- Preheat the oven to 350°F. Spray a 9 by 5 inch loaf pan with cooking spray and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt
- In a large bowl, whisk together the mashed banana and the eggs. Add the buttermilk, oil, sugar, and vanilla and mix well.
- Stir the dry ingredients into the wet ingredients until just combined. Do not over mix. Pour the batter into the prepared baking pan.
- Bake for 1 hour to 1 hour and 10 minutes. When a toothpick is inserted into the center of the bread, it should come out with moist crumbs but with no raw batter on it.
- Let the bread cool in the pan for 10 minutes. Remove the bread from the pan and place on a cooling rack to cool completely before slicing. Store covered in the refrigerator*.

- Proof yeast in warm water.
- Place the butter or margarine and buttermilk in a small saucepan. Heat slowly until butter or margarine has melted. Cool to lukewarm.
- Place sugar, salt, baking soda, buttermilk mixture, and yeast in large mixing bowl. Add 3 cups flour one cup at a time, and mix with the dough hook attachment of an electric mixer. Gradually add the remaining flour while continuing to mix. When dough is not sticky, turn out on a lightly floured surface. Knead for several minutes, until the dough is soft and smooth. Place in a greased bowl, and turn once. Allow to rise until doubled in size.
- Punch down the dough. Divide, and shape into 2 loaves. Place in two well greased 8 x 4 inch bread pans. Allow to rise until dough has risen one inch above pans.
- Bake in a preheated 375 degrees F (190 degrees C) oven for 30 to 35 minutes. Loaves are done when nicely brown and hollow sounding when thumped.

- Combine buttermilk, butter, and sugar in a mixing bowl. In a separate bowl, combine dry ingredients, including yeast. Whisk dry ingredients together to combine, then add to buttermilk mixture in the mixing bowl. (I use a Kitchenaid Mixer.) Mix ingredients until well combined. I like about a quarter sized amount of dough to be sticking on the very bottom. If your dough looks a bit dry, add in another splash of buttermilk. Once you've achieved a good consistency, mix the dough on low for about 6-7 minutes. (Or knead by hand about 10 minutes.) Proper kneading is critical to great textured homemade bread!
- Once dough is done kneading, cover and let rise in a warm place for about 1 hour; until dough has doubled in size.
- Punch dough down and knead several times. Shape dough (I like to roll mine, then tuck the ends under) and place in a greased bread loaf pan. Place dough back in the warm spot and let it rise for another 30-45 minutes.
- Preheat the oven to 350 degrees F. Bake dough for about 30-35 minutes- until top is golden brown. Let cool and slice.
- *You can substitute regular milk + lemon juice for buttermilk, but you won't quite get the full texture and flavor of this bread. So add buttermilk to the grocery list; you'll love it!

- Meanwhile, heat the buttermilk and butter over low heat until the butter melts.
- The mixture will look badly curdled- don't worry, that's what happens when buttermilk is heated.

- 1. Generously butter two glass loaf pans.
- 2. Bloom yeast in the warm (about 110 degrees) water and ginger for about 5 minutes or until yeast is starting to look a little foamy.
- 3. In a large bowl, combine the lukewarm buttermilk, sugar, salt, baking soda, lukewarm melted butter, and the yeast mixture.
- 4. Add 3 cups of the flour and mix on low speed of an electric mixer for 5 minutes.
- 5. Add the remaining 3 cups of flour one cup at a time and mix with dough hook until mixture comes away from the sides of the bowl.
- 6. Turn out onto a floured surface and knead until smooth and elastic (about 10 minutes) or knead with dough hook of a stand mixer for about 10 minutes on low speed.
- 7. Place dough into a large well greased bowl, turning the dough to grease the top, cover, and let rise for about 90 minutes or until doubled in volume.
- 8. Divide dough into two equal pieces, shape and place in the two buttered loaf pans. Oil tops and cover loosely with plastic wrap (oiled to prevent its sticking to the bread) and let rise until doubled in volume (about an hour this time).
- 9. Brush with 1 egg mixed with 1 teaspoon water for a nice glossy top.
- 10. Bake at 400 degrees F for 15 minutes. Cover loaves loosely with a sheet of aluminum foil (IMPORTANT do not skip this step) and continue baking for another 15 minutes. Remove from oven, let cool in pans for about 5 minutes, then turn out onto a cooling rack.

