STRAWBERRY GLAZED POUND CAKE
Steps:
- Preheat your oven to 350 F degrees. Spray a 10 or 12 cup Bundt pan with cooking spray and set aside.
- In a medium size bowl, combine the flour, baking powder, baking soda and salt. Set aside.
- In the bowl of your mixer beat together the butter, sugar and vegetable oil on medium speed until light and fluffy. Add the eggs and mix for another 30 seconds or until well incorporated. Add the vanilla, lemon zest, lemon juice, sour cream, milk and continue mixing until everything is well incorporated.
- Add the flour mixture to the mixer bowl and mix until all the flour is well incorporated into the batter.
- Pour the batter into the prepared bundt pan and bake for 55 minutes to 1 hour or until a toothpick inserted in the center of the cake comes out clean.
- Cool the cake for 15 minutes before removing from pan, then continue cooling on a wire rack or serving plate.
- While the cake is baking, prepare the strawberry glaze. In a saucepan, add all the strawberry glaze ingredients, and bring to a boil over medium heat. Reduce the heat, to medium low and continue cooking for another 5 minutes, until the sauce thickens. Pour the strawberry mixture into a blender and blend until smooth.
- Let the glaze cool completely before drizzling over the cake. If you like you can top the pound cake with additional strawberries.

- Wash, hull, and chop the strawberries and place them in a large bowl. Stir in the sugar and allow to stand for 30 minutes prior to making the cake so they can release their natural juices
- Grease and flour a 10-inch bundt pan set aside.
- In a large bowl, sift the flour and the baking powder. Set aside.
- In a separate bowl, use an electric mixer to cream together the shortening, butter, and sugar, until smooth. Add the eggs, one at a time, beating thoroughly after each addition. Alternate the dry and wet mixtures to the creamed mixture, one at a time. Add some of the flour and baking powder to the creamed mixture, incorporated, then add some milk. When both the flour mixture and the milk are combined, add in the vanilla.
- Stir in 1 cup of the macerated strawberries and half of the juice to the cake batter. Stir well to incorporate.
- Pour the batter into prepared bundt pan. Place the bundt pan into a COLD OVEN, then turn on the oven; set the temperature to 325 degrees F. Bake for 1 hour 30 minutes, or until a toothpick comes out clean when inserted into the cake.
- Cool the cake for 10 to15 minutes in the pan, then run a knife around edges to loosen and remove cake carefully to a rack, while making the glaze.
- In a small bowl, whisk the melted butter, sugar until the sugar dissolves. Stir in the remaining cup of macerated strawberries, with juice. If the mixture is too dry add some water or milk (see notes), a little at the time, to loosen up the sugar mixture enough to make a glaze. Pour the strawberry glaze over the cake while still warm.

HOW TO MAKE STRAWBERRY GLAZE

- Rinse the strawberries. Cut off the caps and chop the berries into small chunks. Set aside 1/3 for later.
- In a saucepan over medium-high heat, combine 2/3 of the strawberries, sugar, and vanilla. Stir until the strawberries release their juices. Mash the berries with a wooden spoon to release more syrup. Keep cooking for 15 minutes or until the mixture thickens.
- Use a stick blender or whisk to puree/mash the strawberries to achieve your desired smoothness or chunkiness.
- Combine the puree with the remaining strawberries and enjoy!

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. LEMON SPONGE CAKE WITH GLAZED STRAWBERRIES

- Preheat oven to 350 degrees F. Butter a 9 or 10-inch springform pan and line the bottom with parchment paper. Flour the sides of the pan with sifted matzo cake meal.
- In a mixer fitted with a whisk attachment (or using a hand mixer), whip the egg whites until soft peaks form. Add 1/2 cup of the sugar and continue whipping just until stiff and glossy, about 30 seconds more.
- In another bowl, whip the egg yolks with the remaining 1/4 cup sugar until light and fluffy. Fold in the egg whites. Gently fold in the ground almonds, chopped almonds, matzo meal, lemon juice, and lemon zest.
- Pour the batter into the prepared pan and bake until dry and spongy in the center, about 35 to 40 minutes. Let cool for 15 minutes in the pan, then remove the sides of the pan and let cool completely on a wire rack. The cake will fall somewhat.
- Make the glaze: In a small bowl, stir the ingredients together until smooth, adding lemon juice as needed until the glaze is pour-able. Set the wire rack holding the cake on a sheet pan. Drizzle the glaze generously over the top of the cake, letting it trickle down the sides. Using a flexible spatula or pastry brush, gently spread the glaze over the sides of the cake, reusing any glaze that drips onto the baking sheet. Let set for at least 30 minutes before serving, or until the glaze is hardened. Transfer the cake to a serving platter, removing the pan bottom and parchment paper if desired.
- In a medium saucepan, bring the jam and water to a boil, stirring to break up any lumps. Working quickly, add the strawberries all at once and fold together with a spatula until evenly coated. Pour into the sunken center of the cake and gently spread into a circle on the surface, leaving a 1 1/2-inch border all around. Let cool until set, about 30 minutes. Use a very sharp knife for slicing the cake.

STRAWBERRY BUNDT CAKE WITH LEMON GLAZE DRIZZLE (USES CAKE MIX)
A very delicious and moist Strawberry Bundt Cake. You could certainly make this with strawberry glaze or plain sugared glaze if you wanted to, or even just dust with powdered sugar, but my favorite is the lemon glaze topping as it offsets the sweet strawberry flavor perfectly. This cake is very pretty and goes well for brunches, dinner parties, think pink events, etc. Also, the recipe is for a Bundt cake, but you could easily make a layer cake using two 8" round cake pans instead then use a frosting. ** Note: my oven is gas and cooks quickly, you may need to cook a little longer depending your oven, but basically cake is done when toothpick comes out clean.

- Preheat oven to 350 degrees. Spray Bundt or tube pan with Bakers Joy (or spray two 8" pans with cooking spray to make layer cake).
- Blend together cake mix, oil, water, eggs, and sour cream in large bowl on low speed for 1 minute then medium high speed for 2 minutes.
- Pulse strawberries a few times until chopped (be careful not to puree them) then stir those into batter by hand then pour batter into Bundt pan (or round pans).
