BIG ISLAND TOMATO AND MAUI ONION SALAD



Big Island Tomato and Maui Onion Salad image

Freshly ground black pepper
6 cups mesclun greens
1 pint yellow tear-drop tomatoes, halved
1 pint red tear-drop tomatoes, halved
3 large tomatoes, cut into 1-inch pieces
1 Maui onion, cut into 3/4-inch pieces
Maui Onion Dressing, recipe follows
Salt
1 large Maui onion
2 tablespoons olive oil, plus 1/4 to 1/2 cup
Salt
Freshly ground black pepper

Steps:

  • In a bowl, combine the tomatoes and Maui onion. Season with salt and pepper and toss to combine. Add the Maui Onion Dressing and toss to combine. Place the greens on a large platter and season with salt. Top with the tomato salad and serve.
  • Preheat the oven to 350 degrees F. Place the onion on a large piece of aluminum foil. Drizzle the onion with 2 tablespoons of the olive oil and season with salt and pepper. Wrap the onion tightly in the foil and roast until tender and lightly golden brown, about 50 minutes to 1 hour.
  • Remove from the oven and cool. When cool, roughly chop the onion and place in the bowl of a food processor. Process until smooth. With the machine running, slowly add the remaining 1/4 to 1/2 cup olive oil through the feed tube, until the dressing is smooth. Season with salt and pepper.

1/4 cup extra virgin olive oil
1 ounce pancetta, diced
1/4 teaspoon finely minced garlic
1/4 teaspoon finely minced shallot
1/4 cup balsamic vinegar
6 large basil leaves, julienned
3 Maui onions, julienned
6 large rip Kula beefsteak tomatoes
6 cups washed and torn baby mixed greens
6 sprigs fresh basil, for garnish

Steps:

  • Make vinaigrette: heat the olive oil in a large saute pan and saute the pancetta, garlic and shallot over medium-high heat for 1 minute. Remove from the heat and stir in the vinegar and half of the basil. Add the onions and return to the heat for about 30 seconds. Remove from the heat and stir in the remaining basil.
  • Core the tomatoes; cut a slice off the tops and bottoms and discard. Cut each tomato into 3 thick slices. Try and keep the slices in order!
  • To assemble: place a bottom tomato slice on each serving plate. Place a layer of the greens on top of the tomato, using up about half the greens. Place a layer of the onions and a little of the vinaigrette over the greens, and then the center tomato slice. Add another layer of the greens (use the rest), onions (save some for garnish) and top with the last slice of tomato. Garnish with onion and a basil sprig.

This recipe is way, way too easy! My good friend, Marleene told me about this cooking technique which I think she got from a restaurant in Hawaii. The beauty of this recipe is that it is fat free, loaded with taste, kid friendly, virtually low in calories and did I mention....way to easy??!!

1 medium onion (any sweet onion will do, Maui, Walla Walla)
1/4 teaspoon sea salt
1 garlic clove (optional)

Steps:

  • Cut the onion into strips. Sprinkle lightly with salt, and let it sit for at least 10 minutes to draw out the juices from the onion.
  • Spray large skillet with Pam and let heat. Add onions and cook on low heat for 15 - 20 minutes, stirring occasionally, until onion is golden.

1 head romaine lettuce
2 roma tomatoes, diced
1 small maui onion, diced
2 ounces cooked shrimp
1 avocado, diced
1 teaspoon capers
2 tablespoons feta cheese, crumbled
2 stalks green onions, chopped
house vinaigrette
1/4 cup olive oil
1/8 cup red wine vinegar
1 tablespoon Dijon mustard
1 pinch black pepper
1 hard-boiled egg white, shredded
1 ounce roasted red peppers, diced or 1 ounce pimiento

Steps:

  • Shred lettuce into fine strips.
  • Combine and toss in a large bowl with diced tomatoes, onion and bay shrimp.
  • Add diced avocado.
  • For dressing: Whisk together ingredients. Olive oil, red wine vinegar, dijon mustard, black pepper, hard boiled egg whites shredded, and 1 ounce roasted red pepper diced or 1 ounce pimentos ( in a pinch I have used a quick dressing of olive oil, fresh squeezed lemon juice, salt, pepper and basil. Pretty much adjust it all to taste. It is a GREAT quick replacement and saves having to hard boil and egg and find pimentos or roasted red peppers.).
  • Pour over salad and toss lightly.
  • Sprinkle each portion with capers, crumbled feta and green onion.

2 large bunches kale, rinsed and roughly chopped (remove any midribs and stems if they're too tough)
½ medium head green cabbage, cored and thinly sliced
½ cup sweetened dried cranberries
½ cup Sweet Onion Dressing
1 cup crushed potato chips (Maui onion flavor preferred)
¾ cup roughly chopped Kim Chee Peanuts
Kosher salt

Steps:

  • In a large bowl, combine the kale, cabbage, cranberries, and sweet onion dressing. Toss to coat and mix thoroughly, using your hands if desired. Transfer to the fridge and let chill for at least 15 minutes.
  • When ready to serve, add the potato chips and peanuts and toss to combine. Season with a pinch of salt, if needed.

¼ cup papaya seeds
⅔ cup white sugar
1 teaspoon dry mustard
¼ cup lemon juice
⅓ cup apple cider vinegar

Steps:

  • Combine the onion, garlic and papaya seeds in the container of a blender or food processor. Blend until smooth.