- Have all ingredients ready at room temperature. Bring a small to medium pot of water to a boil. Boil potatoes until done. Add hot potatoes and butter to a stand mixer and stir well.
- Add 4 tsp yeast + 2 cups buttermilk + 2 beaten eggs + 2 Tbsp sugar + 1 ½ tsp salt and mix well.
- Gradually stir in bread flour until the dough is moist but not sticky. Using the dough hook, knead on low to medium speed until the dough is smooth and elastic. Transfer to an oiled bowl and turn it over to coat with oil. Cover with plastic wrap and let the dough rise at room temperature until it's doubled in volume, 1 to 1 1/2 hours. - When the dough has doubled in size, lightly grease two 9 x 5 inch loaf pans. Punch the dough down, divide in half and form into two loaves, placing them seam-side down in the pan. (If you don't have loaf pans, you can free-form an artisan loaf on a cookie sheet).

EASY BUTTERMILK BREAD

- Butter a 9-by-5-by-3-inch loaf pan, using about 1 tablespoon of the butter.
- In a large mixing bowl (or in the bowl of a stand mixer, if you have one), combine 1 ½ cups (180 grams) of the flour with the sugar, salt, and yeast.
- In a small saucepan, heat the buttermilk and 2 tablespoons of the butter over medium heat until the butter is melted and the mixture reaches about 130 degrees Fahrenheit on an instant-read thermometer (Don't worry if you don't have an instant-read thermometer. The mixture should be warm, but not hot to the touch).
- Remove from the heat.
- Using the stand mixer fitted with the flat beater or a hand-held electric mixer, add the warm buttermilk mixture to the flour mixture and combine well.
- Add the egg and beat 1 minute more.
- Add the remaining 1 3/4 cups (210 grams) flour and continue mixing for 5 minutes. If you are using a hand-held mixer, you'll need to scrape the dough off the beaters several times.
- After a few minutes, scrape it onto a board, wet your hands and, without drying them, knead the dough another minute or two. To be honest, the dough will be quite sticky and floppy at this point, so it's more flopping it on top of itself a few times than it is actually kneading. You may need to re-wet your hands to keep the dough from sticking too much.
- Transfer the dough into the prepared loaf pan and spread it out to the corners.
- Cover loosely with a clean dishtowel and place the pan in a warm place (like a sunny windowsill, provided the day is not too hot, or in the oven with the light turned on if your house is chilly) and let rise about 1 hour, until the dough rises above the top edge of the pan.
- While the dough is rising, preheat the oven to 375ºF.
- When dough has risen sufficiently, make a shallow cut lengthwise down the center of the loaf (this keeps it from pulling away from the sides of the pan as it bakes).
- Melt the remaining tablespoon of butter and brush it over the loaf.
- Bake in the center of the preheated oven for about 35 minutes, until the top is firm and lightly browned.
- Place the pan on a wire rack and let cool 10 minutes.
- Remove bread from pan and cool completely on the rack before slicing.

BUTTERMILK BREAD
This is an authentic German bread recipe found on chefkoch.de. My husband, being German, finds North American bread recipes to "sweet" for sandwiches. This bread is very good and quite healthy. You can use either white flour, whole wheat, ry or whole grain. I prefer using whole grain. If you substitute rye flour you may have to use more yeast and the rising time for the bread will also be longer. Preparation time does not include the length of time for the bread to raise. This a simple recipe and good for beginners.

- Heat oven to 200 degrees. Once temperature reaches 200, maintain heat for 10 minutes then turn oven off.
- In a 4 cup liquid measuring cup whisk together buttermilk, water, honey and melted butter. Using a stand mixer fitted with a dough hook combine flour, yeast, and salt on low speed. Slowly add milk mixture and let the dough come together about 2 minutes. Increase speed to medium and knead until dough is smooth, about 10 minutes. Scrape the bowl down as needed. Transfer dough to the lightly floured counter and knead by hand to form smooth, round ball.
- Place dough in large lightly greased bowl and cover with greased plastic wrap. Let rise in warm oven for 40 to 50 minutes until doubled in size.
- Grease 9 x 5 loaf pan. Transfer dough to lightly floured surface and press into a rectangle and 1 inch thick and no longer than 9 inches, long side facing you. Roll dough towards you into a firm cylinder, keep the roll tight by tucking it under itself as you go. Turn loaf seam side down in the pan, pressing gently into corners. Cover loaf loosely with plastic and let rise at room temperature for 30 minutes. The dough should barely spring back when poked gently.
