1.5 tablespoons olive oil (divided)
1 teaspoon salt (divided)
1 teaspoon freshly ground black pepper (divided)
1 pound skinless and boneless cod fillets (4 cod fillets (each around 4 to 5 ounces))
1/2 teaspoon dried dill (dill weed)
2 bell peppers (cut into bite-sized pieces)
1/2 pound broccoli florets
1 lemon (juiced (plus slices or wedges of lemon to serve with your meal, optional))
Tartar sauce (for serving (optional))

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Spray a large sheet pan with cooking spray or grease with a little cooking oil and set aside.
  • Pat cod fillets dry of any excess moisture with paper towels, then place the cod fillets onto the prepared sheet pan.
  • Sprinkle each fillet with salt, pepper (use 1/2 teaspoon each of salt and black pepper between all four fillets) and dill. Drizzle with 1/2 tablespoon of olive oil. Place lemon slices on top of cod.
  • In a bowl (or you can do directly on the sheet pan), toss bell peppers and broccoli florets with remaining 1/2 teaspoon of salt, remaining 1/2 teaspoon of black pepper, and remaining 1 tablespoon of olive oil. Spread out onto sheet pan around cod.
  • Bake for 16 to 18 minutes or until cod is cooked through, is opaque and flakes easily with a fork (insert the tines of a fork into the thickest part of the fish at an angle and twist gently; it should flake easily).Note: Cook time of the cod may vary, depending on the thickness of your fillets.
  • Serve the cod and veggies, then squeeze fresh lemon juice (to taste) over the cod. This meal is also delicious served with tartar sauce and extra lemon slices or wedges. Enjoy!

4 teaspoons olive oil
salt and ground black pepper to taste
1 bunch fresh chives, coarsely chopped
2 lemons, sliced

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut 4 large squares of heavy-duty aluminum foil. Brush each fillet with olive oil and sprinkle with salt and black pepper. Place each fillet in the center of an aluminum foil square. Lay lemon slices down the length of each fillet and sprinkle garlic slices and chives over the top. Fold foil over the fish and turn the edges over 2 or 3 times; flatten to seal the packets.

½ sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter
1 pound thick-cut cod loin
½ lemon, juiced
¼ cup dry white wine
1 tablespoon chopped fresh parsley
1 tablespoon chopped green onion
1 lemon, cut into wedges

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place 2 tablespoons butter in a microwave-safe bowl; melt in microwave on high, about 30 seconds. Stir buttery round crackers into melted butter.

5 tbsp fresh lemon juice

1 tsp ground coriander
3/4 tsp sweet Spanish paprika

  • Preheat oven to 400 degrees F.
  • Mix together the lemon juice, olive oil, and melted butter in a shallow bowl (do not add the garlic yet). Set aside.

1 Tbsp olive oil ((to grease your baking dish))
1 cup heavy cream
4 Tbsp butter
1/2 cup white wine ((dry, we used Pinot Grigio))
2 large lemons ((juice and zest - divide zest into 2 equal portions))
1 1/2 Tbsp dill weed ((fresh, chopped - 1 Tbsp and 1/2 Tbsp portions))
1/2 tsp salt
1/2 tsp ground white pepper

Steps:

  • In a small to medium size saucepan, melt the butter over medium heat. Add heavy cream, dry white wine, lemon juice, the first 1 Tbsp portion of chopped dill and the first 1/2 portion of lemon zest. Stir to combine, add seasoning (salt & ground white pepper) then allow lemon butter sauce to come to a low simmer. Remove from heat.
  • Rinse and pat dry your cod fillets. Grease a small baking dish (big enough to fit your cod fillet portions into) with olive oil, butter, or non-stick cooking spray. Preheat your oven to 425°F (218°C).
  • Pour enough of the lemon butter sauce to cover the bottom of your baking dish, then arrange your cod fillets into the baking dish on top of the sauce. Sprinkle with the remaining portions of chopped dill and lemon zest, then season with salt and pepper (to taste).

2 cloves garlic (minced)
Zest of a lemon
1 teaspoon lemon juice
1/2 teaspoon fine sea salt
1/4 teaspoon black pepper
1 1/2 pound cod fillet
2 teaspoons minced Italian parsley

Steps:

  • Preheat the oven to 375° and have ready a rimmed sheet pan lined with parchment paper.
  • Run your fingers along the fillet, checking for any missed pin bones. If found, remove using a pair of kitchen tweezers. Pat the fillet dry using a paper towel, and transfer to the baking sheet.
  • In a small mixing bowl, stir together the mayonnaise, garlic, lemon zest and juice, salt and pepper. Rub the mayonnaise mixture all of the fillet. Bake for 25-30 minutes, or until the fish is opaque and flakes easily using a fork . Cook time will vary depending on the thickness of the fillet -- for a thicker fillet, bake longer, and for a thinner fillet, bake for less time. Remove from the oven, sprinkle with parsley to garnish and serve.

1 small lemon (sliced)

Steps:

  • Prep: Preheat the oven to 400°F. Lightly grease a rectangular baking dish that will comfortably hold all your cod pieces and place the fish inside.

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. Very lightly coat the bottom of a baking dish large enough to hold the fish in one layer with cooking spray.
  • Pat the cod pieces with a paper towel and place them in the baking dish.
  • Season the fish with a little sea salt and freshly ground black pepper.
