MAPLE-BOURBON APPLE BARBECUE RIBS
Homemade sweet BBQ sauce that is great on ribs.

Steps:
- Add oil to a large saucepan over medium-high heat. Add onion and apple and cook about 5-7 minutes or until apples and onions are soft, stirring occasionally.
- Add vinegar, cider (or juice), bourbon, and tomatoes with liquid to pot. Stir to combine. Stir in salt, garlic powder, black pepper, cinnamon, nutmeg, and allspice until combined.
- Bring mixture to a boil, then reduce heat to simmer for about 30-60 minutes or until reduced. Use an immersion blender to blend (or you can use a blender. SEE NOTES BELOW). Stir in maple syrup and liquid smoke to your liking. Cool completely and refrigerate at least a few hours or overnight.
- Prepare ribs as desired on grill (or in oven). During last few minutes of cooking, baste ribs with sauce.

MAPLE GLAZED RIBS
Steps:
- Preheat oven to 350 degrees F.
- Place ribs in a roasting pan and sprinkle with salt. Bake for approximately 25 minutes. After the ribs are golden brown, remove from the oven and baste with pure maple syrup.
- Lower the oven temperature to 250 degrees F. Tightly wrap the ribs with a foil tent, making sure not to put any holes in the foil in order to maintain moisture and flavor. Return to the oven for approximately 10 hours. When you open the foil to check the ribs (carefully avoiding the steam), you should be able to place a fork into the meat and it should immediately break off the bone. If there is any resistance or hardness, continue cooking in the oven for up to 2 hours longer.
- After cooking is complete, coat with another layer of maple syrup. If not serving immediately, wrap in plastic to keep moist until ready to use. To serve, cut each rack in half.

MAPLE APPLE RIBS
A nice change from BBQ ribs, these are sweet and succulent. You could cut the ribs up and make appetizers from this recipe, also!

- Heat oven to 450 F degrees.
- Place ribs, meaty side down, on large shallow pan and cover tightly with foil.
- Bake for 30 minutes.
- Meanwhile, combine syrup, jelly, soy sauce, chives, and dry mustard in a small saucepan and cook over low heat about 10 minutes until hot, stirring occasionally.
- Remove sauce from heat.
- Reduce oven temp to 350 F degrees and remove ribs from oven.
- Drain liquid from ribs, turn them meaty side up, and brush syrup mixture onto them.
- Continue baking uncovered for about 30 minutes.
- Brush the ribs with more syrup mixture, and bake an additional 15 to 20 minutes until ribs are tender and glaze is set.

- Heat oven to 450°F. Line 15x10x1-inch pan with foil. Place meaty sides down in foil-lined pan; cover with foil. Bake 30 minutes.
- Meanwhile, in 1-quart saucepan, stir together remaining ingredients. Cook over low heat 8 to 10 minutes, stirring occasionally, until hot and well blended. Remove from heat.
- Reduce oven temperature to 350°F. Remove ribs from oven. Uncover; drain liquid from ribs. Turn ribs meaty sides up; brush with 1/2 of syrup mixture.

FALL OFF THE BONE BAKED MAPLE GLAZED RIBS
These are SOOOO good; fall of the bone tender and a spicy sweet homemade BBQ sauce. The low temperature cooking aspect is easily changed based on how long you have (I've baked for 5 hours before at a lower temp) but this is the basic cooking time/temp required. If you extend the cooking time, just drop the temperature a bit. I have to admit that I never measure the maple syrup, I just pour over until coated.

Steps:
- Preheat oven to 425°F Rub seasoning salt onto ribs. Place ribs in a large roasting or baking pan.
- Bake about 30 minutes, until meat is browned.
- Reduce the oven to 300°F Pour maple syrup over the ribs.
- Place a large piece of aluminum foil over pan, tenting in the center and sealing the edges tightly. Bake 1 hour, 30 minutes.
- Meanwhile (for the BBQ sauce), combine the ketchup, brown sugar, vinegar, Worcestershire sauce, paprika, chili powder and garlic with 2 tbs water in a small saucepan.
- Bring to a boil over medium heat, stirring occasionally. Reduce heat and simmer 10 minutes.
- Pour BBQ sauce over ribs and cook, uncovered, for 30 minutes longer. Baste occasionally.
