This recipe has been in my family for years. It's an inexpensive and easy dish to prepare.

2 pounds carrots, peeled and sliced
2 medium turnips, peeled and diced
1/2 cup butter, cubed
1/4 teaspoon salt
1/8 teaspoon pepper
Minced fresh parsley, optional

Steps:

  • Place carrots and turnips in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. , Drain and mash. Add the butter, salt and pepper. Sprinkle with parsley if desired.

2 pounds carrot, peeled and sliced, about 4 1/2 cups
1 pound turnips, or rutabagas, peeled and cubed, about 3 cups
1/4 cup brown sugar
2 tablespoons butter
1/2 teaspoon salt
ground black pepper, to taste

Steps:

  • Place the carrots and turnips in a large stockpot and cover with water. Bring to a boil and boil for 40-45 minutes or until very tender. Drain the vegetables. Add the brown sugar, butter, salt and pepper and mash the vegetables with a potato masher, and then whip with an electric mixer until they're nice and fluffy. Serve with parsley for a garnish if desired.

This is a dish I used to make only at Thanksgiving. I loved it so much that I began making a ton of it and freezing the rest in serving sizes! If you don't like turnip/rutabaga, try this way.

2 lbs carrots
2 lbs turnips or 2 lbs rutabagas
cream or milk
butter
salt
pepper

Steps:

  • Boil carrots and turnip/rutabaga SEPARATELY.
  • When done, mash each SEPARATELY using as much cream, butter, and seasonings to your taste.
  • Just before serving, drain any liquid formed at the bottom of the bowls and GENTLY combine them both.
  • You should be able to see both carrot and turnip/rutabaga pieces in the combined dish.
  • ENJOY!
  • NB: Depending on your preferences, the amts of carrot vs turnip can be regulated. Leftovers freeze well.

Turnip and carrot mash is a tasty combination of turnips, carrots, and rum mashed together. It's slightly sweet and is the perfect lower-carb substitute for mashed potatoes at your next holiday meal.

Number Of Ingredients 9

1/2 pound turnips peeled, trimmed and quartered
1 pound carrots, peeled and halved lengthwise
1 tablespoon honey
2 tablespoons sugar (optional)
1 teaspoon salt
4 tablespoons unsalted butter
1/4 cup chopped onion
1 to 2 tablespoons heavy cream to taste
1 tablespoon rum (optional)

Steps:

  • Combine 2 cups of water, turnips, carrots, honey and sugar (if using) and salt in a medium saucepan (the water will not cover the vegetables). Cover the saucepan and bring to a boil over medium to high heat.
  • Reduce the heat to a simmer and continue to cook the vegetables covered for 15 minutes.
  • Pierce the vegetables with a fork to test for doneness, and continue to cook to your preference, which can be up to 15 minutes longer adding water as needed to prevent sticking.
  • Drain the cooked vegetables in a colander reserving the cooking water.
  • Place the vegetables into a mixing bowl (or food processor) and mash the vegetables with a spoon, ricer or food processor until smooth.
  • Heat the butter in the saucepan over medium to high heat. Add the onion and saute until translucent.
  • Add the onions to the turnip/carrot mixture in the mixing bowl and blend well adding cream as desired and enough reserved cooking water or rum (if using).

3/4 pound turnips, cut into 1-inch pieces
3/4 pound carrots, cut into 1-inch pieces
2 teaspoons unsalted butter
1/2 teaspoon sugar
Kosher salt and freshly ground black pepper

Steps:

  • Put the vegetables in a skillet just large enough to hold them in a single layer. Add enough water so that it comes halfway up their sides along with the butter and sugar. Bring to a boil over high heat, then adjust the heat to maintain a simmer. Cover the vegetables with a round of parchment paper just large enough to fit the inside diameter of the pan, or with a lid set ajar. Simmer the vegetables until tender, about 8 to 10 minutes. Remove the cover and raise the heat to high. Toss the vegetables frequently in the pan, as the liquid evaporates to a shiny smooth glaze. Season with salt and pepper to taste and serve.

1 pound peeled and chopped carrots
1 pound peeled and chopped rutabaga
1/2 stick, 4 tablespoons, butter
Salt
Freshly ground black pepper
2 tablespoons freshly chopped Italian flat-leaf parsley, for garnish

Steps:

  • Boil carrots and rutabaga together until just soft. Drain and add butter. Smash together using either a potato masher or food processor until it looks like a puree. Season with lots of pepper and a little salt. Transfer to a serving dish and garnish with fresh parsley.

3/4 cup water

1-1/2 cups whole milk

Steps:

  • Peel, wash, and quarter turnips.
  • Boil 35-45 minutes or until tender. Strain and rinse cooked turnips.

4 large parsnips, peeled and chopped
2 turnips, peeled and chopped
½ cup butter
½ cup heavy whipping cream
¼ teaspoon ground nutmeg
1 pinch cayenne pepper

Steps:

  • Place carrots, parsnips, and turnips into a pot and cover with cold, lightly salted water. Bring to a boil and cook until a fork easily breaks apart the vegetables, about 25 minutes; drain. Return vegetables to the pot.
  • Mix butter, cream, nutmeg, cayenne pepper, salt, and black pepper into vegetables; roughly mash together with a potato masher until vegetables are broken down but individual colors are still visible.

4 ounces bacon, cut into 1/2-inch pieces
2 tablespoons bacon fat
2 tablespoons butter
8 ounces turnips, peeled and cut into a 1/2-inch dice (about 1 1/2 cups)
1 1/2 lbs yukon gold potatoes, peeled, quartered and cut into 1/4 inch slices
1/3 cup low-fat chicken broth
3/4 teaspoon salt
3/4 cup half-and-half, warmed
1 teaspoon fresh thyme leave, minced

Steps:

  • In a large heavy pan, cook bacon over medium heat until brown and crisp, about 8 minutes. Transfer to a paper towel and set aside.
  • Drain off all except 2 tablespoons of the bacon fat. Add the butter and heat pan over medium heat until foaming subsides.
  • Add the turnips and cook, stirring occasionally, until butter is browned and turnips are dark brown and slightly caramelized, 10-12 minutes. (if after 4 minutes turnips have not started to brown, increase heat).
  • Add potatoes, broth and salt. Cook covered over low heat (broth should simmer gently; do not boil), until potatoes fall apart easily when poked with a fork and all liquid is absorbed. (25-30 minutes).
  • Remove pan from heat, remove lid and allow steam to escape; about 2 minutes.
  • Gently mash veggies together with a potato masher. Fold in half-and-half, reserved bacon bits and thyme. Taste for seasoning; add more salt if needed and pepper to taste.
