- In a medium bowl, combine calamari, garlic, chile flakes, parsley, 1/3 cup oil, 2 tbsp. lemon juice, and 1/2 tsp. salt. Chill, stirring often, 1 to 5 hours.
- Pour calamari and marinade into a colander over a bowl. Brush marinade over cut sides of bread; grill on each side over high heat (450° to 550°) until grill marks appear, 3 to 5 minutes. Cut into slices.
- Grill calamari tubes, turning once, just until firm, 3 minutes. Meanwhile, using tongs, drop tentacles in clumps onto grill just to firm up, then spread out to cook evenly, 4 minutes total. Put calamari in a dish and drizzle with remaining oil, lemon juice, and salt. Serve with bread.

CALAMARI MARINARA
Calamari has an unfair reputation for being tricky to work with and that it's rubbery when cooked. Here's the secret: cook it in 45 seconds or 45 minutes--very quickly or a long slow simmer. For this marinara dish, I use the long simmer method.

- Drizzle olive oil into saucepan (not over heat). Add onions, Serrano pepper, garlic, anchovy filet, red pepper flakes, and salt. Place pot over medium-high heat. When onions start to sizzle after a minute or so, stir and cook until onions and garlic just start to turn golden, 3 or 4 minutes. Stir in wine.
- Cook until wine is reduced by about half, 3 to 5 minutes. Add clam juice, tomatoes, and oregano. Bring to a simmer over medium-high heat. When sauce begins to bubble, reduce heat to medium-low. Simmer gently for about 15 minutes.
- Transfer calamari to sauce pot; stir gently. Simmer until calamari are tender, 35 to 45 minutes. Remove from heat. Stir in parsley.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain.
- Stir some sauce into the hot, drained pasta. Serve in warm bowls topped with more marinara sauce and grated cheese.

GRILLED SQUID (CALAMARI)

- Gather the ingredients. Put the skewers in a container, cover with water, and soak for at least 30 minutes while you prepare the squid.
- Prepare a high (500 F to 600 F) gas or charcoal grill fire. Rinse the squid under cold running water and pat dry with paper towels.
- Cut the squid bodies lengthwise down one side and open flat.
- Cut the tentacles in half if too large.
- In a bowl, combine the olive oil, lemon juice, salt, and pepper.
- Add the squid bodies and tentacles to the bowl, tossing to evenly coat.
- Thread the squid bodies lengthwise onto skewers so they lie flat.
- Thread the tentacles onto separate skewers.
- Grill, turning once, just until opaque, about 2 minutes.
- Remove the squid from skewers and pile them on a platter.
- Sprinkle with parsley and serve with lemon wedges.

- Combine the lemon grass, chili flakes, lemon and lime juices, ginger and 1 teaspoon of the olive oil in a large glass or ceramic bowl. Pour half of this vinaigrette into a small bowl. Refrigerate. Blanch the squid in boiling salt water for 1 minute. Drain. Rinse under cold running water until chilled and add to the vinaigrette. Cover and refrigerate overnight.
- Drain the squid. Set aside. Pour the reserved vinaigrette into a large glass or ceramic bowl. Whisk in the remaining olive oil. Season to taste with salt and pepper. Add the squid, peppers, scallions and coriander. Toss to combine. Divide the lettuce between 4 plates. Top with the salad and serve immediately.

- Place the calamari in a bowl with the buttermilk and stir to combine.
- Cover the bowl and refrigerate for at least 30 minutes.
- Heat 3-4 inches of oil in a large deep pot to 375 degrees F.
- Place the flour, salt, paprika, pepper and garlic powder in a medium bowl; stir to combine.
- Remove each piece of squid from the buttermilk and dredge in the flour. Repeat the process until all pieces are coated.
- Place 8-10 pieces of squid in the oil. Cook for 2-3 minutes or until golden brown.
- Remove the squid from the oil and drain on paper towels. Repeat the process with the remaining squid.
- Sprinkle additional salt over the squid if desired, and sprinkle with chopped parsley. Serve immediately.

