MARI'S HOMEMADE OATMEAL COOKIES

1 cup (2 sticks) salted butter, room temperature
1 cup packed brown sugar
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2 cups old-fashioned oatmeal
1 cup chopped pecans
1 cup grated coconut

Steps:

  • Preheat the oven to 375 degrees F.
  • Using an electric mixer, cream the butter and both the brown and granulated sugar. Add the eggs and vanilla and beat well. In another bowl, sift together the flour, baking soda, baking powder and salt. Stir in the dry mixture to the butter mixture. Then add the oatmeal, pecans and coconut.
  • Using an ice cream scooper, drop some of the dough on an ungreased baking sheet 2 inches apart. Bake until the cookies turn a light brown, about 10 minutes. Remove from the oven and cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely. Repeat with the remaining dough.

1 cup raisins
½ cup hot water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup packed brown sugar
½ cup chopped walnuts
2 eggs
¾ cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
  • In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
  • Bake 10 to 13 minutes in the preheated oven, until the edges are golden.

3/4 cup vegetable shortening
1 cup brown sugar, firmly packed
1/2 cup sugar
1 egg
1/4 cup water
1 teaspoon vanilla
3 cups oats, uncooked
1 cup flour
1 teaspoon salt
1/2 teaspoon baking soda

Steps:

  • Beat together shortening, sugars, egg, water and vanilla until creamy. Add combined remaining ingredients; mix well.
  • Drop by rounded teaspoonfuls onto greased cookie sheet.
  • Bake at 350°F for 12-15 minutes.
  • For variety; add chopped nuts, raisins, chocolate chips or coconut.

2 2/3 cups all-purpose flour
2 2/3 cups rolled oats or 2 2/3 cups quick oats
1 cup packed brown sugar
1 cup white sugar
1/2 cup chopped nuts or 1/2 cup chocolate chips
1 cup raisins (or any kind of dry fruit)
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon nutmeg
1/2 teaspoon salt
1 cup olive oil (or canola oil)
1 cup of no-cholesterol egg substitute (or 3 egg whites plus 6 tablespoons of extra liquid)
1/2 cup water
2 teaspoons vanilla

Steps:

  • Mix dry ingredients together in large bowl.
  • Fold the oil, egg, and vanilla into the dry ingredients. The dough is thick and sticky so you will need to use your hands to mix it thoroughly.
  • Drop cookies by spoonful, 2 inches apart on a lightly greased cookie sheet.
  • Bake at 350 degrees for 11 to 13 minutes.

6 tablespoons oil (canola or olive)
2 large eggs
2 teaspoons vanilla extract
1/2 cup applesauce
1 1/2 cups all-purpose flour (use Gluten Free 1 -- 1 flour)
1 teaspoon salt
1 teaspoon baking soda
1 cup brown sugar, packed
1/2 cup granulated sugar
1 1/2 cups chocolate chips
1 cup pecans, chopped
1 cup unsweetened dried shredded coconut
1 1/2 cups rolled oats, gluten free
1 1/2 cups quick oats, gluten free

Steps:

  • 1. Preheat oven to 350°F.
  • 2. In a large bowl, mix together oil, sugars, egg, applesauce, and vanilla extract. Beat on medium-high about 3 minutes - break up any brown sugar lumps.
  • 3. In a medium bowl, whisk together flour, oats, salt, and baking soda. Fold flour mixture into egg & sugar mixture until combined.
  • 4. Fold in chocolate chips, coconut, and pecans (dough will be slightly loose).
  • 5. Spoon heaping tablespoons of dough onto lined cookie sheets about 2" apart.
  • 6. Bake at 350°F for 11 - 12 minutes, or until they're browned around edges.
  • 7. Let cookies cool on pans for three minutes, and then move to wire rack to cool completely.
  • NOTES:.
  • I use Bob's Red Mill 1:1 Gluten Free Baking Flour with great success. I also use Bob's Red Mill gluten free oats but Quaker gluten free oats work equally well.
  • NOTES: Applesauce adds needed moisture and "chewy" mouth feel to gluten free cookies, and you wont taste the applesauce.
  • NOTES: I use unsweetened coconut but if all you have is sweetened coconut then use that (same portion) but decrease granulated sugar in recipe by about 1 tablespoon.

75g wholemeal flour
1 tsp baking powder
75g porridge oats
50g caster sugar
75g butter
1 tbsp golden syrup
2 tbsp milk

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a baking tray with baking parchment.
  • Sift the flour into a bowl. Mix in the baking powder, porridge oats and sugar.
  • Melt the butter, syrup and milk in a small saucepan or in the microwave and stir.
  • Add to the dry ingredients. Mix until the liquid covers all the oat mixture and until well combined.
  • Spoon onto a baking tray and shape into rounds, leaving space between each biscuit as they will spread whilst cooking.
  • Bake for 10-15 mins, or until golden brown. Leave to cool for 5 mins before removing from tray.

100g raisin
150ml vegetable oil
200g golden caster sugar
1 large egg, beaten
1 tsp ground cinnamon
1 tsp vanilla extract
140g plain flour
¼ tsp bicarbonate of soda
300g oats

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line 2 baking trays with baking parchment. Pour 50ml/2fl oz boiling water over the raisins and leave to soak for 20 mins until plump. Drain, reserving the liquid.
  • Meanwhile, in a large bowl, mix together the oil and sugar. Gradually beat in the egg, along with the reserved water from the raisins, the cinnamon and vanilla extract. Sift the flour, bicarbonate of soda and a pinch of salt into the bowl, then add the oats. Finally, mix in the raisins.
  • Drop heaped tbsps of the cookie dough onto the baking trays, well spaced apart as they will spread when cooking. Bake for 12-15 mins until golden. Leave to cool on the trays for 10 mins before tucking in, or transfer to a cooling rack to cool completely. Will keep in an airtight container for up to 3 days.
