Make this butternut squash purée for a deliciously sweet autumnal side dish everyone will love.

2 medium butternut squash, peeled, seeds reserved, cut into 1-inch cubes
2 tablespoons unsalted butter, melted
1 tablespoon olive oil
Coarse salt and freshly ground pepper
1 to 2 tablespoons honey
Pinch of freshly grated nutmeg

Steps:

  • Preheat oven to 350 degrees. Place squash in a large shallow baking dish. Drizzle with butter, and toss to coat. Cover with parchment-lined foil. Transfer to oven, and cook until tender, 25 to 30 minutes.
  • Meanwhile, clean seeds and transfer to a small baking sheet; bake until dried out. When dried, cook in 1 tablespoon olive oil in a medium skillet until golden. Season with salt and pepper. Transfer to a parchment paper-lined baking sheet, and let stand until cool.
  • Using an immersion blender or working in batches in a blender, puree squash until smooth. Stir in honey, salt, and nutmeg. Transfer to a serving bowl, and garnish with roasted seeds.

Butternut squash is good for more than soup! I just had a bowl of this creamy deliciousness for my breakfast. Would taste wonderful served as a side with chicken and vegetables, or something spicy. Makes a terrific filling for ravioli, as well. But it's definitely good in a bowl all by itself.

1 butternut squash
2 1/2 teaspoons cinnamon
1/8 teaspoon ground nutmeg
1 1/2 teaspoons brown sugar or 1 1/2 teaspoons turbinado sugar
1/2 tablespoon butter
1 tablespoon low-fat milk
1/4 teaspoon salt

Steps:

  • Preheat oven to 375.
  • Cut stem off of squash. Cut squash lengthwise and remove seeds and pulp. Put squash halves face down in a baking dish. Add 1/4 inch of water.
  • Bake the squash for 20 minutes with cut side down down, then 20 minutes with cut side up (when you flip them over you can add a little honey and/or cinnamon if you so desire). Bake until a knife can easily enter the flesh but remove from oven before the squash becomes entirely mushy.
  • Allow squash to cool enough to handle. Remove peel with paring knife, and cut peeled squash into pieces of approximately 1-2 inches.
  • Put pieces in food processor, along with the rest of the ingredients. Puree until smooth.

2 butternut squash (about 1 pound each)
4 tablespoons softened butter, divided
Salt and pepper, to taste
1 orange, zested
3 tablespoons orange blossom honey
Pinch ground cinnamon

Steps:

  • Halve the squash lengthwise and remove the seeds and strings. Rub the insides with 2 tablespoons softened butter; season with salt and pepper. Place on a roasting pan, skin side down. Bake in a preheated 350-degree oven for 30 to 40 minutes or until fork tender. Remove the squash from the oven, scoop out the flesh and place in a food processor. Add the orange zest, honey and remaining 2 tablespoons of butter. Puree until smooth. Add a pinch of salt and cinnamon. Pulse a few times to incorporate.

1 any hard winter squash (as many as you want) or 1 pumpkin
1 pinch salt

Steps:

  • Preheat oven to 350.
  • Place squash on cookie sheet pan and bake for 60 minutes till tender and caramelized.
  • Remove from oven and let cool to handle.
  • Slice in 1/2 and remove seeds. (Discard seeds or rinse, towel dry and make my Recipe #102043 or #50958 it does work!).
  • Puree in a Vita mix blender optional skin and flesh with a pinch of salt till smooth.
  • Cool and place 2 cups in freezer ziplock bags. Freeze till ready to use in your favorite pie, soup, bread or sauce!

2 tablespoons butter
1 tablespoon honey
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon ground allspice
Pinch cinnamon
Freshly ground pepper to taste

Steps:

  • Pare the squash, remove the seeds and cut into 1 1/2-inch cubes. Place the cubes in a saucepan, cover with water and add salt. Bring to a boil, cover and simmer 5 minutes or until tender.
  • Drain and put through a food mill or food processor. Return the puree to the saucepan and add the butter, honey, nutmeg, allspice, cinnamon, salt and pepper. Blend well until smooth. Serve hot with the ham loaf.

1 small butternut squash , halved
1 garlic clove (still in its papery skin)
knob of butter or splash of milk (optional)

Steps:

  • Heat oven to 200C/180C fan/ gas 6. Place the butternut squash cut-side up on a baking sheet. Cover with foil and roast in the oven for 45 mins, put the garlic on the tray and roast for another 15 mins or until you can easily slip a knife through the flesh of the squash. Take the garlic out if necessary.
  • Allow to cool a little, then scoop the flesh out of the squash with a spoon, discarding the seeds and skin. Squeeze the garlic out of the skin, discarding any tough bits and purée the garlic pulp together with the squash in a food processor.
  • You can add a knob of butter, or a splash of water or milk to loosen the purée.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place squash on a baking sheet, flesh-side up.
  • Roast in the preheated oven until tender and slightly brown, 45 minutes to 1 hour. Cool until easily handled.
  • Scoop flesh into a food processor; pulse until smooth. Add chicken stock, 1/4 cup at a time, while continuing to pulse, until smooth. Season puree with salt and pepper.
