MAPLE PECAN KOLACHE
Steps:
- Preheat the oven to 360 degrees F.
- Mix cream cheese and granulated sugar in a mixer. Add egg yolk and mix to combine. Pour in powdered sugar, mixing on low speed, until there is none left, then increase the speed to high and beat until well mixed. Add maple syrup, mixing, then beat until the filling is fluffy.
- Cup a piece of dough in your hand to form a crater in the center. Fill the crater with a small portion of filling. Top the kolache with pecans in a star formation and sprinkle brown sugar over the top. Place on a baking sheet. Repeat with remaining ingredients.
- Bake, flipping halfway through, for 8 minutes. Cool and serve.
CHEWY MAPLE PECAN COOKIES

- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl with a hand mixer), cream the butter and brown sugar until light and fluffy, 3 to 4 minutes. With the mixer running on low speed, add the maple syrup in a slow, steady stream and mix to combine.
- Scrape the bowl well, then add the egg and mix on medium speed until the mixture is well combined. Beat in the vanilla.
- Add the flour, baking powder and fine salt to the mixer and pulse until it starts to combine, then scrape the bowl well and mix on low speed until uniformly combined. Add the pecans and mix until evenly incorporated.
- Scoop the dough into 2 tablespoon-size rounds on the prepared baking sheets, staggering the rows and leaving at least 1 1/2 inches between each cookie to allow room to spread. Sprinkle flaky sea salt on the surface of each cookie. Transfer to the oven and bake until the cookies are lightly golden around the edges, 15 to 18 minutes. Transfer to a cooling rack to cool before serving.
MAPLE PECAN SMOOTHIE
This scrumptious vegan, gluten-free, dairy-free, soy-free, egg-free smoothie really does taste like a delectable "maple pecan pie in a glass". Those of you with nut allergies - my profound apologies. There is just no nutty equivalent! In the spirit of replicating my perfect bite of pecan pie I only used 2 tablespoons of maple syrup to keep the sugar content down. I found this was just enough to bring out the natural sweetness in the bananas and take the edge off the pecans. But feel free to sweeten the deal. The pecan milk adds that hint of a nutty pastry flavor, and the cinnamon and vanilla perfect the blend. This smoothie does every creamy bite of mum's pecan pie justice, and hits the "B spot" on days you are not inclined to bake. This smoothie is absolutely scrumptious. It is like a refreshing Summer chilled dessert in a glass. This is rich! But, I don't think I will be needing to eat humble pie. YUMMO!

MAPLE PECAN PROTEIN SHAKE
Why not make something decadent healthy? Pecans are healthy, eggs are healthy, and compared to most other sweeteners maple syrup contains a lot of minerals which are good for you, but less sugar (more liquid). Most special protein rich recipes claim egg whites only, but as a matter of fact the egg yolk is higher in protein, and research has shown that the cholesterol in eggs is NOT the problem with high blood cholesterol levels. Mostly it's the carbohydrates which elevate the cholesterol, not butter, eggs or bacon. Prep time does not include soaking time!

Steps:
- Soak dates in one cup of water for about two hours.
- Put soaking water with the dates and pecans in food processor and process until smooth. That may take 2 to 5 minutes.
- As soon as the nutmilk is smooth, add maple syrup, whey protein and egg. Continue processing until everything is smooth and creamy.
- Enjoy!
