BACON-WRAPPED TATER TOTS®
This recipe found me about a year ago and I have absolutely loved it ever since! Given its ingredients I was surprised to find it seems to be a hit no matter where it's served.

Steps:
- Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
- Lay each slice of bacon onto a work surface and place a potato nugget in the center of each bacon slice. Cut a slit down the center of each potato nugget and place a Cheddar cheese piece into the slit. Top each nugget with a dash of hot sauce. Wrap bacon around each filled potato nugget and secure the bacon to the nugget with a toothpick. Transfer the wrapped nuggets to the prepared baking sheet.
- Bake in the preheated oven until nuggets are cooked through and bacon is crispy, 15 to 20 minutes.

MAPLE-BACON GRITS PUFF
Steps:
- Preheat oven to 350°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Reserve 2 tablespoons drippings., In a large saucepan, bring milk, water and salt to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5-7 minutes or until thickened, stirring occasionally. Remove from heat; stir in maple syrup, half of the cooked bacon and reserved drippings., In a small bowl, whisk a small amount of hot grits into eggs until blended; return all to pan, mixing well. Transfer to a greased 8-in. square baking dish., Bake, uncovered, 1 hour or until a knife inserted in the center comes out clean. Sprinkle with remaining bacon and, if desired, chives; let stand 5 minutes before serving.

Steps:
- Bake bacon in 350 degree oven in large pan 10-15min until crisp.
- Drain fat.
- Mix the rest of the ingredi.
- and pour over the bacon.
- Make sure bacon glaze covers both sides and bake at 350 degrees until it bubbles, about 10 min.
- Remove bacon from pan and place on wax paper.
- Cut slices in half if desired.
- Do not refrigerate or cover, but let sit at room temp until ready to serve.
- It should be dry to the touch, not sticky.
- If bacon is limp or sticky, bake a bit longer, about 2 min.

Steps:
- Preheat oven to 350 degrees.
- Line a cookie sheet with aluminum foil (for easy clean up). Place a baking rack on the cooking sheet.
- In a small bowl, combine the maple syrup, ginger, and Sriracha and mix well.

- In the bowl of a stand mixer, combine the water, 1 tablespoon of sugar, and yeast. Let the mixture sit for 10 minutes to activate the yeast. Whisk in the remaining sugar, egg, and buttermilk. Add the flour, cinnamon, nutmeg, and salt. Knead the dough with the dough hook attachment until well combined, about 3 minutes. The dough will be very sticky.
- Transfer the dough to a large bowl coated lightly with cooking spray. Cover, and leave in a warm, draft-free place to rise until doubled in size, 1 1/2-2 hours.
- Transfer the dough to a floured surface and pat or roll it into a 1-inch thick rectangle, approximately 8x12 inches. Cut the dough into 12 (1x8 inch) rectangular pieces with a pizza cutter or sharp knife.
- Lay a slice of bacon on top of each piece of dough and twist 2-3 times to form a spiral, pinching the ends to adhere dough and bacon. Repeat with the remaining bacon and dough pieces. Cover and let rest for 30 minutes.
- Preheat oil in a deep fryer or large pot to 350°F.
- Deep fry the doughnuts, a few at a time, until the dough is fully cooked and the bacon is crisp, about 3 minutes. Transfer to a sheet pan lined with paper towels.
- Drizzle the doughnuts with Maple Glaze and let the glaze set before serving.

Steps:
- Preheat oven to 400°.
- In a large skillet, cook bacon pieces until crisp. Remove from skillet. Reserve the bacon fat.
- Place potatoes into a large bowl.
- Add egg yolks, 1 cup cheddar cheese and 1/2 of the cooked bacon.
- Mix well.
- With a pastry brush, brush the insides of a 6 cup jumbo muffin tin with some of the reserved bacon fat.
- Divide potato mixture between the 6 cups.
- Bake for 25 minutes. Remove from oven and sprinkle the 6 puffs with the remaining cheese and bacon.
- Bake an extra 5 minutes or until the cheese is melted and the puffs are pulling slightly away from the edges of the pan.
- Serve each Maple Bacon Tater Puff with 1 to 2 tablespoons maple syrup.

MAPLE TOFFEE BACON
Serve as part of an American breakfast or just enjoy on a buttered crumpet or piece of toast. The salty bacon and the sweet maple syrup together are a dream come true. Its also incredibly simple. - Spray a non stick pan with cooking oil spray and fry the bacon over a medium heat until patched with brown in all the right places.
- Once it is to your liking, add the maple syrup to the pan and turn the bacon over in it for literally a minute or two until thickened, being very careful not to burn the syrup.
- Take off the heat immediately and serve.
- My mouth is watering just writing this, seriously its amazing.

- Position oven racks in the top third and center of the oven; preheat oven to 400°.
- Line 2 large rimmed baking sheets with parchment paper or silicone baking mats.
- Scones--in a large bowl, whisk together the flours, brown sugar, baking powder, baking soda, and salt.
- Using a pastry blender or your fingertips, cut in the butter until the mixture is crumbly with some pea-sized pieces of butter.
- Add the dates and toss to coat with the flour mixture; repeat with the bacon.
- Whisk the buttermilk and 1/3 cup of maple syrup together in a measuring cup.
- Pour into the flour mixture and stir just until combined; do not overmix.
- Turn the dough out onto a lightly floured work surface and knead a few times.
- Roll out into a 1-inch thick round.
- Using a 2 1/2 inch round cookie cutter, pressing firmly to cut through the dates, cut out scones as close together as possible to avoid excess scraps.
- Arrange at least 2 inches apart on the prepared baking sheets.
- Gently press the scraps together, roll out again, and cut more scones.
- In a small bowl, whisk together the egg and remaining 1 tablespoon maple syrup.
- Brush the tops of the scones lightly with the egg mixture and sprinkle with the Demerara sugar.
- Bake, switching the positions of the baking sheets from top to bottom and front to back halfway through baking, until the scones are golden brown, about 20 minutes.
- Let cool on the pans for 10 minutes.
- Serve warm.
