I am pretty sure that I found this recipe on the Betty Crocker website a few years ago. It is a nice alternative to your regular cheesecake!! Hope you enjoy!

1 pkg graham crackers
2/3 c hot water
1 pkg (4 oz) sugar free orange jello mix
1 c low fat cottage cheese
8 oz cream cheese, low-fat
2 c fat free cool whip

Steps:

  • 1. Crush graham crackers and press in bottom of 9 inch springform pan sprayed with cooking spray
  • 2. Stir boiling water in dry jello mix in large bowl and mix for 2 minutes or until completely dissolved. Cool 5 minutes
  • 3. Pour jello mix into blender. Add both cheeses and blend until smooth.
  • 4. Pour mixture into large bowl and gently stir in whipped topping
  • 5. Pour in pan and smooth.
  • 6. Allow to cool and set up in fridge about 4 hours or until set. remove rim of pan before serving. Enjoy!!

With so many people counting carbs these days, this is a wonderful dessert which is low in carbs. I got this from a pamphlet put out by Kraft Foods ! Try it... delicious!

1/4 cup graham wafer crumbs
2/3 cup boiling water
1 (10 1/4 g) package sugar-free orange gelatin
1 cup 1% fat cottage cheese
1 (250 g) container light cream cheese spread
2 cups Cool Whip Lite, thawed

Steps:

  • Sprinkle the graham wafer crumbs onto the bottom of an 8" or 9" springform pan, or a 9" pie plate sprayed with no stick cooking spray.
  • Stir boiling water into orange jelly powder in a large bowl, stirring for at least 2 minutes until the powder is completely dissolved.
  • Cool for 5 minutes.
  • Pour this into a blender, then add cheeses.
  • Cover and blend on medium speed until well blended.
  • (Scrape down sides of the blender occasionally).
  • Pour into a large bowl.
  • Add whipped topping and stir gently until well blended.
  • Pour into the prepared pan and smooth the top with a spatula.
  • Refrigerate for four hours or until set.
  • If using a springform pan, remove side of pan just before serving.

1 cup orange juice, from the refrigerated section. (Using fresh-squeezed juice makes for an even more delicious treat, do not use canned juice.)
1/2 cup milk (not fat-free or skim)
1 1/2 tablespoons sugar
1/2 teaspoon pure vanilla extract
1 cup ice cube
orange slice (optional)

Steps:

  • In blender container combine orange juice, milk, sugar and vanilla. Cover; blend until mixed.
  • With the blender running, add ice cubes, 1 at a time, through lid opening.
  • Blend until smooth. Pour into tall glasses. Garnish on the rim with orange slices, if desired.

5 tablespoons unsalted butter, melted
1/4 cup sugar
4 (8 ounce) packages cream cheese, softened
1 cup sugar
1/2 cup heavy whipping cream
1/4 cup lemon juice
2 tablespoons all-purpose flour
1 tablespoon lemon zest
2 1/2 teaspoons vanilla extract
3/4 teaspoon lemon extract
5 eggs, lightly beaten

Steps:

  • Preheat oven to 325 degrees.
  • Grease 10 inch springform pan and wrap foil on bottom.
  • In a small bowl, combine the cracker crumbs, butter, and sugar.
  • Press onto bottom and 2 inches up sides of pan.
  • Place pan on a baking sheet.
  • Bake for 10 minutes.
  • Cool on wire rack.
  • In large bowl, beat cream cheese and sugar until smooth.
  • Beat in cream, juice, flour, zest, extracts, and food coloring if desired.
  • Add eggs; beat on low speed just until combined.
  • Pour into crust.
  • Return pan to baking sheet.
  • Bake for 55 to 65 minutes OR until center is almost set.
  • Cool on a wire rack for 10 minutes.
  • Carefully run a knife around edge of pan to loosen; cool 1 hour. Leave sides on pan until serving.
  • Refrigerate overnight.
  • Remove sides of pan.

This is a family favorite. New York style cheesecake with a yummy Oreo cookie crust. Found this recipe in Sunset around 30 years ago. TIP: If you whirl the cream cheese mixture in a food processor, the filling will be thin enough to allow the cookies to float to the top. If prepared with a mixer, filling will keep the cookies in place.

1 (1 1/4 lb) package chocolate sandwich style cookies (I use Oreos)
1/3 cup butter
4 (8 ounce) packages cream cheese
1 cup sugar
1/3 cup whipping cream
6 large eggs
2 tablespoons all-purpose flour
2 teaspoons vanilla

Steps:

  • For the crust:.
  • In a food processor whirl 1/2 package of the cookies, including the filing, until they form fine crumbs.
  • Mix in melted butter.
  • Scoop crumb/butter mixture into the bottom of a 9 inch cheesecake pan with removable bottom and press crumbs evenly over bottom of pan and about 1/2 inch up sides.
  • Chill crust to firm, about 20 minutes.
  • For Filing:.
  • Mix cream cheese, sugar and whipping cream at medium speed until smooth.
  • Add eggs, flour and vanilla. Beat again to blend.
  • Pour 1/2 the cream cheese mixture into chilled crust.
  • Break remaining cookies in half and scatter over mixture, overlapping cookies, if necessary, to use all.
  • Pour remaining cream cheese mixture over the cookie layer.
  • Bake cake in a 300 degree oven until cheesecake is golden on top and jiggles only slightly in center when gently shaken, about 1 hour and 20 minutes
  • Take cake from oven a let cool on a rack. Cover and chill until cold, at least 4 hours to overnight.
  • Before serving, run a knife between cake and pan sides; remove rim.

If you like crispy, battered zucchini, this is the lowfat alternative for you!! I could not believe it, but they came out crispy!! The egg whites are the secret. The recipe below is straight off the WW website. The flour definitely needs MORE seasoning though - garlic? Cayenne? Salt after they're out of the oven? I will be perfecting this for our family's tastes, but these zukes are going into our regular rotation!! 1 teaspoon italian seasoning
1 1/2 tablespoons all-purpose flour

2 large egg whites, whipped until frothy (almost soft peaks)

Steps:

  • Preheat oven to 500ºF. Coat a baking sheet with cooking spray. In a small bowl, mix together Italian seasoning, flour and salt. Place bread crumbs in another small bowl.
  • Dredge a zucchini fry in flour mixture and then dip into egg whites; dredge in bread crumbs. Place coated zucchini on prepared baking sheet and repeat with remaining ingredients; liberally coat with cooking spray.
