JEFF'S FAMOUS CHICKEN SALAD CROISSANT
Summer may be all about lighter recipes, but that doesn't have to mean light on flavor! I made this recipe at my first job and fell in love with the combination of the buttery flakiness of a toasted croissant with a creamy filling that makes it a perfect comfort food for the warmer seasons. I love the way the two textures combine with summer ripe Roma tomatoes, hot cherry pepper relish and a balsamic glaze to create serious #sandwichgoals.

- In a large Dutch oven or pot, stir 1 tablespoon salt into 6 cups cold water. Add the chicken and heat over medium heat until the water hits a temperature of 170 degrees F. Take the pot off the heat, cover, and let the chicken sit in the warm water until its internal temperature hits 165 degrees F, 15 to 20 minutes. Transfer the chicken to paper towels to dry. Once cool enough to handle, pull the chicken apart with your hands or forks until shredded but still chunky.
- Meanwhile, in a large bowl, mix the celery, scallions, cherries, mustard, sugar and salt and pepper to taste. Let this mixture sit for at least 10 minutes or up to 1 hour to extract all that flavor. Add the mayo and mix until incorporated. Adjust the seasoning if necessary.
- Add the shredded chicken and walnuts to the mayo mixture. Adjust the seasonings. Let it sit in the fridge for at least 1 hour before serving, overnight preferred.
- Place a piece of lettuce on the bottom half of a croissant followed by a scoop of chicken salad, one or two tomato slices, a spoonful of hot cherry pepper relish or giardiniera and a little drizzle of balsamic glaze. Close the top of the croissant. Assemble 3 more sandwiches. Cut the sandwiches in half and eat!
CHEF JOHN'S CROISSANTS
I wouldn't describe making homemade croissants as easy since there are multiple steps, and it does take at least half a day. But it's really not that hard either; and certainly simpler than flying to Paris, which is the only other way to enjoy these amazing pastries. This recipe was adapted from one by Bruno Albouze, from The Real Deal (which he is).

- Place warm water in the bowl of a stand mixer. Sprinkle with yeast. Let yeast dissolve for 10 minutes. Add sugar and bread flour. Sprinkle with salt; add 6 tablespoons butter. Attach the bowl to the stand mixer. Mix dough with the dough hook just until butter is completely kneaded in and the dough forms a ball and pulls away cleanly from the sides of the bowl, 3 or 4 minutes.
- Transfer dough to a work surface and form into a semi-smooth ball. Place dough back in the mixer bowl; cover. Let rise in a warm spot until doubled, about 2 hours.
- Transfer dough to a lightly floured work surface. Push and press dough to deflate it, and form it into a rectangle. Fold into thirds by lifting one end over the middle third, and folding the other side onto the middle. Wrap in plastic wrap. Place on a rimmed baking sheet lined with a silicone mat. Refrigerate until chilled through, about 1 hour.
- Cut 2 sticks butter in half lengthwise and place slightly apart from each other on a length of parchment paper long enough to fold over the butter. Fold the parchment paper over the butter. Press butter down. Roll out with a rolling pin to a square about 8x8 inches. Refrigerate until a little chilled and just barely flexible, 10 or 15 minutes.
- Roll dough out into a rectangle slightly wider than the butter slab and just over twice as long. Place butter on one half of the dough leaving about 1 inch margin from the edge of the dough. Fold the other half of the dough over the butter. Dust work surface and dough with flour as needed.
- Press rolling pin down on dough to create ridges. Then roll out the ridges. Repeat this process. Keep pressing and rolling until dough is about the same size rectangle as you had before you folded it in half, dusting with just a bit of flour as necessary.
- Starting from the short side, fold one-third of dough over middle third. Then fold the other end over to form a small rectangle. Flatten out just slightly with rolling pin. Transfer to the silicone-lined baking sheet; cover with plastic wrap. Refrigerate until chilled, about 30 minutes.
- Transfer dough back to work surface and repeat pressing and rolling technique until dough is the size of the previous larger rectangle. Fold into thirds again, starting from the short side. Press and roll slightly. Transfer back to lined baking sheet. Cover and refrigerate about 15 minutes.
- Roll back out to a large rectangle. This time, fold dough in half. Then press and roll out into a 1/2-inch thick rectangle, using as little flour as needed to keep dough from sticking.
- Cut dough in half lengthwise using a pastry wheel or pizza cutter. Dust one piece with flour and roll out to a rectangle about 1/4 to 1/8 inch thick. Starting from one corner, cut the dough diagonally crosswise into 8 triangles using a pastry wheel. Starting with the bottom end of each triangle, roll each up toward the tip to form the croissant with the seam at the bottom. If necessary, use a bit of water to seal the tip to the rolled croissant.
- Repeat with the other half of the dough.
- Place shaped croissants on baking sheets lined with silicone mats. Whisk together egg and 1 tablespoon water to make the egg wash. Brush croissants with egg wash. Place in a warm area to allow them to rise, about 45 to 60 minutes.
- Preheat oven to 400 degrees F (200 degrees C). Brush croissants gently but thoroughly again with egg wash.
- Bake in preheated oven until beautifully browned, about 25 minutes. Transfer to a cooling rack. Cool to room temperature before serving.

CURRY CHICKEN CROISSANTS
These croissant sandwiches are heavenly. They make a great entree for a luncheon. I've served them at a bridal shower and everyone requested the recipe. I cut back on the amount of curry powder -- but that's just personal preference. If you are a big curry powder fan, then you will probably want to add the amount listed in the recipe.

- In food processor or blender, process chicken until finely chopped. Transfer to a large bowl, add walnuts, celery and onion.
- In a small bowl, combine mayonnaise, sour cream, curry powder, and Cajun seasoning. Mix well.
- Pour over the chicken mixture and stir well. Refrigerate for at least an hour.
- Place lettuce leaf and about 3/4 cup of the chicken mixture on each croissant.
- Note: It is personal preference as to how finely chopped the chicken is.

- Preheat the oven to 375 degrees.
- Put the chicken, celery, water chestnuts, soup, mayonnaise and sour cream in a large bowl and stir until well combined.
- Put the chicken mixture into a 9x13 baking dish that has been coated with the cooking spray.
- Bake for 25-30 minutes, or until celery is crisp-tender.
- Remove the casserole from the oven.
- Unroll the croissant dough into flat pieces and cover the chicken mixture with the slices of dough.
- Drizzle with the melted butter.

CHICKEN CROISSANT BAKE
This makes a nice lighter style casserole. Great for weekend brunches or light lunches. Any of the cheeses are good, or even a combination. Prep time includes refrigeration time before cooking.

- Arrange half of the croissant cubes in an ungreased square 8 x 8 baking dish.
- Sprinkle with 1/2 cup of the cheese, all of the chicken and onions.
- Arrange remaining croissants over the top.
- Beat milk, eggs, mustard and salt.
- pour over casserole.
- Cover and refrigerate at least 2 hours, but no more than 24 hours.
- Bake uncovered at 325ºF for 1 to 1 1/4 hours, or until tests clean.

- Saute mushrooms in small amount of butter.
- Shortly before taking breasts off grill top with mushroom and swiss cheese long enough to melt cheese.

- Mix shredded chicken, cream cheese, celery, and onion.
- When removing cresent rolls from package, leave together so that two cresent rolls form a square. This will leave you with 4 croissants.
- Put chicken mixture into center.
- Bring up each corner and secure together.
- Dip upside down in melted butter.
- Sprinkle with croutons.
- Bake at 350 degrees for 1/2 hour on a cookie sheet.
