ONE-POT RICE AND BEANS

One-Pot Rice and Beans image

Not only is rice with beans adored the world over (see: gallo pinto, khichdi, hoppin' John and Caribbean rice and peas), it even has its own Wikipedia page. This deeply flavored rendition is inspired by these comforting traditions and a desire to wash as few dishes as possible: The rice cooks with the beans and the starchy liquid they're canned in. As the two ingredients cook together, the beans disperse and glom onto the rice. For an extra kick, sauté chopped jalapeño with the onions, or add 1/4 cup salsa with the stock.

Time 30m

Yield 4 servings

Number Of Ingredients 7

2 tablespoons olive oil
1 yellow onion, chopped (about 1 ¼ cups)
1 3/4 cups chicken or vegetable stock or water
1 teaspoon salt
1 cup long-grain rice
1 (15.5-ounce) can black or pinto beans
Lime wedges or cilantro leaves, for garnish (optional)

Steps:

  • In a large saucepan or Dutch oven with a tight-fitting lid, warm the olive oil over medium heat. Add onion and sauté until translucent, about 3 minutes. Add the stock, cover and bring to a boil.
  • Add the salt, rice and beans (including the liquid). Stir just to combine, then cover.
  • Turn the heat down as low as it will go, then let simmer, undisturbed, for 18 to 20 minutes. Remove from heat and let sit for 4 minutes, then fluff with a fork.
  • Season to taste with salt and pepper, then garnish with lime or cilantro as you wish.

EASY ONE POT LENTILS AND RICE

Easy One Pot Lentils and Rice image

I made this for dinner tonight, and the whole family loved it. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. I hope you enjoy this as much as we did!

Provided by cicict1976

Categories     One Dish Meal

Time 45m

Yield 6-8 serving(s)

Number Of Ingredients 9

1 cup dry green lentils
6 1/2 cups water
4 -5 garlic cloves
1 -2 bay leaf
1/2 tablespoon cumin seed
1 pinch cinnamon
2 cups basmati rice
1/2-1 tablespoon kosher salt
1 tablespoon olive oil

Steps:

  • Cover the lentils with the water.
  • Peel and crush the garlic cloves lightly with the back of a knife. Leave the cloves whole, so that they flavor the dish but can be removed if desired. (I leave them out of the kids' portions, and give them to my DH and myself).
  • Add garlic to the pot, along with the bay leaves, cumin seeds and cinnamon. (DO NOT add salt at this point, as lentils will not cook properly).
  • Bring to a boil. Cook at a boil until the lentils are just tender. This should take about 25 minutes, but may take longer dependig on the age of your lentils.
  • Add the rice, salt and olive oil, and bring back to a boil.
  • Stir, cover pot, reduce heat to low, and cook for 15 minutes.
  • Check to make sure the rice is done, adjust seasonings, and serve. If there is still too much liquid in the pan, just let it sit uncovered for a few minutes.
  • Enjoy!

BLACK BEANS AND RICE

Black Beans and Rice image

This Black Beans and Rice is a gluten-free dish made with sausage, bacon, and vegetables. It's a complete, one-pot meal bursting with flavor. It comes with two cooking methods to choose from: pressure cooker and stovetop methods.

Provided by Denise Browning

Categories     Entree

Number Of Ingredients 15

5 strips smoked bacon (chopped)
14 oz kielbasa sausage (sliced)
1 white onion (small diced)
2 bell peppers (medium diced)
5 garlic cloves (minced)
2 cups dry long-grain white rice (parboiled)
1 1/2 tsp ground cumin
1/2 tsp salt (or more if desired)
1/2 tsp ground black pepper ((or hot sauce if desired))
2 cups vegetable or chicken broth ((if cooking on the stove top, double amount of broth))
2 cups canned black beans (drained and rinsed)
1/2 cup canned corn (drained and rinsed)
2 tbsp lime juice
1/2 cup tomatoes (chopped)
2 tbsp parsley or cilantro (chopped)

Steps:

  • Pressure cooking method: Turn pressure cooker on high and let it heat up, or press the saute function and let it heat for at least 3-4 minutes.
  • Then, cook bacon for about 2-3 minutes or until enough to release the fat. Add sausage and let it cook for about 3 minutes, stirring every now and then. Add onion and bell peppers and cook for 2-3 minutes. Add garlic and cook for 1 minute. Do not let it brown!
  • Stir in rice, seasonings, and broth. Put lid on and close steam valve. Depending on your pressure cooker settings: Either cancel the saute function and press the rice function (it automatically sets the time, about 10 minutes) , or set to high pressure on manual and set for 3 minutes.
  • Let pressure release naturally. Then, remove lid and stir in beans, corn, lime juice, tomatoes, and parsley. Serve and enjoy
  • Stovetop method: Heat one large no stick pan over medium-high heat, add bacon and let it cook for about 2-3 minutes or until enough to release fat. Add sausage and cook for 3 minutes, stirring now and then.
  • Reduce heat to medium and add onion and bell peppers and cook for 2-3 minutes. Add garlic and cook for 1 minute. Do not let it brown!
  • Stir in rice, seasonings, and broth. Reduce heat to low and put lid on. Let simmer for 15-20 minutes, or until rice is tender and most of water is absorbed.
  • Fluff rice with a fork and stir in beans, corn, lime juice, tomatoes, and parsley. Serve and enjoy!

