Brush pork chops with a sweet-and-spicy tomato glaze and broil.

1/2 cup low-sodium chicken broth
2 tablespoons apple cider vinegar
2 tablespoons pure maple syrup
1 tablespoon finely chopped chipotles in adobo
1 teaspoon chili powder
One 15-ounce can tomato sauce
1 clove garlic, finely chopped
Kosher salt and freshly ground black pepper
Four 3/4-inch-thick bone-in pork rib chops (about 1 1/2 pounds total)
Potato salad or mashed potatoes and wilted spinach, for serving

Steps:

  • Bring the chicken broth, vinegar, maple syrup, chipotles in adobo, chili powder, tomato sauce, garlic, a generous pinch of salt and a few grinds of pepper to a simmer in a medium saucepan over medium heat. Reduce heat to medium-low and gently simmer until thick, stirring occasionally, about 25 minutes. Reserve 1/2 cup of the sauce for serving.
  • While the sauce simmers, adjust an oven rack about 4-inches below the heat source and preheat the broiler to high.
  • Put a broiler pan or foil-lined baking sheet under the broiler to preheat for 5 minutes. Sprinkle the pork chops with salt and pepper, put on the preheated pan and brush with the some of the sauce. Broil the chops, brushing with more sauce, 2 to 3 more times, until cooked through and slightly charred, about 8 minutes (do not flip). Serve the pork chops with potato salad or mashed potatoes, wilted spinach and the extra sauce on the side.

1 Tbsp chili powder
1/2 tsp salt
1 lb pork tenderloin, trimmed and cut crosswise into 1-inch-thick medallions
2 tsp canola oil
1/4 c apple cider
1 Tbsp maple syrup
1 Tbsp cider vinegar

Steps:

  • 1. Sprinkle over both sides of pork chili powder and salt.
  • 2. Heat oil in a large skillet over medium-high heat. Add the pork and cook until golden, 1 to 2 minutes per side. Add cider, syrup and vinegar to the pan. Bring to a boil, scraping up any browned bits. Reduce the heat to medium and cook, turning the pork occasionally to coat, until the sauce is reduced to a thick glaze, 1 to 3 minutes.   • Heat a large skillet over medium-high heat.
  • Dry the pork chops well and season with salt and pepper, to taste.

  • Add the vinegar, and return the pan to the heat and use a wooden spoon to scrape up any brown bits that cling to the pan.

1/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
3/4 cup maple syrup
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons prepared mustard
1 tablespoon Worcestershire sauce

Steps:

  • Grill directions:.
  • Heat grill. Rub both sides of pork chops with salt and pepper. In small saucepan, combine all glaze ingredients; mix well. Bring to a boil, stirring constantly. Set aside.
  • When ready to grill, place pork chops on medium heat 4 to 6-inches from medium coals. Cook 15 minutes, turning once.

This recipe is from the "12th Edition of the Better Homes & Gardens Cookbook". The smoky and salty flavor of the pork chops is complimented by the sweet and savory maple glaze. DH and our toddler DD happily gobbled it down. Yum!

2 smoked pork chops, bone-in, 1/2 inch thick
2 tablespoons olive oil
1/8 teaspoon black pepper, freshly ground
1/4 cup maple syrup (real or imitation)
1/4 cup apple juice
1 teaspoon cornstarch
1/4 teaspoon sage, dried, ground
1/8 teaspoon black pepper, freshly ground

Steps:

  • In a medium skillet (cast iron preferred), heat oil over medium-high heat until glistening.
  • Season both sides of pork chops with 1/8 teaspoons black pepper. Brown in hot oil for 5-8 minutes on each side or until heated through (and nicely browned).
  • Meanwhile in a small saucepan, whisk together remaining ingredients. Cook over medium heat until thickened and bubbly.
  • Once pork chops are browned, remove to a serving platter (or individual plates). Spoon maple glaze evenly over both and serve.

For this dish I marinate lean and versatile boneless top loin pork chops (also known as "America's Cut") in five-spice and finish it in a tangy and smooth maple glaze. This dish pairs well with my Asian Pear and Cucumber Slaw. The Asian pear, native to China, Japan and Korea, has a sweet flavor with a crisp texture, marries well with a variety of flavors and is a quick no-cook side dish option. A plastic V-slicer or mandoline will make quick work of cutting the Asian pears and cucumber into matchsticks. 4 tablespoons olive oil
1/4 cup Chinese five spice powder
2 tablespoons sea salt

  • Marinating Time: 8 hours, 20 minutes.

  • To prepare the glaze: Melt butter in medium saucepan over medium heat. Add maple syrup and vinegar and bring to a boil. Cook, stirring often, until slightly reduced, about 2 minutes. Set aside.
  • Preheat your oven to 350°F Add a little cooking oil to pan and heat over medium-high heat. When the oil begins to shimmer, sear the pork chops until brown, about 3 to 5 minutes each side. Place the pan in the oven and cook until an instant-read thermometer inserted horizontally into the center of a chop reads 145ºF, about 10 to 12 minutes. During the last 3 minutes, reheat the maple sauce and brush both sides of the chops until well glazed. Remove from pan from the oven and let stand for 3 minutes.

This recipe is easy and delicious. The pork chops are coated with a spicy rub and topped with a sweet maple sauce, which both compliments and tones down the heat. I think this recipe has just the right amount of spiciness, but you can adjust the chili powder and cayenne pepper to your taste. I like to serve this with my Spicy Maple Roasted Potato Wedges.

2 pork chops, thick-cut, bone-in
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon Mexican chili powder, ground

  • Preheat oven to 375°F.
  • In a non-stick oven-proof skillet, heat olive oil over medium-high heat until glistening.
  • Meanwhile, in a small saucepan over medium-high heat, whisk together maple syrup, soy sauce and lemon juice. Bring to a boil. Boil for five minutes or until mixture begins to foam, reduces by half and thickens to the consistency of corn syrup. Remove from heat, cover saucepan and set aside.

  • Place skillet, uncovered, in oven and roast chops for 10 minutes.
  • With oven mitts, remove skillet from oven and spoon 1/2 of remaining sauce over chops. Return to oven for an additional 10 minutes or until chops are cooked through.
  • Spoon remaining sauce over chops just before serving. The sauce will be cool and very sticky at this time but will melt nicely when spooned onto chops.
  • Serve immediately and enjoy!

4 bone-in pork loin chops (7 ounces each)

¼ cup packed brown sugar

  • Preheat the oven to 350 degrees F (175 degrees C).
