MAPLE PECAN BAKED OATMEAL
This Maple Pecan Baked Oatmeal is filled with wholesome oats, studded with chopped pecans and lightly sweetened with pure maple syrup. Fancy enough to serve for brunch, but awesome as a make-ahead breakfast for the week as well.

Steps:
- Preheat the oven to 375°F and spray an 8x8 inch square baking dish with cooking spray.
- Mix dry ingredients: In a large bowl, mix together the oats, half the pecans, baking powder, cinnamon, and salt.
- Add in wet ingredients: Add in the milk, maple syrup, egg, coconut oil, vanilla and bananas. Stir well to combine.
- Carefully pour oatmeal mixture into the prepared baking dish.
- Scatter the remaining pecans across the top.
- Bake: Bake for 35 to 40 minutes, until the top is nicely golden. Remove from the oven and let cool for a few minutes. Portion and serve. Drizzle each portion with maple syrup if you want it a bit sweeter.

MAPLE CINNAMON BAKED OATMEAL
Baked oatmeal is a great way to prep a delicious breakfast for the week, or a warm breakfast for the family to enjoy. This recipe is a great twist on my overnight oats recipe, especially if you prefer eating your oatmeal warm. Old fashioned oats are mixed with mashed banana, maple syrup, unsweetened applesauce, milk, and spices and baked to perfection. Split into four generous servings, this baked oatmeal keeps great in the fridge and is easy to reheat.

- Preheat the oven to 375F.
- Spray a small baking dish or casserole with cooking spray. I used an 8.5" x 11" 2.5qt casserole dish for this.
- Add the overripe bananas to the bottom of a mixing bowl, and mash them with a fork.
- Add the applesauce, maple syrup, 1 tsp cinnamon, baking powder, salt, and vanilla extract, and stir to combine.
- Add the milk. Whisk together.
- Add the oats. Fold in.
- Pour the mixture evenly into the baking dish.
- In a small bowl, combine the remaining 1/4 tsp cinnamon with the 1 tsp sugar. Sprinkle this mixture evenly on top of the oats.
- Bake at 375 for 35 minutes.

- Heat oven to 350 degrees. Butter a 9X9 inch baking pan and set aside.
- To a large mixing bowl, add cool melted butter and maple syrup. Whisk together until smooth. Pour in milk and add eggs. Whisk together. Add in baking powder, cinnamon, and vanilla. Mix until well blended.
- Add in oats and mix well. Let the mixture sit for 5 minutes to allow oats to absorb liquid. Pour into prepared dish and bake for 30-35 minutes until center is set and oatmeal is slightly golden on top.
- Remove from oven and let cool for 3-5 minutes. Scoop baked oatmeal into a bowl or plate, top with milk or maple syrup and fresh fruit.

- Set a medium saucepan over medium heat. Melt in 1 Tbsp butter then add 1 cup oats and toast for 2 min, stirring occasionally.
- Add 3 cups boiling water then reduce heat to a simmer, cover and cook on low 20 min without stirring.
- Combine 1/2 cup whole milk with 1/2 cup buttermilk. Pour over the oatmeal and add 1/4 tsp salt then stir just until incorporated. Cook another 10 min uncovered, stirring gently once or twice - don't over mix.
- Finally, stir in 1/4 tsp cinnamon and 1 Tbsp maple syrup, or to taste. Divide among 4 bowls and top each bowl with about 1/2 cup of fresh fruit (plus a sprinkle of cinnamon and drizzle of maple syrup if desired)
