MAPLE-WALNUT GRANOLA
A friend brought this out for our kids to snack on while we chatted but I could not stop eating it by handfuls myself. I like the simplicity of it.

Steps:
- Heat oven to 325 degrees.
- Combine oats, walnuts, cinnamon, nutmeg, and salt together in a large bowl.
- In a separate bowl,mix maple syrup, vanilla, and oil.
- Pour syrup mixture over oat mixture and combine until all ingredients are well incorporated.
- Spread mixture onto parchment paper lined baking sheet and bake 15 minutes.
- Stir and return to the oven 10 minutes longer.
- Remove from oven and allow to cool completely.
- Granola may be stored up to 2 weeks in an airtight container.
MARVELOUS MAPLE WALNUT GRANOLA
Aw man...this stuff is so good! You gotta try it! Full of sweet, crunchy, wholesome flavor. I love eating it for breakfast with milk and fresh fruit. And it's also great with yogurt, ice cream, sprinkled on muffins, pancakes, cobblers. I've made an awful lot of granola in my time, and this is one of the best combos I have ever come up with. You can add dried fruit if you want, too, but I prefer to just make it plain and add fruit as I use it. What I love about this method is that you mix everything in the dish, rather than messing with a bunch of saucepans and bowls. Super simple and flexible, and soooo yummy!

CINNAMON WALNUT GRANOLA
Got this from a nutritionist friend of mine. It has flax seed, and walnuts are good for you - the only nut that has omega 3's. Sometimes I'll also add a cup of sunflower seeds. My daughter loves it and a 8 yo friend was over and tried it. His comment: "This is tasty!" I gave the recipe to his mom and she made it for a school function and it was a hit! I use rolled oats, but you could use quick oats too. I use this on top of fruit and yogurt for a healthy breakfast.

Steps:
- Preheat oven to 275°F In big bowl, combine oats, raisins, nuts and flaxseed.
- In microwavable bowl, blend together brown sugar, oil, honey and cinnamon.
- Cook on high in microwave until mixture starts bubbling. Remove, add vanilla and stir.
- Pour over oat mixture and mix well.
- Thinly spread on baking sheet(s). Bake for 15 minutes.
- Stir, return to oven for addt'l 15 minutes or until oats are toasted.
- Cool thoroughly. Store in airtight container.
- I keep in fridge if not eaten right away. You could also pack into a pretty container and give as a Christmas gift.

CRANBERRY MAPLE WALNUT GRANOLA
I made this for holiday gifts and to have on hand for a healthier holiday snack, it is a nice way to lighten up granola using egg whites. I found the recipe in a recent 11/07 Bon Appetit Magazine and was pleasantly surprised to see the kids eating it by the handful:)

Steps:
- Preheat 325 degrees.
- position rack in bottom third of oven.
- Spray a large jelly roll pan with non stick cooking spray.
- Stir 1/2 cup sugar and syrup in heavy small saucepan over low heat until sugar dissolves,occasionlly brush down sides with wet pasty brush.
- Pour into large bowl,cool to luke warm.
- Whisk in egg whites, extracts and spices.
- Add oats,nuts and remaining quarter cup of sugar,mix well.
- Spread mix in even layer on jelly roll.
- Bake 35 minutes.
- Using spatula turn granola over-bottom will be browned.
- Bake 10 minutes.
- Sprinkle cranberries over and continue to bake 10 more minutes or till dry.
- Cool completely in pan.
- Enjoy.
CRUNCHY MAPLE WALNUT GRANOLA WITH DATES
This is a great granola recipe from Fine Cooking Magazine (Dec. 2005) for those who like big clusters. The chunks of tasty oats and nuts can be eaten easily out of hand and stay crisp in milk, too. If you want a lighter cereal, substitute some plain puffed cereal (like rice or millet) for some of the oats. You can use other dried fruit, like dried apricots and nut oils rather than canola. Stored in an airtight container, this granola keeps well for a week (after that, it loses some crunch and the dates begin to harden). Yields 11 to 12 cups.

- Position racks in the upper and lower thirds of the oven and heat the oven to 300°F Spray two rimmed baking sheets with vegetable oil spray. In a large bowl, mix the oats, walnuts, whole-wheat flour, dry milk powder, and salt. In a medium bowl, combine the maple syrup, oil, and vanilla; stir well. Add the maple syrup mixture to the oats and mix to combine.
- Divide the mixture between the two oiled baking sheets, distributing it in 1- to 2-inch clumps. Bake for 20 minutes and then flip the clusters with a metal spatula and switch the positions of the pans in the oven. Bake for 20 minutes, flip the granola again, and bake until the granola has a very fragrant, toasty aroma and the nuts look well toasted, about another 15 minutes. (Watch carefully to ensure the granola doesn't burn.).
- Let cool completely in the pans. Break up any large clumps. When completely cool and dry, mix in the dates.

- Preheat the oven to 375°. Butter a roasting pan. In a mini food processor, pulse the butter, flour, baking soda, brown sugar, salt, cinnamon and nutmeg until crumbly. Transfer to a large bowl.
