Easy Cranberry Maple Glazed Ham image

This Easy Cranberry Maple Glazed Ham is a simple main dish for the holidays with an easy 3-ingredient maple glaze and fresh cranberries!

1 whole smoked ham (about 2.5 pounds (a city ham or Prague ham))
2/3 cup real maple syrup
2 teaspoons dijon mustard
1 orange ((zest and juice))
1/4 teaspoon ground cloves ((optional))
1/4 teaspoon fresh ground pepper
3/4 cup fresh cranberries

Steps:

  • Preheat your oven to 325 degrees Fahrenheit and prepare a large baking dish by spraying it with non-stick cooking spray.
  • Add the ham to the baking dish and score the top (skin side up) with a sharp knife in a diagonal cross pattern (instructions in blog post above).
  • In a medium bowl, whisk together the maple syrup, the dijon mustard, the orange zest and juice, cloves (if using), and pepper until the glaze is smooth and everything is incorporated.
  • Stir in the cranberries.
  • Pour the glaze over the ham, pressing many of the cranberries into the cracks on the top if possible.
  • Roast for 45-55 minutes, or until the internal temperature of the ham reaches 145 degrees Fahrenheit (or 63 degrees Celsius). Use a meat thermometer or an instant read meat thermometer to ensure the ham isn't over-cooked or under-cooked.
  • Baste the ham once through cooking (after 30 minutes) by drizzling the glaze from the bottom of the pan over the ham while it roasts.
  • Let the ham rest covered with aluminum foil for 5-10 minutes before slicing and serving.

1 1/2 cups water
3 1/2 tablespoons kosher salt
1 tablespoon sugar
1 tablespoon cracked black pepper
1/2 tablespoon dried thyme

6 dried allspice berries
1/2 bay leaf
6 bone-in pork chops or boneless loin chops (1 inch thick)
Glaze
1/2 cup pure maple syrup
1/2 cup cranberry sauce
1/2 cup applesauce
2 tablespoons spicy brown mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1/16 teaspoon cayenne pepper

Steps:

  • In a large bowl, combine the brine ingredients and stir well. Place the chops in a resealable plastic bag and pour in the brine. Refrigerate for 12 to 24 hours, turning once.
  • Combine the glaze ingredients in a medium saucepan and mix well. Heat the glaze over medium heat, just until warm. Remove from the heat and reserve 1/2 cup of glaze for serving.
  • Build a charcoal and/or wood fire for direct grilling. Grill the chops directly over the hot coals (approximately 450°F) for 8 minutes on each side, or until the internal temperature is 150°F. During the last 3 minutes of cooking, baste both sides of the chops with the glaze. Drizzle the reserved glaze over the chops or pass separately at the table.

1 tablespoon unsalted butter
1/2 shallot, finely chopped (about 2 teaspoons)
2 fresh sage leaves
1 teaspoon whole juniper berries
1 cup fresh or thawed cranberries
2/3 cup pure maple syrup
2/3 cup apple cider, plus more if needed
1/2 cup red-currant jelly
1/4 teaspoon coarse salt
Pinch of freshly ground pepper

Steps:

  • In a medium saucepan, melt butter over medium heat. Add shallot, and cook until translucent, stirring occasionally, about 2 minutes. Add sage leaves and juniper berries; cook, stirring, 1 minute. Add cranberries, maple syrup, apple cider, jelly, salt and pepper. Raise heat to medium-high, and simmer until cranberries are soft and starting to burst, about 3 minutes.
  • Transfer cranberry mixture to a food processor, and puree until smooth. Pass puree through a fine sieve into a small saucepan.
  • Return glaze to stove, and simmer gently over medium heat until it has thickened, about 10 to 15 minutes; you should have about 1 1/4 cups. If glaze seems too thick, thin it with a little apple cider. Keep warm until ready to use.

Steps:

  • Turkey:.
  • Preheat oven to 375 degrees F.
  • In a small mixing bowl combine the butter, House Seasoning, parsley, shallots, and garlic. Thoroughly rinse and dry the turkey. Tuck the wings underneath the body and place the turkey in a roasting pan. Rub the butter mixture all over the turkey. Stuff, if desired.
  • Roast for 18 minutes per pound (including stuffing weight, if using). The turkey is done when an instant-read thermometer is inserted into the thickest part of the thigh (and deep into the stuffing) and registers 165 degrees F. and the juices run clear. Remove from the oven and loosely tent with foil. Let rest for 20 minutes before carving.
  • Glaze:.
  • Combine all ingredients in a small saucepan over medium-high heat. Bring to a boil and reduce heat to medium-low. Let simmer until the cranberries burst, about 8 to 10 minutes. Strain the mixture through a sieve and let cool. Reserve for turkey.

  • Mix all ingredients together and store in an airtight container for up to 6 months.