SUPER EASY BLACK BEANS & RICE

Super Easy Black Beans & Rice image

This recipe for Black Beans and Rice is super easy to make in just 15 minutes (and budget friendly!). It's also extremely versatile and can be added to tacos, burrito bowls, tofu scrambles, and more.

Provided by Christin McKamey

Categories     Main Dish     Side Dish

Time 15m

Number Of Ingredients 11

2 tablespoons unsalted vegetable broth (or you can use 1 tablespoon olive oil)
1/2 medium yellow onion (finely diced)
3 garlic cloves (minced (I use this zester))
4 ounce can mild green chiles
1 1/2 cups cooked brown rice (cooled)
1 15-ounce can black beans (rinsed and drained (or use 15 ounces, or about 1 3/4 cups, Instant Pot Chipotle Black Beans))
1/8 teaspoon ground sea salt
1/8 teaspoon freshly ground black pepper
1 tablespoon rice vinegar or distilled white vinegar
2 teaspoons fresh lime juice
2 tablespoons chopped fresh cilantro

Steps:

  • In a large non-stick saucepan, heat vegetable broth over medium-high heat. Add onion and garlic and cook until onion is soft and transparent, and garlic is fragrant.
  • Reduce heat slightly, then add the green chiles, pre-cooked rice, black beans, and salt and pepper. Heat until warm throughout, about 3-4 minutes, stirring occasionally.
  • Remove from heat, add vinegar, lime juice and cilantro. Stir to combine.
  • This dish is best served immediately, but can also be stored in the fridge in an airtight container for 2-3 days. If not eating immediately, I recommend adding a splash of lime juice to the dish before serving.
  • Eat on its own or, as a filling for a burrito or tacos, or with scrambled tofu for breakfast (see ideas for serving in the Notes section below). There are so many options!

QUICK AND EASY BLACK BEANS AND RICE

Quick and Easy Black Beans and Rice image

This Black Beans and Rice recipe uses canned beans as a shortcut and is SO quick and easy, vegan, healthy, and protein-packed, with phenomenal fresh flavor and texture. The whole family will love it!

Provided by Elizabeth Lindemann

Categories     Dinner

Time 25m

Number Of Ingredients 13

1 cup short grain white rice
2 cups water
1/2 teaspoon kosher salt
juice of one lime
2 tablespoons fresh cilantro (roughly chopped)
1 tablespoon extra-virgin olive oil
1 small onion (finely diced)
28 oz. can black beans (drained and rinsed)
1 teaspoon cumin
1/2 teaspoon kosher salt
1 cup water
juice of one lime
2 tablespoons fresh cilantro (roughly chopped)

Steps:

  • To make the rice, bring water to a boil, add rice (1 cup) and kosher salt (1/2 teaspoon), stir, and simmer until cooked (about 15-20 minutes). When done, fluff with a fork, stir in the cilantro and lime juice, and adjust seasonings if necessary.
  • While the rice is cooking, make the beans. Sauté the diced onion in the olive oil (1 tablespoon) over medium-high heat in a medium pot until softened and beginning to brown (about 2-3 minutes).
  • Add drained and rinsed black beans, cumin (1 teaspoon), kosher salt (1/2 teaspoon), and water (1 cup). Stir, bring to a boil, and simmer uncovered for about 10 minutes.
  • Turn off the heat. Use a potato masher to mash the beans a few times, thickening the mixture, but leaving most of the beans intact. If you don't have a potato masher, you can use a fork on the side of the pot.
  • Stir in the lime juice and fresh chopped cilantro (2 tablespoons) and season with more salt if necessary.
  • Serve the beans on top of the rice as a side or meal.

  • Add beans, onion, garlic, and kombu to a pot and cover with 3 inches water/vegetable broth. We went with a ratio of about 2/3 water and 1/3 vegetable broth for a little flavor.
  • Cover and bring to a boil over high heat. Then reduce to a simmer and cook uncovered for 1 hour - 1 hour 45 minutes or until the beans are tender. If during that time the beans are no longer covered in enough liquid to cook, add more water or vegetable broth to just cover.
  • Once tender, remove the onion and kombu and scoop out any excess liquid that’s making the beans soupy (some liquid is good, just scoop out any excess sitting at the top).
  • Season beans to taste at this time. We added salt, cumin powder, and chipotle peppers in adobo sauce. Then increase heat to medium/medium-high (the beans should be bubbling) and cook - stirring occasionally (uncovered) - for 10-15 more minutes. The liquid should evaporate a bit more.
