A simple recipe for Pannekoeken, a baked apple pancake hailing from the Netherlands, this "casserole" version is infused with cardamom and nutmeg and puffs up dramatically in the oven. A delicious weekend breakfast or brunch. Adapted from The Heavy Table

2 tablespoons coconut oil or butter
4 apples, sliced (no need to peel)
1/2 cup pecans (or walnuts)
2 tablespoons maple syrup
pinch salt
1 1/2 cups whole milk (or sub 3/4 cup half & half plus 3/4 cups water)
6 eggs
1 1/2 cups flour
1 tablespoon vanilla
1 tablespoon maple syrup (or brown sugar)
3/4 teaspoon salt
1/2 teaspoon cardamom
1/2 teaspoon nutmeg
1 teaspoon cinnamon

Steps:

  • Pre-heat oven to 425 F with the 13 x 9 inch baking dish inside.
  • In an extra-large skillet over medium, heat the butter and saute the apples, stirring until tender, about 10 minutes. Add the pecans, lightly toasting. When the apples begin to caramelize, stir in the maple syrup and a pinch of salt and and turn off the heat.
  • by placing everything in a blender (eggs, milk, flour, vanilla, maple syrup, salt, cardamom, nutmeg, cinnamon) and blend until smooth. (Or feel free to whisk in a bowl)
  • When the oven is fully preheated remove the heated baking dish, and add 2 tablespoons butter, brushing the sides and bottom. Add the caramelized apples and spread out evenly on the bottom. Pour the batter over top. Grate with extra nutmeg if you like.
  • Place on the middle rack with ample room on top and bake 30 minutes or until beatufully puffed and deeply golden.
  • Serve immediately with maple syrup. Feel free to sprinkle with powdered sugar.

1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 Granny smith apple, peeled, cored and thinly sliced
4 tablespoons cold butter
1/2 cup whole milk
1 tablespoon vanilla extract
3 eggs
1/2 cup all-purpose flour
1 teaspoon granulated sugar
1/2 teaspoon salt
1/2 cup brown sugar
Powdered sugar, for serving
Whipped cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the cinnamon, nutmeg and apples to a pan. Saute the apples over medium-low heat until slightly soft, 3 to 5 minutes.
  • Meanwhile, prepare the batter. Mix the milk, vanilla and eggs in a bowl. Add the flour, granulated sugar and salt and whisk lightly (some lumps are ok but not too many).
  • Increase the heat under the apples to medium and add the brown sugar and butter. Cook until a syrup forms, about 3 minutes, then add the batter all at once to the center of the pan. Swirl the apple syrup mix through the batter, using a heatproof spatula, to form ribbons (you do not want to fully combine the apple-sugar syrup into the batter). Cook until small bubbles form around the edge.
  • Finish cooking the pannekoeken in the oven, 12 minutes. To serve, invert a 12-inch plate over the pan and flip the pan to turn out the pannekoeken. Sprinkle with powdered sugar, top with whipped cream and enjoy!

1/2 teaspoon baking powder
1/2 cup skim milk
2 teaspoons margarine, melted
1/2 cup flour
1/8 teaspoon salt
1 teaspoon vanilla
1/8 teaspoon cinnamon
2 tablespoons margarine
1 large tart apple, pared and sliced 1/4-inch thick
1/2 teaspoon cinnamon
1/4 cup Splenda granular
1/2 teaspoon cinnamon
3 tablespoons boiling water

Steps:

  • Combine batter ingredients in blender or food processor. Mix until smooth. Let rest 30 minutes.
  • For filling, melt margarine in 10-inch ovenproof skillet. Add apple slices and cinnamon. Cook over low heat for 3 minutes, stirring constantly.
  • Pour batter over apple, place in a preheated 425° oven and bake for 15 minutes. Reduce heat to 350° and bake 15 minutes more. Remove from oven.
  • Blend glaze ingredients and drizzle over top of pancake. Cut into four wedges.

2 apples, peeled and diced
1/2 cup brown sugar
1 teaspoon cinnamon
2 tablespoons melted butter

Steps:

  • Melt 2 tablespoons butter in a 9" pie plate in preheated 400° oven.
  • Swirl butter to evenly coat bottom of pie plate and set aside.
  • In another bowl, combine apples, brown sugar, cinnamon and 2 tablespoons melted butter.
  • In a separate bowl, mix together flour, milk, eggs and salt and pour into pie plate.

2 cups flour
1/4 teaspoon salt (optional)
1 1/2 cups milk, warmed
1 1/4 teaspoons reduced-calorie margarine or nonstick vegetable cooking spray
3 small apples, cored, peeled, and sliced (8 circles per apple)

Steps:

  • 1. Dissolve the yeast and sugar in 1/2 cup warm water. Cover and set aside until doubled in bulk.2. In a large bowl, mix the flour and salt. Make a well in the middle. Pour in the swollen yeast and add 1 1/4 cups milk to the well. Mix with a wooden spoon, adding only enough of the remaining milk to make a fairly thick batter.3. Set aside in a warm place for about 30 minutes until bubbles begin to appear.4. Melt 1/2 tsp margarine on griddle or spray with a nonstick vegetable cooking spray. Pour 1/2 cup of batter on griddle. Place 4 or 5 slices of apple on the top (uncooked side).5. When pancake bottom turn brown, turn over and brown the apple side. These are not your normal pancakes. Let them puff up as big as you want it just adds to the flavor and fun for young kids. This was a family favorite found in a vegetarian cookbook my mother had but we have our own variations. You'll probably want to make a double batch.

3/4 cup milk
1/2 teaspoon salt
5 1/2 tablespoons butter or 5 1/2 tablespoons margarine
1 1/2 cups applesauce
1/4 cup honey or 1/4 cup sugar
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg

Steps:

  • Preheat oven to 450.
  • Melt 1 1/2 tbs butter in a regular size skillet.
  • Mix Eggs, Flour, Milk, and Salt together in a bowl. When well blended put in skillet.
  • Cook for 15 minutes in oven.
  • Drop temp to 350 and cook for another 10 minutes.
  • While pancake is cooking mix 4 tbs butter, Applesauce, honey or sugar, cinnamon, and nutmeg in a small sauce pan and warm.
  • Cut pancakes like a pie and top with sauce.

3 large eggs
3/4 cup milk
3/4 cup all-purpose flour
1/2 teaspoon salt
2 granny smith apples, peeled, cored, and cut into 1/4-inch slices
3 tablespoons sugar
2 tablespoons lemon juice
1/4 teaspoon cinnamon
6 tablespoons unsalted butter
1/2 a lemon, juice of
3 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • In a medium bowl, beat the 3 eggs and milk until well blended. Add the flour and salt; stir until batter is barely blended (the batter should be slightly lumpy).
  • In another bowl, toss apple slices with sugar, 2 tablespoons of lemon juice, and cinnamon.
  • Melt unsalted butter in a heavy, ovenproof 12-inch cast-iron or non-stick skillet over medium-high heat. Add apple mixture and saute 4 minutes, or until slightly softened. Spread out apples into an even layer; pour batter over apples.
  • Bake in preheated oven for 20 minutes, or until pancake is golden brown and puffed.
  • Sprinkle with the juice of half a lemon and dust with confectioner's sugar. Serve immediately.

  • Stir it into the cream mixture and bring to a boil over low heat, whisking constantly.
  • Continue boiling and whisking until the sauce thickens, about 3 minutes.
  • Remove the pan from the heat and stir in butter, vanilla and nutmeg.
  • Allow the sauce to cool slightly before serving.
