MANILA CLAMS IN GARLIC AND BEER



Manila Clams in Garlic and Beer image

1 cup olive oil
6 cloves garlic, minced fine
2 red onions, chopped fine
8 dozen small Manila clams, well-scrubbed
3 tablespoons kosher salt
2 tablespoons freshly ground black pepper
1/2 bunch fresh basil leaves
2 cans beer (your choice)

Steps:

  • Heat oil in a large stock pot. Gently saute garlic and onions until light golden brown, being careful not to burn them. Place clams in pot and season with salt and pepper. Add fresh basil and pour in beer. Cover pot and bring to boil over medium heat, cooking until clams open. Remove clams to platter or large serving bowl, discarding any that do not open. Pour broth into a serving bowl for dipping with crusty bread.

2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 (2 inch) piece fresh ginger, peeled and grated
2 tablespoons oyster sauce
½ cup water
2 ¼ pounds clams in shell, scrubbed

Steps:

  • Heat the oil in a large pot with a lid over medium heat. Cook the onion and garlic in the hot oil until fragrant, 3 to 5 minutes. Add the ginger to the mixture and cook another 2 minutes. Stir the oyster sauce into the mixture; cover and cook another 2 minutes. Pour the water into the mixture, cover, and cook another 2 minutes. Add the clams; cover and cook until the majority of the clams have opened, about 5 minutes. Discard any clams which do not open. Serve immediately.

2 tablespoons olive oil
2 tablespoons finely sliced garlic
1/4 cup finely julienned basil leaves
1/2 pound Applewood-smoked bacon, diced and cooked crisp
18 Littleneck clams from Wellfleet, MA
18 Manila clams
1/2 bottle rose wine
1 quart canned clam broth
8 ounces (2 sticks) butter
1/2 cup fennel, finely diced
1 ounce preserved Meyer lemon peel, julienned
Salt and pepper
Meyer lemon juice, to adjust acidity

Steps:

  • Heat a large saucepan until moderately hot. Add olive oil. Saute fennel, bacon and garlic. Add the clams and deglaze with the rose wine. Pull the clams out as they open. Reduce the wine by 3/4. Add the clam broth and bring to a boil. Add the butter to the boiling liquid, continue to boil until the butter is incorporated. Just before serving, add the clams back to the sauce, along with the Meyer lemon peel, basil leaves, lemon juice, salt, and pepper.

1/2 cup extra virgin olive oil
2 teaspoons garlic chopped
3 pounds clams (Manila, cockles, or littlenecks)
1/2 white wine
1/2 teaspoon crushed red pepper, or more to taste
3 teaspoons ground fennel seeds
3 teaspoons lemon zest, finely chopped, yellow only
2 tablespoons lemon juice
1 1/2 cups tomatoes, cored, seeded, chopped into small pieces
1/4 cup parsley, chopped

Steps:

  • In a large saute pan cook the garlic in the olive oil until golden brown. Do not burn. Add the clams to the hot oil. **Be careful not to burn yourself. Add the wine, red pepper, fennel seed, lemon zest and juice.
  • Raise the heat to high and steam the clams for 6 to 8 minutes until all the clams are open. Arrange the clams in 6 bowls using a slotted spoon. Add the tomatoes and parsley to the boiling broth and cook for 1 minute. Ladle the broth over the clams and serve.

1- ounce olive oil
1-ounce olive oil
1 teaspoon shallots, chopped
1/2 teaspoon garlic, chopped
1 teaspoon roasted red peppers, finely diced and Sauteed
1/2 cup navy beans, fully cooked
1/2 cup white wine
1 teaspoon fresh lemon juice
7 Manila clams
1 teaspoon Italian parsley, chopped
Kosher salt
Freshly ground black pepper
1 bunch Italian parsley leaves
6 ounces olive oil
Kosher salt
Freshly ground black pepper

Steps:

  • Season grouper with salt and pepper. Heat oil in a nonstick pan. Sear grouper until golden brown. Turn fish and finish cooking;
  • Heat oil in small pot. Add shallots, garlic, peppers; sweat vegetables. Add beans, wine and lemon juice, bring to boil. Add clams, cover, and steam until they open. Add parsley, season with salt and pepper.;
  • Blanch parsley in boiling salted water. Shock parsley in ice water; drain. Puree parsley in blender until smooth paste. Add oil, puree until well blended. Season with salt and pepper.
  • Plate Presentation:
  • Spoon bean ragout into center of a bowl. Place clams around ragout. Place grouper on top of ragout. Drizzle with the parsley sauce.

2 ounces pancetta, thinly sliced, cut in thin strips (or prosciutto)
3 garlic cloves, minced
1/3 cup fresh parsley, chopped
1/4 teaspoon hot pepper flakes
1/2 cup bottled clam juice
1/2 cup dry white wine
2 lbs littleneck clams, scrubbed (or manila clams)
12 ounces linguine or 12 ounces fettuccine, cooked

Steps:

  • in a large deep heavy skillet, melt butter over med-high heat. stir fry pancetta until it turns golden, about 5 minutes. remove from pan, drain off all fat except 1 tablespoon.
  • add garlic 2 tablespoons of the parsley and hot pepper flakes, stir fry for 1 minute. pour in clam juice and wine, bring to a boil, add clams, cover and steam until open, about 5 minutes, discard any that do not open.
  • meanwhile in a large pot of boiling salted water, cook linguine until tender but firm. drain and add to pan along with pancetta, toss to coat well.
  • sprinkle with remaining parsley and serve.

2 tablespoons canola oil
3 garlic cloves, coarsely chopped
1 jalapenos or 1 serrano chili, seeded and cut into long, narrow strips
1 red bell pepper, seeded and cut into long, narrow strips (capsicum)
1 yellow bell pepper, seeded and cut into long narrow strips (capsicum)
3 lbs manila clams or 3 lbs littleneck clams, scrubbed
1 tablespoon thai roasted chili paste
1 tablespoon fish sauce
1/2 cup fresh horapah basil or 1/2 cup other basil leaves, torn if large
1/4 cup fresh mint leaves

Steps:

  • Place a large, deep frying pan or wok over high heat.
  • When the pan is hot, add the canola oil and swirl to coat the bottom of the pan.
  • When the oil is hot but not smoking, add the garlic.
  • Cook, stirring, until golden, about 30 seconds.
  • Add the chile pepper and the red and yellow bell peppers and cook, stirring constantly, until lightly cooked, 1-2 minutes.
  • Add the clams, discarding any that fail to close to the touch.
  • Stir to coat with the oil.
  • Cook, tossing and stirring, for 2 minutes, then stir in the chile paste and the fish sauce.
  • Cook, stirring frequently, until the clams have opened, 3-5 minutes longer.
  • Stir in the basil and mint.
  • Transfer the clams to a platter or serving bowl, discarding any that failed to open.
  • Serve immediately.
