on top.
  • If soups seems too thick, thin with water.

1½ tbsp rapeseed oil
1 onion, finely chopped
2 red peppers, deseeded and sliced
1 garlic clove, crushed
½ tsp chilli flakes
2 x 400g cans chopped tomatoes
100g giant couscous
500ml hot vegetable stock
12 pork meatballs
150g baby spinach
½ small bunch of basil
grated parmesan, to serve (optional)

Steps:

  • Heat the oil in a saucepan. Fry the onion and peppers for 7 mins, then stir through the garlic and chilli flakes and cook for 1 min. Add the tomatoes, giant couscous and veg stock and bring to a simmer.
  • Season to taste, then add the meatballs and spinach. Simmer for 5-7 mins or until cooked through. Ladle into bowls and top with the basil and some parmesan, if you like.

  • Heat oil in a large soup pot over medium heat on the stovetop. Add carrots, celery and onion and cook, stirring, until onion is softened, about 5 minutes. Add tomato paste, if using and cook, stirring, for 30 seconds. Add chicken broth and bring mixture to a boil, then reduce heat and simmer for about 15 minutes, or until carrots are tender (taste to be sure). Discard bay leaf.
  • Pour in can of tomatoes. Add Italian seasoning, Parmesan rind, if using, and a bit of salt and freshly ground pepper. Stir to combine. Add meatballs. Continue simmering soup another 15 minutes, to allow the flavours to come together.
  • Add pasta and simmer a further 15 minutes, or until pasta is cooked. Taste for seasoning and add additional salt, pepper and/or Italian seasoning, as needed. Remove from heat and stir in baby spinach until wilted.
