MAPLE PECAN RICE PUDDING
Steps:
- In a small bowl, combine the raisins and bourbon. Set aside.
- Combine the rice and salt with 1 1/2 cups water in a medium heavy-bottomed stainless steel saucepan. Bring it to a boil, stir once, and simmer, covered, on the lowest heat for 8 to 9 minutes, until most of the water is absorbed. (If your stove is very hot, pull the pan halfway off the burner.)
- Stir in 4 cups of half-and-half and the sugar and bring to a boil. Simmer uncovered for 25 to 30 minutes, until the rice is very soft and the pudding is thick. Stir often, particularly toward the end. Slowly stir in the beaten egg and continue to cook for 1 minute. Off the heat, add the remaining cup of half-and-half, the vanilla, maple syrup, maple flavoring, and the raisins with any remaining bourbon. Stir well. Pour into a bowl, and place a piece of plastic wrap directly on top of the pudding to prevent a skin from forming. Cool slightly, add the pecans, and serve warm or chilled. Drizzle each serving with extra maple syrup, if desired.
BAKED RAISIN PUDDING
This is an old-fashioned raisin pudding, with brown sugar and butter, baked in a casserole dish.

Steps:
- Gather the ingredients.
- Combine the brown sugar, water, and butter in a saucepan. Boil for 5 minutes.
- Pour the sugar and butter syrup into a buttered 2-quart casserole dish.
- In a separate bowl, combine the flour, sugar, salt, baking powder, raisins, milk, and vanilla; blend thoroughly and gently until there are no lumps. But don't overmix.
- Pour the batter over the hot mixture in the casserole dish.
- Bake the raisin pudding for 25 to 30 minutes at 350 F. Allow the pudding to cool off slightly before slicing.
- Enjoy!

HALF-HOUR PUDDING CAKE (MONTREAL PUDDING)
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter one 2 quart casserole dish.
- Sift the flour, white sugar and baking powder together. Add the raisins and stir in the milk. Spoon batter into the prepared dish.
- Combine the brown sugar, boiling water, butter and vanilla. Gently pour over the batter. Do not stir.
- Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve warm.

- Combine the rice and water in a saucepan over medium heat. Bring to a boil, and let simmer over low heat for 20 minutes, or until all of the water has been absorbed.
- Stir in 1 3/4 cups of the milk, sugar and maple flavoring, bring to a boil, and let simmer over medium heat until thick and creamy, about 15 minutes. Stir in the remaining milk, nutmeg, cinnamon, cloves and butter. Cook stirring over low heat for another 5 minutes. Pour into a casserole dish, or serving bowls, and let stand for 5 minutes before serving. This can be served cold also.

MAPLE-LEMON-RAISIN RICE PUDDING

- Combine water and rice in heavy medium saucepan. Bring to simmer. Reduce heat to low. Cover and cook until rice is tender and liquid is absorbed, about 20 minutes. Uncover and cool.
- Position rack in center of oven; preheat to 350°F. Butter 6- to 8-cup soufflé dish. Place in roasting pan. Whisk milk and next 6 ingredients in large bowl to blend. Stir in raisins and 1 1/2 cups cooked rice (reserve any remaining rice for another use). Pour into dish. Sprinkle nutmeg over. Add enough hot water to roasting pan to come halfway up sides of dish. Bake until pudding is set in center and brown around edges, about 1 hour 5 minutes.
- Remove dish from water. Cool pudding at least 15 minutes. Spoon into bowls and serve warm or at room temperature with whipped cream.
APPLE, RUM AND RAISIN BREAD PUDDING
A delicious bread pudding served warm or cold with custard sauce, whipped cream, or recipe #9347. Also good for breakfast with maple syrup. I used recipe #78579 to prepare the baking dish and added more raisins. From Foodland Ontario booklet.

- In a large bowl, combine milk, eggs, vanilla and 1/2 cup of the brown sugar.
- Stir in bread cubes; let stand for at least 30 minutes; stirring occasionally.
- In a small bowl, combine raisins and rum or apple juice. Set aside.
- In another bowl, toss together apples, cinnamon and remaining brown sugar.
- Add raisin and apple mixtures to the softened bread, mixing well.
- Spread evenly in a greased 8"x8"x2" baking pan.
- Drizzle with the melted butter.
- Bake in a 375 degree Fahrenheit oven for 40 to 50 minutes or until golden brown and apples are tender.
- Serve warm or cold.
CREAMY MAPLE BREAD PUDDING
This old-fashioned bread pudding,with the essence of maple, is the perfect end to a simple supper. Just about any kind of bread will do, but brioche, panettone, croissants or good white bread, along with anything nutty and/or grainy, is especially good.

- Preheat your oven to 350°F and grease a 1 1/2-quart casserole or baking dish.
- Place the bread cubes into the prepared pan. Whisk the eggs, milk, cream, syrup, sugar, flavoring, nutmeg, and salt together. Pour over the bread cubes and let sit for 15 minutes to absorb the liquid. Press the cubes down into the liquid if the edges are dry.
- Bake the pudding for 35 minutes. Remove from the oven and sprinkle with the nuts and sugar. Return to the oven and bake for an additional 15 to 20 minutes, until the pudding has puffed up and is light brown around the edges. - Mix apples and 1 cup sugar together and let stand until sugar is dissolved.
- Add eggs and mix well.
- Sift together the 1 cup flour, cinnamon, and baking soda. Stir into apple mixture.
- Add 1 cup walnuts, 3/4 cup raisins, and 1 teaspoon vanilla.
- Pour into a greased 8x8 pan and bake at 375 degrees for 40-45 minutes.
- While cake is baking, mix 1/2 cup brown sugar, 1/2 cup sugar, 1 cup water, and 2 tablespoons flour in a small saucepan.
- Cook over medium heat until slightly thick and clear.
- Add butter, 1 teaspoon vanilla, 1/2 cup walnuts, and 1/2 cup raisins and stir until butter is melted.
