PASTITSIO
Pastitsio is a layered Greek casserole of macaroni and seasoned ground lamb, topped with a thick cream sauce. This version substitutes beef in place of the lamb to suit American tastes.

Steps:
- Melt 1 tablespoon of butter in a large skillet over medium-high heat. Stir in onion and cook until it begins to soften, about 3 minutes. Stir in the ground beef, and cook until crumbly and no longer pink. Pour in the water and tomato paste. Season with salt, pepper, allspice, nutmeg, and cinnamon; cover, and simmer for 5 minutes. Remove from heat, adjust salt to taste, then refrigerate until cold. Once cold, remove any congealed fat, and thoroughly mix with 2 beaten eggs, and set aside.
- Preheat oven to 400 degrees F (200 degrees C).
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain, and rinse under cold water to cool. Mix the macaroni in 2 beaten eggs until well coated.
- Evenly spread half of the macaroni mixture into a 11x14x2 inch baking pan, sprinkle with 1/2 cup of the grated parmesan cheese, and drizzle with 1/2 cup of melted butter. Spread the meat mixture overtop, then finish with the remaining macaroni. Sprinkle the macaroni with another 1/2 cup of Parmesan cheese, and drizzle with 1/2 cup of melted butter.
- Whisk together 4 beaten eggs with the half-and-half, 1 cup of Parmesan cheese, flour, and salt; whisk until well blended. Pour the cream mixture evenly over top of the pastitsio, and sprinkle with nutmeg.
- Cover the pan with foil, and bake in the preheated oven for 15 minutes. Remove the foil, and bake until the top has turned golden brown, about 30 minutes. Remove from oven, and allow to stand for 15 minutes before serving.

Steps:
- Toss pasta with 1 tablespoon oil and garlic powder.
- In a large frying pan, sauté the onion and garlic in a 1 tablespoon of oil. Add the meat and brown.
- Add the tomatoes ,tomato sauce, salt, pepper, oregano and parsley. Simmer until cooked through and the mixture has the consistency of a sauce.
- Using a greased oven proof dish, layer the cooked spaghetti and the meat mixture in the dish.
- Heat the butter, flour in microwave oven to make a paste about 30 seconds.
- Whisk eggs into milk. Add to roux and whisk to mix together. Micro 2 minutes. Whisk and micro 2 more minutes. Add salt and pepper to taste.
- Stir in grated cheddar cheese. Pour over the casserole. Sprinkle the parmesan cheese on top.
- Bake for 45 minutes at 350°F.

Steps:
- Brown onion in the butter then add the meat. Keep stirring until the meat is browned.
- Add salt, pepper, cinnamon, tomato paste and water. Cook, uncovered, over medium heat for about 20 minutes, stirring occasionally until the water is absorbed.
- Remove from the heat and allow this to cool.
- Beat 1 egg very well and add it to the meat mixture.
- Macaroni:.
- Cook the macaroni as per the package directions. Then rinse under hot water, drain and put into a large bowl.
- Toss the macaroni with the 3 beaten eggs and the 1 3/4°C grated Romano cheese.
- White Sauce:.
- Melt the butter and add the flour, mix well. This should be done on med-low heat, so you don't burn the butter.
- Gradually add the cold milk, stirring well. Cook this until it's thick, stirring often. Be patient, it needs to thicken up! Remove from heat.
- After about 5 minutes, while sauce is cooling, beat the 5 egg yolks very well and blend into the sauce. Add the cheese and mix.
- Butter a 10" x 14" pan. Put 1/2 of macaroni mix in pan. put meat mixture over the macaroni, spreading evenly. Put the rest of the macaroni mixture on top, also spreading evenly.
- Put white sauce all over the top.
- Bake at 375 degrees F. for about 45 minutes or until golden brown (you might need to tent it with alum. foil towards the end of cooking).

- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil. Add macaroni pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat olive oil in a skillet and cook garlic, onions and beef until meat is browned; drain fat. Add tomatoes, pepper and oregano. Stir and cook about 5 minutes. Sprinkle in 1/2 of the Parmesan cheese.
- Lightly coat a casserole or baking dish with olive oil and spread 1/2 the cooked pasta in it. Add the meat sauce and cover with the remaining pasta.
- Melt butter in a saucepan and blend in flour. Slowly add milk, stirring almost to boiling. In a bowl, blend remaining parmesan cheese and egg yolk and slowly add to the milk sauce, stirring constantly.
- Pour sauce over macaroni and bake for 30 minutes. Top should be golden and a little crispy.

- Cook macaroni until tender but firm. Drain and rinse under cold water,drain again and add 1/3 parmesan cheese and set aside.in skillet melt 1-1/2 tsp of the butter over med. heat,cook onion and garlic,stirring for 3 minutes.
- Stir in beef,oregano,cinnamon,salt and pepper;cook stirring for 7-10 minutes or until no longer pink.Drain off fat.
- Stir in tomatoes,tomatoe paste and vinigar.Cook stirring for 3 minutes.Remove from heat,stir in parsley. Set aside.
- SAUCE: in saucepan,melt butter over med heat. Whisk in flour,cook whisking for 2 minutes without browning.Pour in milk,cook,whisking for about 5 minutes or until thickened.Remove from heat stir in cottage cheese,egg,nutmeg,salt and pepper.
- Grease 10" pie plate with remaining 1-1/2 tsp butter. sprinkle with bread crumbs. Spoon in half of the macaroni,spread meat mixture evenly over top.
- Sprinkle with one third of the parmesan. Spoon remaining macaroni over top. Carefully pour sauce over macaroni.
- (NOTE: can be prepared to this point,covered and refrigerated for up to 1 day. Let stand at room temperature for 30 minutes and add 10 minutes to baking time). Sprinkle with remaining parmesan. Bake on baking sheet(or pan)at 350F for 50 to 60 monutes or until top is golden brown.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- Beat eggs and milk together. Pour half of the cooked macaroni into 9x13 inch baking dish. Cover macaroni with half of the cheese. Pour remaining macaroni into baking dish leaving a little room at the top. Cover with remaining cheese. Pour egg mixture over macaroni. Sprinkle with salt.

- In a large skillet over medium heat, cook ground beef and onion, until meat is brown. Stir in 3/4 teaspoon salt, a pinch of pepper, tomato sauce and cinnamon and cook 1 to 2 minutes more. Set aside.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Set aside.
- In a medium saucepan, melt 1/4 cup butter over medium heat. Dump in flour, all at once, and stir until a smooth roux is formed. Pour in 2 1/2 cups milk, a little at a time, stirring until smooth. Stir in 1/4 teaspoon salt, pepper and 1/4 cup Parmesan; bring to a boil, and stir until thickened. Remove from heat.
- In a small bowl, beat together eggs and 1 cup milk. Set aside.
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish. Place half the cooked macaroni in the baking dish and top with all of the beef mixture. Sprinkle the remaining 1/2 cup grated Parmesan over the meat. Place the remaining macaroni over the cheese. Pour the egg mixture over the macaroni. Cover all with the white sauce.
- In a medium bowl, stir together bread cubes and melted butter, until bread is well coated. Place bread cubes evenly over macaroni.
- Bake 50 to 60 minutes, or until topping is golden brown.

Steps:
- Preheat oven to 180°C.
- Grease a 22cm springform pan, and line base and sides with baking paper.
- Cook pasta until tender. Drain. Return to pan.
- Heat oil in large frypan. Add onion and garlic. Cook for 5 minutes.
- Add mince and cook until brown. Add pasta sauce and 1/4c water. Simmer uncovered for 5-7 minutes or until sauce thickens. Add to pasta.
- Combine bechamel sauce and eggs. add 1/2c to pasta mix, stir to combine.
- Place pasta mix in pan. Smooth surface. Pour over remaining sauce. Sprinkle with parmesan.
- Bake 25-30 minutes until golden.
- stand 20 minutes. Slice into wedges and serve.
