1 cup mashed ripe bananas (, (1 to 2 medium))
1/2 cup vegetable oil
1/3 cup honey
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 cup pecans (, chopped)

Steps:

  • Preheat oven to 375 degrees and line a 12 cup muffin tin with muffin liners.
  • In a large bowl whisk together eggs, banana, oil, and honey.
  • Sift together flour, baking soda, cinnamon, nutmeg, and salt.
  • Whisk the dry ingredients into the wet ingredients until just combined.
  • Stir in the pecans (reserve some to sprinkle on top of muffin batter).
  • Scoop batter into muffin liners and top with remaining pecans.
  • Bake for 18-20 minutes or until a toothpick comes out clean.

3 VERY overripe bananas, mashed (about 1 1/3 cup mashed banana, make sure they are almost all the way brown)
⅓ cup honey
1 large egg, at room temperature
½ tablespoon vanilla extract
¼ cup olive oil
1/4 cup unsweetened vanilla almond milk (or milk of choice)
Dry ingredients
1 ¾ cup whole wheat pastry flour*
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
Mix-ins
½ cup chopped walnuts, plus ¼ cup chopped walnuts for sprinkling on top of muffins

Steps:

  • Preheat the oven to 350 degrees F. Line a muffin pan with liners and spray the inside of the liners to prevent sticking.
  • In a large bowl, mix together mashed bananas, honey, egg, vanilla, olive oil and milk until well combined. Add in whole wheat pastry flour, baking soda, cinnamon and salt and use a wooden spoon to mix together until the batter is just combined. DO NOT overmix. Fold in ½ cup chopped walnuts.
  • Divide batter evenly into muffin liners, sprinkle each muffin with chopped walnuts. Bake for 20-25 minutes or until the toothpick comes out with just a few crumbs attached.
  • Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling. Muffins are best served warm and even better the next day. Makes 12 muffins.

1 cup whole wheat flour
1/2 cup all-purpose flour
1 teaspoon baking soda
1/2 to 1 teaspoon ground nutmeg
1/4 teaspoon salt
2 eggs, lightly beaten
1 cup mashed ripe bananas (1 to 2 medium)
1/2 cup unsweetened applesauce
6 tablespoons honey
1/2 cup golden raisins

Steps:

  • In a large bowl, combine the first five ingredients. Combine the eggs, banana, applesauce and honey; stir into dry ingredients just until moistened. Fold in the raisins., Coat muffin cups with cooking spray; fill two-thirds full with batter. Bake at 375° for 15-18 minutes or until a toothpick comes out clean. 1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 overripe bananas
1 cup brown sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
2 eggs
1 teaspoon pure vanilla extract
1/2 cup pecans, chopped

Steps:

  • Preheat oven to 375 degrees F and lightly butter 2 muffin tins.
  • In a large bowl, combine the flour, baking soda, and salt; set aside. Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together like you mean it, for a good 3 minutes. Add the melted butter, eggs, and vanilla and beat well, scraping down the sides of the bowl once or twice. Mix in the dry ingredients just until incorporated. Fold in the nuts and the mashed bananas with a rubber spatula. Spoon the batter into the muffin tins to fill them about halfway. Give them a rap on the counter to get any air bubbles out.
  • Bake until a toothpick stuck in the muffins comes out clean, 18 to 20 minutes. Let cool for a few minutes before turning the muffins out. Serve warm or at room temperature.

1 stick butter, softened ( 1/2 cup )
1/2 c sugar
2 eggs
1/2 tsp vanilla extract
1 c mashed bananas
3/4 c honey
1 1/2 c flour
1 c quick oats
1 tsp each - baking powder & baking soda
1/2 tsp salt
1/2 c chopped walnuts

Steps:

  • 1. Preheat oven to 350 degree F. Line muffin tin with paper cups. In a large bowl, beat butter and sugar until fluffy. Add banana, eggs, vanilla and honey - beat until well blended. Mix flour, oats, baking soda, baking powder and salt. Stir the dry mixture into the wet, just until incorporated. Fold in the nuts.
  • 2. To each muffin cup fill 2/3 of the way full.
  • 3. Bake for 15 - 18 minutes or until golden and pick comes out clean. Cool in pan for 10 minutes, then remove and finish cooling on rack.

These muffins are delicious and have a great texture, and they are 100% healthy! No refined flour or sweeteners. We have a big family, so this recipe makes a lot of muffins, but it is easily halved for a smaller group. To make the muffins lower in fat, replace half of the oil with unsweetened applesauce. I also use "white whole-wheat" flour, which is softer than that made with red wheat (but has the exact same nutritional value).
