MOCK SWISS STEAK

Mock Swiss Steak image

This is a variation of Swiss Steak using hamburger. I made a Swiss steak recipe with both chuck steak and hamburger since that's what was in the freezer. The hamburger part actually turned out better. Give it a try.

Time 3h20m

Yield 6-8 serving(s)

Number Of Ingredients 10

4 lbs ground beef
2 tablespoons olive oil
2 onions, sliced
1 tablespoon chopped garlic
1/2 teaspoon dried thyme
2 tablespoons tomato paste
1 tablespoon all-purpose flour
1 (14 1/2 ounce) can diced tomatoes
1 1/2 cups chicken broth
1 tablespoon dried parsley

Steps:

  • Preheat oven to 325.
  • Form beef into 4 large round patties. (It's fine to use frozen.).
  • Heat oil in a Dutch oven on top of the stove.
  • Brown the patties on both sides and then remove from the pan. You may need to do this in two batches.
  • Add the onion and cook about 5 minute.
  • Add the garlic and thyme and cook another minute.
  • Add the tomato paste and flour and cook another minute.
  • Stir in the canned tomatoes, chicken broth and parsley and bring to a boil.
  • Put the browned beef patties back into the pan and cover.
  • Put in the oven and bake until beef is cooked through. This will be about 2 hours for fresh hamburger or 3-4 hours if it was frozen.

Time 40m

Number Of Ingredients 5

Cooking spray
1 lb. of whatever steak you can find on sale - enough for everyone in the family
1 small bottle of Catalina, Russian or dark French salad dressing
1 cup of water
1 dash of Worcestershire sauce

Steps:

  • Spray a large skillet with cooking spray.
  • On medium-high heat, brown the steak on both sides.
  • If you like onions, add them to the skillet and sauté them until they are translucent.
  • Dump the entire bottle of Catalina, Russian or French salad dressing over the steak.
  • Pour 1 cup of water and a dash (or two) of Worcestershire sauce over the dressing and stir until the liquids are blended.
  • Turn down the heat and simmer until the steak is done according to your taste. I generally cook thinner cuts of meat about 15 minutes and thicker cuts up to 30 minutes.
