HONEY MUSTARD-GLAZED HAM

Steps:
- Adjust the oven racks to accommodate a large roasting pan and preheat the oven to 350 degrees F. Fit the pan with a shallow rack.
- Unwrap the ham and rinse it in cold water. Place it on the rack in the roasting pan. Cover the pan with aluminum foil, leaving a 2-inch opening to allow steam to escape. Bake the ham for half the estimated cooking time, about 3 hours. (Total cooking time is about 20 minutes per pound.)
- Add the brown sugar and honey to a saucepan and cook over medium heat until the mixture is smooth and the sugar is dissolved. Remove from the heat and stir in the mustard.
- Pour the mixture over the ham. Continue baking the ham, uncovered, basting occasionally with the drippings in the roaster, for the remaining time, about 3 more hours. Check for doneness by inserting a meat thermometer into a meaty part of the ham, avoiding any fat or bone. The thermometer should register 160 degrees F.
- Allow the ham to stand 15 minutes before slicing. This allows the juices inside the ham to set.

- Combine mustard, maple syrup, apple cider vinegar and hot pepper sauce in a pot. Bring to boil and reduce by half or until slightly thickened. Stir in soy sauce. Brush over ham.
- Preheat oven to 350F (180C). Trim hard outer skin from surface of ham. Shave off the fat leaving about 1/4 inch (5 mm) layer. With a sharp knife make a cross hatch pattern over surface of ham.
- Place ham in roasting pan. Brush with more glaze and dust with pepper. Bake for 1 hour and 15 minutes, basting every 15 minutes with more glaze, or until ham is cooked through.
- Serve warm or at room temperature. Carve into slices for serving.

- Make the glaze: stir all glaze ingredients together in a bowl until blended; set aside (can be made ahead of time and stored in airtight container in the refrigerator for up to two weeks).
- Preheat oven to 300°; line a large roasting pan with foil or a silicone baking liner.
- Remove ham from its packaging and drain off any juices.
- Place ham in prepared pan, flat side down, making sure to remove the little plastic disk covering the bone, and cover the ham and pan completely with foil.

- Bake ham in a roasting pan at 350º for 1-1/2 hours.
- In small saucepan, mix brown sugar, cornstarch and salt.
- Stir in pineapple, honey and mustard.
- Cook over medium heat, stirring constantly, until mixture thickens and boils.
- Boil and stir 1 minute.

MONTE'S HAM
My husband wanted ham for Christmas, but the local meat market sold out early of honey glazed hams. I decided to try baking my own ham and found this recipe on the internet. I adapted it just a bit using regular mustard and honey instead of Dijon mustard. It turned out great and my husband says he prefered it cooked this way over the honey baked ham! It wasn't near as salty and had a wonderful flavor! Plus, the cost of preparing this ham was about 1/3 of the cost of a Honey Baked Ham!

- Trim outer skin and excess fat from ham.
- Place ham, meat side down in a large roasting pan and score, making crosshatch incisions with a sharp knife.
- Turn ham back on its side.
- Roast at 300F for 2 hours.
- Remove from oven.
- Mix together the orange marmalade, mustard, honey, and brown sugar.
- Stud ham with cloves, either by inserting one clove at the intersection of each crosshatch or by inserting in the center of each square.
- Brush ham with glaze.
- Increase oven temperature to 350F and return ham to oven for about 1 1/2 hours, or until themometer inserted near bone (but not touching bone) reaches 160°F.
- Glaze the ham at least 3 times while baking.
- When ham is done, transfer to a large cutting board or platter and allow to rest for 30 minutes before carving.
