3/4 cup flour
1/2 cup oatmeal
2 tablespoons sugar
1/8 teaspoon salt
1/3 cup pecans, chopped
1/2 cup butter, melted
3/4 cup sugar
2 tablespoons cornstarch
1 cup water
2 tablespoons corn syrup
2 tablespoons strawberry Jell-O gelatin dessert
1 quart strawberry, sliced

Steps:

  • To makethe pie crust, mix together the first six ingredients and press into a 9-inch pie plate. Bake in a 400F oven for 12 minutes, let cool.
  • In a saucepan, combine sugar and cornstarch. Add water and corn syrup. Cook and boil for 2 minutes. Add Jello powder. Cool for 10 minutes. Arrange cut strawberries in the cooled crust. Cover with the filling and chill for 4 hours or overnight.
  • Top with whipped cream before serving.

2 cups all-purpose flour
1 teaspoon salt
3/4 cup shortening
5 tablespoons cold water
1 cup sugar
5 tablespoons cornstarch
7 ounces lemon-lime soda
1 quart whole strawberries
Red food coloring, if desired

Steps:

  • For the crust: Spoon flour into measuring cup and level. Combine flour and salt in a medium bowl. Cut in shortening using a pastry blender until all flour is blended to form pea-sized chunks. Sprinkle with water, 1 tablespoon at a time. Toss lightly with fork until dough forms a ball. Press dough between hands to form a 5 to 6-inch pancake. Lightly flour rolling surface and rolling pin. Roll dough into circle. Trim 1-inch larger than upside-down pie plate. Loosen dough carefully. Fold dough into quarters. Unfold and press into pie plate. Fold edge under. Flute.
  • For the filling: Blend sugar and cornstarch in a saucepan; add lemon-lime soda. Cook stirring until smooth and thick. Add strawberries and cook for a few minutes. If desired, add red food coloring. Pour into cooled pie shell. Chill. Top with whipped cream if desired.

3 tablespoons cornstarch
3 tablespoons strawberry Jell-O gelatin dessert
1 cup sugar
1 graham cracker pie crust
2 quarts fresh strawberries

Steps:

  • In small sauce pan combine water, corn starch, jello, sugar. Stirring constantly till becomes very thick. About 8 to 10 minutes.
  • Wash and remove stems from strawberries. Dry very well.
  • Add strawberries to pie crust pour mixture over strawberries covering making sure every strawberry is covered.
  • Place in refrigerator till ready to serve.

I do Weight Watchers (over 100lbs off! & counting!) So I am always trying to think of new tasty recipes. I came up with this one & took it to a dessert contest one first place NO ONE can believe it is "Diet" Cake!

1 (18 ounce) box strawberry cake mix
1 (12 ounce) can diet 7-Up
1 egg
1 (1/4 ounce) box sugar-free strawberry gelatin
1 cup boiling water
1 (1/4 ounce) box sugar-free instant vanilla pudding mix
1 cup skim milk
1 (8 ounce) container fat-free cool whip (thawed)
3 cups fresh strawberries

Steps:

  • Mix the cake mix, soda, & egg until smooth (as directed on box).
  • Spray a 9X13 Pan with PAM. Pour cake in pan and bake as directed.
  • Meanwhile mix the boiling water and jello together set aside and let cool (DO NOT let set up!).
  • Mix the pudding mix & milk let set in fridge 10 min until thick. Fold in the cool whip.
  • When Cake is done let cool. Poke holes in cake pour over jello mixture.
  • Ice with pudding/cool whip mixture.
  • Thinly slice strawberries layer on top.
  • This is 3 pts per servings on Weight Watchers for a huge serving.

1 (8 inch) pie crusts, baked
1 cup whipping cream
3 ounces cream cheese
1/2 cup powdered sugar
1/2 teaspoon vanilla
1 pinch salt
1 pint strawberry, divided
1/2 cup sugar
2 1/2 tablespoons cornstarch
1 pinch salt
1/3 cup water
1 teaspoon lemon juice
1/4 teaspoon red food coloring

Steps:

  • STRAWBERRY TOPPING.
  • Wash and halve strawberries.
  • Whisk together the sugar, cornstarch and salt in a medium saucepan.
  • Add the water, lemon juice and red food coloring. Cook over medium high heat until the mixture starts to thicken, stirring frequently.
  • Add half of the strawberries and cook until mixture is thickened.
  • Add remaining strawberries and remove from heat.
  • Cool completely before putting on top of cream filling in pie shell.
  • CREAM FILLING.
  • While strawberry filling cools, whip the whipping cream.
  • In separate bowl, beat together the cream cheese, powdered sugar, vanilla and salt.
  • Fold in the whipped cream and spread in the bottom of the cooled pie shell.
  • Once the strawberry filling has cooled, gently put it on top of the cream filling.

My personal favorite dessert. It's the best when made in the summer from strawberries freshly picked or bought at farmer's market. If you're diabetic or want to lighten the recipe up just substitute the sugar for 1 1/2 times the amount in Splenda.

1 prebaked 9-inch deep pie shell
4 cups strawberries, about 1 quart
1 cup cool water
1 cup sugar
2 1/2 tablespoons cornstarch
3 tablespoons strawberry Jell-O gelatin dessert

Steps:

  • Bake 9" pie shell according to it's directions and allow to cool.
  • Clean and cut strawberries. Pour into pie shell.
  • On the stovetop, cook the water, sugar (or Splenda), and cornstarch until thick. Cornstarch will lump as it heats and thickens so be attentive with a whisk. Add strawberry jello mix (the powder, not pre-made jello) and combine thoroughly. Allow to cool but not gel.
  • Pour jello mixture over strawberries and refrigerate until fully gelled.
  • Personally, I like it best if you pour the jello mixture over strawberries and allow to gel without chilling the strawberries. I think it takes away from the flavor when the berries get too cold.
