EASY HOMEMADE SPAGHETTI SAUCE RECIPE
My family's secret homemade spaghetti sauce is easy to make using a few staple ingredients you may already have on hand! Perfectly thick and packed with flavor, you'll be ditching that store bought pasta sauce!

Steps:
- In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
- Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
- Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
- If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

- Brown garlic in olive oil.
- Add wine and clams; one can drained and one not.
- Add tomatoes and oregano.
- Heat to simmer.
- Add linguini and stir to coat.
- Top with grated parmesan.

GLORIA'S FAVORITE SPAGHETTI SAUCE
Steps:
- Brown ground beef with onions & green pepper; drain.
- Mix in salt, pepper, cream of mushroom soup, tomato sauce, bay leaf, French's spaghetti sauce mix, and beef bouillon cube. Stir until well blended.
- Bring to a boil, reduce heat to simmer. Cook on top of stove about 1 hour.
- Remove from heat, Remove and discard bay leaf and put sauce on cooked spaghetti on dinner plate. Parmesan cheese is optional.

GLORIA'S SHRIMP PASTA

Steps:
- Cook Ziti as directed on package.
- In a skillet, sauté the garlic, bell pepper, and onion in olive oil until they wilt.
- Coarsely chop 1 pound of the shrimp. Leave the other half whole.
- Add the butter, reduce heat to low and add shrimp. Gradually add the oregano, fennel seeds, salt and pepper, and heavy cream.
- Simmer the sauce for exactly 4 minutes on low, just to a slow bubble. Remove from the heat.
- Cook the spaghetti; drain well and place in 1 1/2 quart casserole dish.
- Pour the shrimp sauce over, add the mozzarella and Parmesan cheeses and mix everything together. Sprinkle the chopped olives on top of the pasta.
- Place in the oven at 275F and heat to piping hot.

- My dad is a very good cook, and he taught me to respect well-spiced food. This is an adaptation of his recipe, and I always get compliments on it. The addition of aniseed (tastes like licorice) is the secret.1. Heat olive oil in heavy Dutch oven over medium-low heat. Add garlic and sauté for a few minutes-don't let it brown. Add onion, carrots, mushrooms, parsley, basil, oregano, aniseed, and red wine. Simmer for 10 minutes.2.
