1 teaspoon plus 1/2 cup butter, divided
2 cups confectioners' sugar
3/4 cup creamy peanut butter
2/3 cup graham cracker crumbs
TOPPING:
2/3 cup semisweet chocolate chips
4-1/2 teaspoons creamy peanut butter
1/2 teaspoon butter

Steps:

  • Line a 9-in. square pan with foil; grease foil with 1 teaspoon butter. In a microwave, melt remaining butter. Stir in confectioners' sugar, peanut butter and cracker crumbs. Spread into prepared pan., In microwave, melt topping ingredients; stir until smooth. Spread over top. Refrigerate until set., Using foil, lift out of pan. Cut into 1-in. squares. Store airtight in the refrigerator.

4 Tbsp reduced fat smooth peanut butter
1 Tbsp honey
1 ½ cup crisp rice cereal
⅓ cup cocoa
½ cup sugar
⅓ cup cornstarch
3 cup Silk Light Chocolate
1 ½ tsp vanilla
nonfat whipped topping, for serving, if desired
chocolate syrup, for serving, if desired

Steps:

  • Coat a 9-inch square baking pan with cooking spray or margarine.
  • Combine peanut butter and honey in a medium microwave-safe bowl. Microwave on high for about 20 seconds until peanut butter has melted.
  • Toss cereal in peanut butter mixture until well-coated. Press into greased 9″ pie plate. Chill.
  • In a saucepan, whisk together cocoa, sugar, cornstarch and Silk. Bring to a boil, stirring constantly.
  • Reduce heat, continue stirring and simmer until thick, about 2-3 minutes. Remove from heat and stir in vanilla.
  • Pour mixture onto prepared crust. Cover with plastic wrap and chill until set, about 2 hours or overnight.
  • To serve, cut into nine squares and top each with nonfat topping and syrup, if desired.

24 chocolate wafer cookies
3 tablespoons unsalted butter, melted
4 ounces semisweet chocolate morsels, melted
4 ounces reduced-fat cream cheese
1/2 cup creamy all-natural peanut butter
1/2 cup 2-percent Greek yogurt
2/3 cup confectioners' sugar
1/4 cup chopped roasted unsalted peanuts
Kosher salt

Steps:

  • For the crust: Line an 8-inch square pan with foil so it overhangs on two sides and lightly coat with cooking spray. Process the cookies in a food processor until finely ground. Add the melted butter and process again until the crumbs are coated with the butter; add the melted chocolate and process until the mixture is the texture of very wet sand. Using an offset spatula, press the mixture into the bottom of the prepared pan, cover and refrigerate while preparing the filling. Clean out the food processor bowl.
  • For the filling and topping: Add the cream cheese, peanut butter, yogurt and sugar to the bowl of the food processor and process until smooth and combined. Pour the mixture over the crust and smooth with a spatula. Top with the peanuts and sprinkle with 1/4 teaspoon salt. Cover and refrigerate until set slightly looser than cream cheese, about 4 hours up to overnight.
  • Run a knife around the edges of the mixture to loosen, use the foil handles to lift it out, cut into 12 bars and serve chilled.
