Cheese is a wonderful and versatile party food. This cheese ball is loosely based on a recipe my mother always made to take to Christmas parties. It's quite different from her actual dish, but equally tasty and very easy to bring together. Time includes the first refrigeration.

4 ounces neufchatel cheese, softened and cubed
4 ounces sharp cheddar cheese, grated
2 ounces blue cheese, softened and cubed
1/4 cup mayonnaise, preferably whole egg and unsweetened
1/4 teaspoon ground cumin
1/8 teaspoon chile powder
1 tablespoon white wine vinegar
1 tablespoon Worcestershire sauce
2 tablespoons stuffed green olives, finely chopped
2 tablespoons onions, finely chopped
1 tablespoon sweet pickle relish
1/2 cup sunflower seeds, toasted
1/2 cup flat leaf parsley, finely chopped

Steps:

  • Put the three cheeses in a food processor, and buzz until blended.
  • Add the remaining ingredients -- except for the sunflower seeds and parsley -- and buzz to blend well.
  • Put the cheese mixture in the fridge for two hours so it firms up.
  • While cheese mixture chills, toast sunflower seeds until they are golden, then remove from pan and allow them to cool. Then stir together seeds and parsley. Set aside.
  • Remove cheese mixture from fridge and shape into a ball or log (you may need to wear latex gloves to do this).
  • Spread sunflower seeds and parsley on a sheet of waxed paper, and roll cheese ball/log in this combination.
  • Serve with crackers, crudités and or small toasts.

CHRISTMAS TREE CHEESE BALL

8 ounces cream cheese
8 ounces sharp Cheddar
1/4 teaspoon cayenne
2 to 3 dashes Worcestershire sauce
3 scallions, sliced
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
1/4 cup very finely chopped fresh flat-leaf parsley
1/4 cup chopped fresh dill
2 tablespoons pomegranate seeds
Buttery crackers, such as Ritz, for serving

Steps:

  • Add the cream cheese, Cheddar, cayenne, Worcestershire, scallions, lemon juice and some salt and pepper to the bowl of a food processor. Pulse until the mixture is almost smooth; you still want a few bits of cheese in there. Remove with a rubber spatula to a piece of plastic wrap and wrap up the cheese mixture. Place in the freezer for 30 minutes.
  • Shape the cheese mixture with your hands into a Christmas tree/cone using the plastic wrap to keep it together. Mix the chopped parsley and dill together on a plate or work surface. Coat the shaped cheese in the chopped herbs.
  • Transfer the cheese tree to the center of a platter. Decorate with the pomegranate seeds as ornaments. Serve with buttery crackers.

This was my mom's famous cheese ball, everyone always gives it compliments and asks for the recipie.

1 lb cheddar cheese, shredded
3 ounces cream cheese
3 tablespoons mayonnaise
1/2 teaspoon Worcestershire sauce
1 dash onion salt
1 dash garlic salt
1 dash celery salt
1/4 cup green olives, chopped
3 tablespoons minced dried beef
3 tablespoons fresh parsley

Steps:

  • Combine, cheeses, mayonnaise, worcestershire sauce, and salts. Blend until smooth. If too stiff add a bit more mayonaise. Add olives and shape into ball. Combine dried beef and fresh parsley and roll ball in the mixture. Cover with plastic wrap and chill. For a difference you can roll in crushed walnuts or pecans.
  • Serve with crackers.
  • Note - this is best with freshly grated cheese - not the package of pre-shredded stuff, the moisture content is needed.

1 cup grated parmesan cheese
2 garlic cloves, minced
2 tablespoons pine nuts and basil (prepared Pesto, Food.com wouldn't allow)
2 tablespoons minced fresh basil
2 tablespoons pine nuts, toasted plus 1/2 cup, divided
2 tablespoons prepared horseradish
1/2 cup crumbled cooked bacon
1 green onion, finely chopped
2 tablespoons tomato paste
1/8 teaspoon salt
2 tablespoons minced fresh cilantro
1 tablespoon finely chopped onion
1 tablespoon minced seeded jalopeno pepper
assorted cracker

Steps:

  • In a large mixing bowl, beat the cream cheese, Parmesan cheese and garlic until blended. Divide into three portions.
  • Pine Nut-Pesto Cheeseball: In a small mixing bowl, beat one portion of cream cheese mixture and pesto until blended. Stir in basil. Chop 2 tablespoons pine nuts; stir into cheese mixture. Shape into a ball; roll in remaining pine nuts. Wrap in plastic wrap; chill until firm.
  • Horseradish-Bacon Cheeseball: In a small mixing bowl, beat one portion of cream cheese mixture and horseradish until blended. Stir in bacon and onion. Shape into a ball. Wrap in plastic wrap; chill until firm.
  • Salsa Cheeseball: In a small mixing bowl, beat one portion of cream cheese mixture, tomato paste and salt until blended. Stir in the cilantro, onion and jalapeno. Shape into a ball. Wrap in plastic wrap; chill until firm.
  • Refrigerate for up to 2 weeks. Serve with crackers.

2 -8 ounces cream cheese (softened)
1 small sweet onions (diced Fine) or 2 green onions (diced Fine)
3/4 cup honey-baked ham (diced fine, I use a Food Processor)
2 teaspoons Worcestershire sauce
1 teaspoon lawreys seasoning salt
1/2 cup crushed pecans (or I sometimes use crumbled bacon bits) or 1/2 cup almonds (or I sometimes use crumbled bacon bits)

Steps:

  • Mix Cream Cheese, Ham, Onions, Worcestershire Sauce & Salt.
  • Form the mixture into a Ball or Log and roll in the nuts or Bacon bits.
  • Chill 2 hours.
  • Serve with Crackers Enjoy!

This recipe is great for any time you like a bit of a different cheese. It's very easy to make and taste great with crackers or small rusk.

2 (250 g) packages cream cheese, softened (regular or light may be used)
2 cups finely grated medium cheddar or 2 cups old cheddar cheese
1/4 cup finely minced red pepper
4 cups finely minced green peppers
1/4 cup minced onion
1 tablespoon Worcestershire sauce
1 teaspoon lemon juice
1 cup chopped nuts (I use pecans)

Steps:

  • Blend cream cheese, cheddar cheese, peppers, onion, Worcestershire sauce and lemon juice until well mixed.
  • Shape into a round ball.
  • If mixture is too soft to form, refrigerate.
  • Roll in chopped nuts.
  • Serve in centre of decorative plate, surrounded by an assortment of small, firm crackers or rusk.
