4 cooked waffles
2 slices Swiss cheese, halved
Dijon mustard, optional
2 slices ham
Butter or nonstick spray, for greasing

Steps:

  • Lay 2 of the waffles on a counter or cutting board. Place a half-slice of cheese on top of each waffle. Spread some mustard over the cheese if using. Fold each ham slice in half, and place on top of the cheese slices. Layer another half-slice of cheese over each piece of ham. Top with the remaining waffles to form a sandwich.
  • Heat a nonstick skillet or cast-iron pan over medium heat.
  • Grease the skillet with some butter. Place the sandwiches in the pan, and cook until golden on the underside and the cheese starts to melt, 2 to 3 minutes. Flip the sandwiches, and cook until golden on other side and the cheese fully melts, about 2 more minutes. Serve hot or wrap in foil to pack for a school lunch or picnic.
  • Make it Your Own: For an Italian spin on this sandwich, swap in prosciutto for the ham and mozzarella for the Swiss.

More method than recipe, I heated up my panini maker one night to make a grilled cheese, only to find out that I'd left the waffle plates inside. Instead of changing out the plates, I used them anyway and I loved the outcome. The sandwich gets super crispy but the cheese is still soft and gooey inside the little squares. It's my 'go to' method for grilled cheese now. Serve with spicy pickled veggies on the side!

2 teaspoons Dijon mustard

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Mix mayonnaise and Dijon mustard together in a bowl; spread onto 1 side of each bread slice. Sprinkle pepperjack cheese over mayo-mustard layer of 2 bread slices. Cover cheese layer with a second bread slice, creating 2 whole sandwiches.
  • Place 1 sandwich in the waffle iron, taking care not to push down all the way. 2 tablespoons Dijon-style mustard
1 (16 ounce) package Farmland® Deli-Style Sliced Ham
4 slices Swiss cheese
½ cup arugula or spinach leaves
2 tablespoons butter

  • In a medium bowl stir together the flour, sugar, basil, baking powder, and salt. Add egg, milk, shredded cheese, and oil. Stir just until moistened. Add batter to a preheated, lightly greased waffle iron and bake according to manufacturer's directions. When done, use a fork to lift waffle off waffle iron. Repeat with remaining batter. You should have 8 4-inch waffles.

1 tablespoon (approximately, softened butter)
6 very thin slices deli ham (Black Forest or Virginia Style, preferably)
2 thin slices provolone cheese
1 fistful baby or tender arugula
paper thin slices sweet onion (to taste)
Dijon mustard (to taste)
mayonnaise (to taste)

Steps:

  • Preheat your waffle iron or panini maker according to manufacturer's instructions.
  • Spread the top of one piece of bread with mayonnaise and Dijon. Arrange 3 pieces of the ham on the bread, top with 1 piece of the provolone cheese, half of the arugula, the onions, the other half of the arugula, last piece of cheese, and the remaining 3 slices of cheese. Finally, spread the remaining piece of bread with more Dijon and mayonnaise and put that side down on top of the sandwich. Generously butter the top of the bread.
  • Open the waffle iron, hold the sandwich together and carefully invert it so the buttered top is facing down on the waffle iron. Quickly butter the piece of bread that is now on the top and close the waffle iron. You may need to weight the top of the waffle iron down until the sandwich begins to compress. A heavy pan or can of something that will not be damaged by heat is a good bet.
  • Toast until the sandwich is compressed and the outside is a crispy, deep golden brown. In my waffle maker, set on high, that took about 5 minutes.
  • Use tongs or a spatula to carefully remove the sandwich from the waffle iron and transfer it to a cutting board. Cut in half (or quarters) and serve hot.

2 slices thick slices of artisan, crusty bread
85 grams of shaved black forest deli ham
4 slices of sharp / old brick style cheddar, broken into smaller pieces
1 tbsp butter

Steps:

  • Begin by getting your fry pan ready on the counter. Butter one side of the bread with 1/2 tbsp of butter. Place the bread butter side down in the fry pan.
  • Take half of the broken up peices of cheese and place them on top of the bread, trying to cover all the available places on the bread.
  • Take the ham and twist each peice loosely so it folds in a small mound. Continue to do this with each piece, stacking them next to each other to cover the top of the cheese.
  • Take the remaining cheese pieces and top the ham with the cheese.
  • Butter the top piece of bread with another 1/2 tbsp of butter and place it, butter side out, on top of the cheese.
  • Place the fry pan onto the stove over medium heat/low heat.Take your time grilling the bread as if you brown the bread too quickly, the cheese will not be melted. Keep an eye on the bottom piece and when it's nicely toasted, carefully flip the sandwich to the other side.
  • Placing a lid on the fry pan helps with melting the cheese slightly faster.
  • When the other side is nicely grilled to golden brown, remove the sandwich onto a plate. Let it rest for a few minutes as the cheese will be LAVA hot!! Cut in half after the wait time is done, and enjoy!
