THYME-ROASTED MARCONA ALMONDS

Steps:
- Preheat the oven to 350 degrees F.
- Place the almonds, olive oil, thyme and kosher salt on a sheet pan and toss them together. Roast the almonds for 10 to 15 minutes, turning them every 5 minutes with a metal spatula, until they're lightly browned. Watch them carefully; they go from underbaked to burnt very quickly.
- Sprinkle with fleur de sel, toss and set aside to cool. Serve warm or at room temperature. (Store the cooled nuts in a sealed container at room temperature for a week or two.)
COCOA BLACKENED STEAK WITH MARCONA ALMOND ROMESCO

- For the leeks: Preheat the oven to 475 degrees F. Line a baking sheet with a wire rack.
- Put the whole leeks on an unlined sheet tray and bake, flipping halfway through, until completely charred, about 20 minutes. Allow to cool to the touch.
- For the cocoa blackened steak: Combine the smoked paprika, cocoa powder, onion powder, cumin, garlic powder, smoked salt, sugar and coffee in a bowl. Divide the mixture between the each of the rib eyes and let sit for 15 minutes.
- For the leeks: Once the leeks are cool to the touch, remove the outer layers, revealing the soft leeks inside. Finely chop the leeks and add to a bowl. Add the cocoa nibs, olive oil and red wine vinegar and season with the smoked sea salt. Taste and adjust the seasoning.
- For the Marcona almond romesco: Blend the peppers, olive oil, white chocolate, tomatoes, sherry vinegar, smoked paprika, salt and garlic in a blender until smooth. Add the almonds to a food processor and pour over the blended sauce. Pulse until coarse, not smooth.
- Heat a 14-inch cast-iron skillet over medium-high heat. Add 2 tablespoons cooking oil and the steaks and cook on both sides until evenly charred, about 7 minutes per side, searing in batches if needed. Remove from the skillet and put on the rack on the sheet tray. Let rest for 10 minutes before slicing.
- Serve the steak alongside the romesco and the leek condiment.

MARCONA ALMONDS/ CALIFORNIA STYLE
With the high price of Marcona almonds imported from Spain I was happy to find a recipe that produces a very close facsimile at a fraction of the cost, but uses California almonds. This was adapted from an article published in the San Francisco Chronicle. Hope you like them.

- .Preheat oven to 300°F.
- Boil almonds in water for about 30 seconds.
- Drain the almonds in a sieve, then place them in a clean dish towel.
- Rub them to remove the skins.
- Place the almonds on a rimmed baking sheet.
- Add olive oil and coat them evenly.
- Sprinkle with salt.
- Bake the almonds 30 to 40 minutes, stirring a couple of times so that they brown evenly.
- When done, spread on a cool surface to let cool.
- Add more salt if needed.
- Store in an airtight container.

KALE SALAD WITH MARCONA ALMONDS AND SHERRY VINAIGRETTE

- For the sherry vinaigrette: Peel the oranges with a sharp knife. Remove the segments by cutting between the white membrane of each segment. Squeeze out the 2 tablespoons of juice and reserve. Combine the olive oil, vinegar, juice and mustard together. Season with salt and pepper and whisk vigorously. Finish with a squeeze of lemon juice.
- For the kale salad: Remove the tough stems from the kale and discard. Finely slice the leaves into thin ribbons and toss together with the cranberries and vinaigrette. Serve on a platter scattered with orange segments and sprinkled with the almonds.

- Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 450°F.
- Spray 2 large rimmed baking sheets with nonstick spray. Combine green beans, onion wedges, and marjoram in large bowl. Drizzle with oil, then sprinkle with coarse kosher salt and pepper. Toss; divide between prepared sheets.
- Roast vegetables 15 minutes. Reverse sheets. Continue to roast until beans are tender and beginning to brown in spots, about 10 minutes longer.
- Transfer vegetables to bowl. Add lime juice, grated lime peel, and half of chopped almonds. Toss to coat; season with salt and pepper. Sprinkle with remaining almonds.

- Spread almonds on a baking sheet and bake for about 8 minutes, stirring once or twice until just beginning to color.
- Transfer to a plate and let cool 10 minute.
- Line a plate with paper towels and set aside.
- Heat the olive oil over medium heat and fry the almonds for 2-3 minute.
- Remove with a slotted spoon and place on paper towel covered plate to drain and cool.

- Preheat oven to 350°F
- Line a large baking sheet with parchment.
- Whisk together egg white, orange juice, zest, salt, cumin, and paprika in a bowl, then add almonds and toss to coat.
- Spread almonds evenly on baking sheet for 10 minutes. Remove from oven and mix the nuts around, return to oven for another 10 minutes or until golden.
- Transfer nuts on parchment to a rack and cool completely (almonds will crisp as they cool).
- Loosen nuts from parchment with a spatula and transfer to a bowl.
- Note: These almonds can be made several days in advance and kept in an airtight container at room temperature.
