FAIL-PROOF HOMEMADE MAYONNAISE
Homemade mayonnaise is such a treat. It's very simple to make, too. Room temperature ingredients are best when making mayonnaise at home. If you're not able to wait for the egg to come to room temperature, submerge it in lukewarm (not hot) water for a couple of minutes. There are a few ways to make mayonnaise. We use our food processor with the small bowl attachment, but an immersion blender or making it completely by hand and large whisk will work. (Expect tired arms and strong biceps if you do choose to do it by hand). All ingredients need to be at the same temperature. If you have cold eggs and no time to leave them out on the counter to come to room temperature, place the egg into a bowl of warm water. Set it aside for a few minutes before using in the recipe.

- If you have a large food processor, use the smaller bowl attachment that came with your processor so that the bowl is not too large for the amount of mayonnaise this recipe makes. Not using the smaller bowl can prevent the mayonnaise from emulsifying since the mixture will not have enough contact with the blade.
- If you do not the smaller bowl attachment, making the mayonnaise with an immersion blender or by hand are alternatives. Or simply make a larger batch and double the recipe and use the standard bowl attachment. You might find success with a high-speed blender, but based on reviews and comments from readers, using a blender seems to be less fail-proof.
- Add egg to the small bowl of a food processor and process for 20 seconds. Add the mustard, vinegar, and salt. Process for another 20 seconds.
- Scrape the sides and bottom of the bowl, turn the food processor on then begin to slowly add the oil in tiny drops until about a quarter of the oil has been added (this is critical for proper emulsification).
- When you notice that the mixture is beginning to thicken and emulsify, you can be a little less strict. With the processor on, continue to add it slowly, but increase to a very thin stream instead of drops of oil.
- When all of the oil has been added, scrape the bottom and sides of the bowl and process for an extra 10 seconds. Taste mayonnaise for seasoning then add salt, lemon juice or extra vinegar to taste.
- Note, if the mayo seems too thin, slowly stream in more oil with the processor running until thick.

POTATO SALAD WITH FRESH HERBS AND LEMON
This is a great salad for picnics, get-togethers or potlucks(contains no mayonnaise). It's just a great potato salad. I love fresh herbs and I enjoy using them in my recipes every chance I get. I found this in a Bon Appetit "Deliciously Light" cookbook, and it justly describes this salad.I have taken liberties with this recipe, therefore it's not the same as in the cookbook. Times do not include time to bring water to a boil.

- Whisk oil, lemon juice and lemon peel in small bowl to blend.
- Season dressing with salt and pepper.
- Place 1/2 cup dressing in large bowl.
- Mix in bell pepper, onion, cilantro, basil and mint.
- Cook potatoes in large pot of boiling, salted water until tender, about 25 minutes.
- Drain; cool 15 minutes.
- Cut potatoes into 1/2-inch cubes.
- Add potatoes to large bowl with dressing and toss to blend.
- Let stand 10 minutes.
- Season to taste with salt and pepper, adding more dressing, if desired.
- Serve at room temperature.

SPICY HERB MAYONNAISE
Homemade mayo, much like hollandaise sauce, takes a little practice to get the knack. It's like learning to ride a bicycle-once you've mastered the technique, it'll be with you for life. - In a large bowl, whisk together the egg yolks and the mustard. While whisking continuously, slowly stream the oil into the egg yolks a little at a time until completely emulsified. This will take 8 to 10 minutes. A little patience, strength, and ambition are required, friends.
- When the mayonnaise has come together and is nice and thick, add the lemon juice, vinegar, and hot sauce and whisk for 30 seconds. Fold in the grated garlic and herbs and season with the salt. Taste and adjust the seasonings if necessary.
- Check you out! You just made mayo!! It'll keep in an airtight container in the fridge for about 1 week. If it separates, add 1 to 2 teaspoons water to the mayo and whisk until smooth and combined.
- Bonus!
- You can also make mayo in a food processor. Process the egg and mustard for about a minute, then slowly stream in the oil through the feed tube with the processor running until the mayo emulsifies and thickens beautifully. (If using a Mini-Prep, you can use the two little holes in the top of the lid to drip in the oil.) Add the lemon juice, vinegar, and hot sauce and pulse a few times until combined. Fold in the garlic and fresh herbs, and season with the salt. Sweet!

- In a small bowl, whisk together the egg yolks, vinegar (or lemon juice), dry mustard, salt, pepper and cayenne until smooth. Place the olive oil in a measuring cup or small pitcher than has a pour spout from which you can easily control pouring.
- Twist a long kitchen towel into a circle and nest the bowl in it for stability. You can also place the towel and bowl inside a pan to hold it steady. With one hand whisk and the other hand drizzle in the oil. Start a drop at a time and whisk fast. Drop by drop, keep adding and whisking until the emulsion starts to get creamy and thick. When you have added about 2 tablespoons of oil, pour the emulsion into your blender. Scrape every bit out with a flexible spatula.
- Start the blender on low with the lid on and the center cap off. This will reduce splattering. Start adding the oil a few drops at a time, then in a fine thin stream. Keep going until all of the oil is incorporated and you have thick, creamy mayonnaise. It will take about 20 minutes to incorporate all of the oil. Be patient and go slow for thick, creamy mayonnaise. Finish by stirring in fresh chopped herbs.
