MAPLE BANANA BREAD

Number Of Ingredients 12

1 3/4 cups (245g) all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick/115g) unsalted butter, softened to room temperature
1/2 cup (100g) brown sugar (or granulated sugar)
1/3 cup (80 ml) maple syrup
2 large eggs
1 1/4 cups mashed bananas ((3-4 bananas))
1 teaspoon vanilla extract
1/4 cup (60 ml) plain yogurt or sour cream
3/4 cup (80g) walnuts or pecans, roughly chopped
1/3 cup maple syrup (, for the topping)

Steps:

  • Preheat oven to 350°F/180°C. Grease a 9×5-inch loaf pan.
  • In a medium bowl sift together flour, baking soda, and salt. Set it aside.
  • Using a mixer fitted with the paddle attachment, beat together butter and sugar until fluffy, 3-4 minutes. Add 1/3 cup maple syrup and beat for one more minute. Scrape down the sides and the bottom of the bowl as needed. On medium speed, beat in the eggs one at a time, beating well after each addition. Add mashed bananas and vanilla extract and beat until well combined. With the mixer on low speed, add half of the dry ingredients and beat just until combined. Add the yogurt or sour cream and beat until combined. Add the other half of the dry ingredients and beat just until combined. Do not overmix - the less you mix, the lighter the bread will be. Mix in the nuts, reserving a few for garnish.
  • Pour batter into prepared loaf pan and top with reserved nuts. Bake for 50-60 minutes until a toothpick inserted into the center of the bread comes out clean. If the top is browning too quickly, cover the pan loosely with aluminum foil (I cover mine after 30 minutes to help prevent it). Remove from oven and place the pan on a wire rack.
  • Warm the maple syrup in a small saucepan over low heat until heated through (or for a few seconds in the microwave). Drizzle slowly over banana bread while the bread is still warm. If the syrup doesn't soak in completely, poke a few holes with a toothpick. Allow the bread to cool completely in the pan.
  • Store bread at room temperature in an airtight container for up to 2 days or refrigerate for up to 5 days. Serve at room temperature. The bread can be frozen for up to 2 months. Thaw it on the counter, still covered, or overnight in the fridge.

In a separate bowl, mix the flour, baking soda, and baking powder, and stir into the banana mixture just until moistened. Transfer to the prepared loaf pan. Mix the nuts and sugar, and sprinkle evenly over the batter.

1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Combine flour, baking powder, salt, cinnamon, and pumpkin pie spice in a bowl.

The maple syrup makes this a truly French Canadian recipe. This bread is so tasty and moist! Perfect to have with your coffee, or give as a homemade present. If it's too hard to find, you can replace the maple syrup for corn syrup.

1 1/2 cups flour
1/4 cup sugar
1/2 cup chopped nuts
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1 cup pureed banana
2 eggs
1/3 cup maple syrup
1/3 cup canola oil

Steps:

  • Heat the oven (350F).
  • Mix all dry ingredients.
  • In another bowl, mix all moist ingredients.
  • Blend the two mix until you don't see any more dry ingredients (don't overblend it or the bread will come hard!).
  • Put into a greased bread pan, and then into the oven for 50-60 minutes.
  • Let cool 15 minutes before removing the bread from its mold. Enjoy!

1/3 cup packed brown sugar
2 teaspoons baking powder

1 cup mashed ripe banana (about 2-3 med.)
3 tablespoons butter, melted
2 tablespoons nonfat milk
1/4 teaspoon maple flavoring
1/4 cup chopped walnuts

Steps:

  • Mix together the first six ingredients.
  • In another bowl, throughly stir together the eggs, bananas, melted butter, milk and flavoring.
  • Stir wet ingredients into dry until just moistened.
  • Pour into greased loaf pan or 9x9 pan.
  • Sprinkle top with walnuts.
  • Bake at 350, if using loaf pan will take longer, around 40-55 minutes. 9x9 will take about 25-35 minutes. Keep a eye on it and check with a knife to see if done.
  • If top starts browning too early, cover with foil.
  • Sometimes we stirred extra walnuts into the batter.

1 1/2 cups whole wheat pastry flour

Steps:

  • Preheat over to 350 degrees and butter a standard sized loaf pan.
  • Beat the butter, maple syrup, egg, banana and vanilla together (it will be a lumpy slurry). In a separate bowl, whisk the dry ingredients together.
  • Add them to the wet ingredients and mix to combine. Add the pecans and mix until they're integrated.
  • Scrape the batter into the greased loaf pan and smooth the top. Bake at 350 degrees for 45-50 minutes. Use a skewer or toothpick to test for doneness.
  • Eat warm from the pan. On the second day, it is best briefly toasted and buttered.