HERB-MARINATED SQUID
Steps:
- Bring 1 1/2 cups water and 3 tablespoons oil to simmer in heavy large skillet over medium heat. Add squid and onion. Cover and simmer 15 minutes. Add 1/4 cup minced parsley and rosemary. Cover and simmer until squid is tender, about 10 minutes. Transfer mixture to large jar. Add vinegar, garlic, peppercorns and bay leaf. Cover and refrigerate overnight. (Can be prepared 3 days ahead. Keep refrigerated.)
- Preheat broiler. Brush baguette slices with 2 tablespoons oil. Broil until golden, watching closely to avoid burning. Drain squid mixture. Discard rosemary sprigs, garlic and bay leaf. Transfer squid mixture to medium bowl. Season to taste with salt and pepper. Drizzle with additional olive oil, if desired, and sprinkle with parsley. Serve with toasted baguette slices.
FRESH SICILIAN MARINATED CALAMARI SALAD
Steps:
- Wash Squid well and cut Body into 1/2 inch slices (rings) and depending on the size of the squid halve tentacles lengthwise, if on the small side leave whole.
- In a large Stock Pot add water with salt and bring to a boil. Place Squid in pot and cook for 1 to 2 minutes until the squid is firm, do not cook too much or it will come rubbery.
- Put the squid in ice water to prevent further cooking.
- Drain the water and pat the squid dry

- Gather the ingredients.
- Slice the calamari bodies crosswise into ½-inch rings.
- Combine the oil, garlic, oregano, mint, lemon juice, salt and pepper in a large bowl.
- Add the calamari slices and tentacles to the bowl and toss them to coat well. Cover the bowl with plastic wrap and refrigerate for about 30 minutes-you can heat the grill while you're waiting.
- Drain the calamari in a colander, then lift each piece out separately to allow any remaining liquid to drip off.

- Clean squid:.
- Hold squid with one hand, with the other hand hold head and pull gently, head and inside of body will come away in one compact piece.
- Cut tentacles from head.
- Remove bone found at open end of squid (it looks like a long thin piece of plastic).
- Clean squid under cold running water
- Rub off brown outer skin.
- Cut squid into 5mm rings.
- Drop rings into rapidly boiling water, reduce heat, simmer 10-15 minutes or until squid is tender.
- Drain.
- Combine lemon juice and oil.
- Add squid, cover, refrigerate overnight.
- Next day, add crushed garlic and parsley to marinade, mix well, let stand 2 hours or longer in marinade.
- Serve in the marinade.

- Rinse the squid under cold running water and check for any cartilage and any internal fatty tissue masses. Pat dry and set aside.
- In a large bowl, whisk together all of the remaining ingredients. Add the calamari and toss to coat in the marinade. Set the bowl aside for up to 30 minutes.
- Preheat your GF grill to high with the top closed. Place the drip tray at the end of the grill.
- Grill the calamari with the top closed for 1 to 1-1/2 minutes until just translucent and curling up. You may have to do this in 2 batches.
- Remove the cooked calamari to a cutting board and slice into rings. Serve with saffron infused rice, grilled veggies, and lemon wedges. (A rice recipe follows).

- 1. To make the marinade, whisk all the ingredients together in a large bowl. Add the squid, cover, and let marinate in the refrigerator for 3 to 4 hours.
- 2. Prepare a hot fire in a grill. Oil a perforated grill rack or a cast-iron grill griddle and preheat on the grill.

MARINATED CALAMARI
This calamari is so juicy and tender. The squid is tenderised by overnight soaking in milk. Tossed in flour and deep fried. Serve with a squeeze of lemon and a salad on the side. Any quantities of squid can be used for this recipe- just adjust ingredient amounts to suit.

- Slcie the squid into rings and place in a small mixing bowl.
- Cover the squid with milk (use more or less as required. Add garlic and season with salt and pepper. Cover and refrigerate for 24 hours (or at least overnight).
- Drain the calamari and discard the milk. Pat dry with kitchen paper.
- Toss calamari in flour. I use a large plastic bag to do this.
- Deep fry until golden. Serve hot.
- Do not overcook the calamari as it may toughen.
- NOTE: Cooking time does not include overnight marination time.

- Clean the squid by carefully pulling the tentacles until the innards slip out of the body. Use your fingers to reach inside the tube and remove any remaining parts. Cut the tentacles from the head just below the eyes. Remove the beak from the center of the tentacles. Discard everything except the body and tentacles.
