ITALIAN CHICKEN AND VEGETABLE SKILLET
Steps:
- 1. Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 5 to 6 minutes or until golden brown.
- 2. Stir in vegetables, Italian seasoning and seasoned salt. Cook and stir 5 minutes or until vegetables are tender-crisp. Add tomatoes; cook and stir 1 to 2 minutes or until tomatoes are slightly softened and chicken is cooked through.

- Bring a large pot of water to a boil and add salt. Cook the pasta in the boiling water according to the package directions; do not overcook. Drain and rinse in cold water to cool. Toss in 1 tablespoon of the olive oil and set aside.
- Put the chicken pieces in a large pot or Dutch oven and cover in the chicken broth. Bring to a boil, lower to a simmer and cook, covered, for 45 to 50 minutes.
- Remove the chicken pieces from the pot, shred the meat and set aside. Discard the bones and skin. Skim the fat from the stock, then strain the stock and set aside.
- In a new pot, add the remaining 1 tablespoon olive oil and saute the bell peppers, celery, jalapenos, onion and oregano over medium heat until the vegetables are tender and golden brown, about 10 minutes. Add the tomatoes with their liquid and the reserved chicken stock and shredded chicken. Bring to a boil, then reduce to a simmer. Add the cooked pasta and cream and stir to combine. Turn off the heat.
- Serve with lots of Parmesan on the top--the more the better--and crusty Italian bread is good too.

- Place ground beef in a large soup pot. Cook over medium heat until evenly browned. Drain excess fat. Stir in onion, celery, carrots, garlic, chopped tomatoes, tomato sauce, beans, water and bouillon. Season with parsley, oregano and basil. Simmer for 20 minutes.
- Stir in cabbage, corn, green beans and pasta. Bring to a boil, then reduce heat. Simmer until vegetables are tender and pasta is al dente. Add more water if needed.

- Place chicken, onion, celery, salt, basil, and pepper in a 10 quart stock pot. Fill stock pot with water until ingredients are fully covered and bring to a boil. Let simmer for 1 and 1/2 hours or until chicken is tender.
- Remove chicken from pot with slotted spoon and set aside for later.
- Add carrots, squash, zucchini, mushrooms, red pepper, tortellini, chicken soup base and uncooked noodles to stock pot and increase temperature to medium heat.
- While noodles and vegetables are cooking, tear chicken apart from bones. Cut up into pieces and add to soup in stock pot. Be sure to add additional water if ingredients are not fully covered. Bring to a boil, then reduce to a simmer for about 10 minutes or just until noodles are cooked. Enjoy

Steps:
- Heat oil in a large saucepan over medium heat. Add leek and garlic. Cook, stirring, for 2 minutes or until soft but not coloured.
- Add carrot, celery, zucchini and swede. Cook for 2 minutes.
- Stir in soup mix, stock, chicken and 1 cup cold water. Increase heat to high. Bring to the boil.
- Reduce heat to low. Simmer, partially covered, stirring occasionally, for 1 hour or until soup mix and vegetables are tender add a little more water/stock if required.
- Remove chicken legs from soup. Allow to cool slightly. Remove meat from bones.
- Roughly chop chicken meat and add to soup.
- Season with salt and pepper.
- Ladle soup into bowls. Serve.

- In a large stock pot on high heat, Sauté the chicken, onions, and celery in olive oil until chicken if browned and onions are translucent, (if using the crock-pot, uses a skillet for this step).
- For Stove top: Add remaining ingredients and bring to a boil.
- Once the soup comes to a medium boil reduce heat to a simmer.
- Soup should just gently bubble from here on out.
- After 30 minute do a taste test of the broth add additional spices to your taste.
- simmer for an additional hour then test vegetables for doneness.
- For Crock-Pot: Transfer ingredients from skillet and add remaining ingredients.
- Set crockpot on high for two hours then reduce to low.
- After 2 hours do a taste test of the broth add additional spices to your taste.
- Let simmer for an additional 4 hours.
- (Warning if you have a high powered crock-pot and the soup begins to boil to hard reduce the setting to warm if it has one, otherwise unplug your crock-pot for awhile).
HEALTHY, HEARTY ITALIAN DINNER
Flexible quantities and the ability to use pre-prepared, canned, and frozen ingredients make this flavorful, veggie-filled meal go together quickly and easily. Chop up an onion, mince a garlic clove, open a few bags, jars, and cans and it will be simmering on the back of the stove in no time. Yet it tastes as if you'd been cooking all day. Meatless as written, it's suitable for Lent, but there is no reason not to add whatever cooked meat you have on hand. Look at the optional ingredients suggestions for additional possibilities to use any other vegetables you happen to have on hand. Additionally, I've included a recipe for preparing polenta to go under the sauce, but you could put it on pasta if you prefer after the contest. Note: Low fat if you use restraint with the olive oil. Note: Can be made in the crockpot if you prefer.

- Brown onions and baby carrots in a little olive oil over medium heat.
- Stir in other vegetables and toss well.
- Add spaghetti sauce, stock, vermouth, and herbs. Stir well and bring to a boil.
- Simmer until carrots are fully cooked and flavors are blended - about 30 minutes though it can hold as long as needed. Taste and adjust seasonings if necessary.
- If the sauce is too thick for your tastes add additional stock, tomato juice, or V8.
- If the sauce is too thin for your tastes add tomato paste or simmer, uncovered, until it thickens.
- To prepare the polenta, first slice about 1/2 to 3/4 inches thick.
- Lightly grease a griddle with olive oil. Heat it on medium to medium-high heat.
- Brush the polenta slices with olive oil as well.
- Brown both sides of the polenta on the hot griddle then sprinkle lightly with garlic powder and Italian seasoning.
- Serve sauce over polenta and top with Parmesan.
- If you like, you can round out the meal with a green salad and garlic bread.
- Note: Feel free to add cooked chicken, browned ground beef, browned sausage, cooked pork, or whatever leftover meat you have if you don't want a meatless dish.
- Note: If you are adding leftover vegetables that have already been cooked add them at the last 10 minutes so they don't overcook.
- Note: This can be made in the crockpot but may require you to reduce the amount of stock. Brown onions and carrots first for the best flavor.

- In a large soup pot, combine chicken, chicken broth, parsley, carrot, celery, onion, roasted garlic, and white pepper. Cook on low for 2 hours. Refrigerate overnight or until fat rises to the top and solidifies. Remove fat and discard. Strain broth, reserving chicken and discard solids. In a large soup pot, combine strained broth, diced tomatoes, tomato paste, Rotel, bay leaf, basil, oregano, salt, garlic, sherry and mushrooms. Simmer 45 minutes.
