MEAT LOAF DINNER
When in a hurry, I substitute canned potatoes and green beans for the fresh. I like the fact that I can pop this meat loaf into the oven in the late afternoon and forget about it until dinnertime. -Florence Dollard, Grand Island, New York

Steps:
- In a large bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into a loaf in a greased roasting pan. Arrange potatoes and green beans around loaf. Pour tomatoes over all. , Cover and bake at 350°: for 2 hours or until the meat is no longer pink and a thermometer reads 160°.

Steps:
- preheat oven to 350.
- crush crackers.
- beat egg.
- combine all meat loaf ingredients.
- mould into a log shape.
- place into a deep oblong roasting pan (with lid).
- Surround meat loaf with patatoes and carrots.
- cover with 1 can of tomato soup and all of tomato juice.
- Cover and bake for 1 hour.
- Remove lid.
- add second can of tomato soup, directly on top of meat loaf.
- Return to oven, without lid, and bake another 1/2 hour.
- Enjoy!
- The next day, I make a second meal of the leftovers, by cutting up meat in chunks (leave meat,patatoes and carrots in the sauce) and serve over rice or pasta.
- OPTION: I sometimes add a handful (1/4 cup) of basmati rice to the mixture before cooking.

- Heat oven to 375 degrees.
- In large bowl, combine ground beef, cracker crumbs, 1/2 of the onion, 2/3 cup of soup, the egg and half the salt and pepper.
- Lightly grease a 9x9-inch baking dish.
- Layer the potatoes and remaining onion, salt and pepper in two layers.
- Spoon the corn over the potatoes.
- Evenly spread the meat loaf mixture over the corn.
- Top with the remaining tomato soup.
- Cover with foil and bake at 375 degrees for 1 hour or until meat is no longer pink in the middle.
- Cool slightly before cutting.

- Heat oven to 450 degrees.
- In a small bowl beat the egg, milk, 1 Tbsp.
- catsup, worcestershire, mustard, garlic powder, salt/pepper with a fork.
- Mix well, beat in the bread; then add the meat.
- Mix thoroughly to a pasty texture.
- Use small aluminum foil baking tin (these can be found in the supermarket; they're disposal after use) and form loaf.
- Spread remaining catsup over the top and bake for 25 to 30 minutes.

- Preheat oven to 375°F and lightly grease the bottom of a 13x9x2 inch baking pan.
- Combine beef, milk, egg, steak sauce, bread crumbs, salt and pepper and shape into a loaf in the center of the baking pan.
