MARGARITA

Steps:

• Rub rim of cocktail glass with rind of lemon or lime, dip rim in salt.
• Shake ingredients with ice and strain into the salt-rimmed glass.

MARGRANITA

Steps:

• Boil 2 1/2 cups water and 1 cup sugar, stirring to dissolve the sugar, then remove from the heat and add 2/3 cup lime juice, 1/3 cup tequila, 5 tablespoons triple sec and 1/4 teaspoon salt. Let cool, then stir in 2 teaspoons grated lime zest and pour into a small glass baking dish; cover and freeze for about 4 hours before scraping with a fork. For the full effect, dip the rims of the serving bowls in equal parts sugar and kosher salt, and a pinch of lime zest. Garnish with lime slices.

MARGARITA

Steps:

• Fill a cocktail shaker with ice. Add tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Place Lime-salt-sugar on a plate. Press the rim of a chilled rocks or wine glass into the mixture to rim the edge. Strain margarita into the glass.
• Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
• Blend together lime, salt and sugar in a small blender or mini food chopper.

MARGARITA COOKIES

Steps:

• Preheat the oven to 375 degrees F (190 degrees C). Line 2 cookie sheets with baking parchment.
• Put the butter, sugar, and lime rind into a bowl and mix well with a wooden spoon, then beat in the egg yolk and orange liqueur or orange extract.
• Sift together the flour and a pinch of salt into the mixture and stir until thoroughly combined.
• Scoop up tablespoons of the dough and put them on the prepared cookie sheets, then flatten gently. Bake for 10-15 minutes, until light golden brown.
• Let cool on the cookie sheets for 5-10 minutes, then using a metal spatula, carefully transfer to wire racks to cool completely.
• Sift the confectioners' sugar into a bowl and stir in sufficient tequila to give the mixture the consistency of thick cream.
• With the cookies still on the racks, drizzle the frosting over them with a teaspoon. Let set.

THE REAL MARGARITA

Steps:

• Rim your marg glass with a lime wedge, then dip in salt.Add all ingredients in a shaker, or a mason jar with lid will work, and shake till blended. Pour into glass and garnish with lime wedge.
• If you like, you can chill your glass in the freezer for 10 minutes, or add a few cubes of ice to the rest of ingredients while shaking, being sure to strain it when you pour into glass. Also, if the marg is to strong for ya, bump it down to 1 shot of tequila.

THE PERFECT MARGARITA

Steps:

• Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
• Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

MARGARITA PORK TENDERLOIN

Steps:

• Combine the first 10 ingredients in a shallow dish or large zip-lock freezer bag.
• Slice pork diagonally into 1-inch thick slices; add to tequila mixture.
• Cover or seal and chill for 1 hour, turning occasionally.
• Remove pork from marinade and throw away marinade.
• Grill, covered with grill lide, over high heat for 3-4 minutes on each side or until done.

MARGARITA GRANITA

Steps:

• Mix all ingredients. Pour into ice cream maker and follow directions for ice cream.
• For Strawberry Margarita variation: Add 1/2 cup pureed strawberries.
