1/2 cup sugar
1 cup nonfat cottage cheese
1 cup nonfat sour cream
2 tablespoons dark rum
1 (8 ounce) carton low-fat vanilla yogurt
1 (8 ounce) package neufchatel cheese
1 1/4 cups hot water
1 tablespoon instant espresso coffee powder
1/2 teaspoon instant espresso coffee powder
40 ladyfingers
1/2 teaspoon unsweetened cocoa

Steps:

  • Combine first 6 ingredients in mixer or food processor. Mix until smooth; set aside.
  • Mix together hot water and espresso granules in a small bowl. Split ladyfingers in half, lenthwise. Quickly dip 20 ladyfinger halves, cut side down, into espresso. Place dipped side down in the bottom of a 9-inch square baking dish. Spread 2 cups of cheese mixture over ladyfinger halves. Repeat procedure with remaining ladyfingers, espresso, and cheese.
  • Place one wooden pick in each corner and one in the center of tiramisu (to prevent plastic wrap from sticking to cheese mixture) and cover with plastic wrap.
  • Refrigerate 8 hours or overnight. Remove wood picks and sprinkle with cocoa.

1/2 cup sifted powdered sugar
3 tablespoons coffee liqueur
1 (8 ounce) container frozen light whipped dessert topping, thawed
1/4 cup fat free sour cream
2 tablespoons coffee liqueur
8 inches angel food cake
1/4 cup strong black coffee
2 tablespoons coffee liqueur

Steps:

  • For filling, in a large bowl combine the cream cheese, powdered sugar, and the 3 tablespoons liqueur. Beat with an electric mixer on medium speed until blended and smooth. Stir in 1/2 cup of the whipped dessert topping. Set aside.
  • For the frosting, in a medium bowl combine the remaining whipped dessert topping, the sour cream, and 2 tablespoons liqueur. Set aside.
  • Using a serrated knife, cut the angel food cake horizontally into 3 layers. Place 1 layer on a serving platter and the remaining 2 layers on large dinner plates. With a long-tined form or a skewer, poke holes in the tops of all 3 layers.
  • In a small bowl combine the coffee and 2 tablespoons liqueur; drizzle over all 3 layers.
  • Spread the bottom layer with half of the filling. Add the middle layer and spread on the remaining filling. Add the top layer. Frost cake with frosting.
  • Serve immediately, or cover and chill in the refrigerator for up to 4 hours.

If you have viewed my other recipes, you might have picked up that I favor low fat, low sugar recipes. Some people might think ---why? Where is all the fun of eating gone? If you try this recipe, you will quickly discover that flavor and low calories, low fat can go together. This is becoming my signature dessert. My family raved about it and yours will, too! The majority of the ingredients and technique came from a Nilla Wafers cookie box but I have modified it to the "light" side.

3 cups skim milk
2 sugar-free instant pudding mix, vanilla sugar free

48 vanilla wafers
4 ounces strong black coffee, cooled
2 ounces dark chocolate, squares, grated
1 cup berries

Steps:

  • Beat cream cheese in large bowl with electric mixer until creamy. Gradually beat in milk. Add dry pudding mixes; mix well (about 2 minutes). Stir in 2 cups of whipped topping.
  • Place 24 of the wafers in 2 1/2-qt. bowl; drizzle with half of the coffee. Top with half each of the pudding mixture and choclate . Repeat all layers.

Making this classic Italian dessert is surprisingly easy. We start the custard with a traditional Marsala-flavored zabaglione -- a cooked mixture of egg yolks and sugar. Then we lighten it with tangy mascarpone cheese, which provides just the right creamy, mousse-like texture. Once assembled, the ladyfingers soften sufficiently after 4 hours in the refrigerator, but if you can wait longer, the flavors will meld even more.

4 large egg yolks
1/2 cup sugar
2 tablespoons sweet Marsala
Two 8-ounce containers (16 ounces) mascarpone cheese
4 tablespoons instant espresso powder
3 to 4 tablespoons sweet Marsala (see Cook's Note)
1 teaspoon plus 1 tablespoon unsweetened cocoa powder, for dusting
One 7-ounce package ladyfingers, such as Savoiardi (see Cook's Note)

Steps:

  • For the mascarpone custard: Add the egg yolks, sugar and Marsala to a medium heatproof bowl and whisk to combine. Set the bowl over a medium saucepan of gently simmering water (do not allow the bowl to touch the water). Whisk constantly until the mixture is pale, hot to the touch and has doubled in volume, 4 to 6 minutes, scraping down the sides of the bowl occasionally with a rubber spatula. (This can be done with an electric mixer to speed up the process.) Remove from the heat and continue whisking until slightly cooled, about 1 minute. Whisk in the mascarpone cheese until combined. Refrigerate until ready to assemble.
  • To assemble: Stir together 1 1/4 cups hot water, espresso powder and 3 to 4 tablespoons Marsala in a liquid measuring cup. Evenly divide the mixture between two medium bowls. Dust the bottom of an 8-by-8-inch baking dish with 1 teaspoon cocoa powder.
  • Working one at a time, dip half of the ladyfingers into one bowl of the espresso mixture for 2 seconds per side, until soaked but not soggy. Arrange them over the cocoa powder in one layer, breaking up as needed to fill in any gaps. Pour any remaining liquid from the first bowl over the layer of ladyfingers. Spread half the mascarpone custard over the ladyfingers. Repeat the process with another layer of ladyfingers and the remaining bowl of espresso mixture, then spread with the remaining mascarpone custard.
  • Cover with plastic wrap and refrigerate for at least 4 hours or up to overnight. Sift the remaining 1 tablespoon cocoa powder over the top just before serving.

2 extra-large eggs
3 tablespoons light sour cream
8 ounces light cream cheese
1 11-ounce loaf angel food cake, cut into 1/2-inch slices
1/2 cup strong brewed espresso or strong coffee
2 tablespoons dark rum
1 ounce bittersweet (not unsweetened) or semisweet chocolate, grated

Steps:

  • Combine Marsala, 1/4 cup plus 1 tablespoon sugar and eggs in top of double boiler. Whisk mixture over gently simmering water until thickened and foamy and mixture registers 160°F. on candy thermometer, about 2 minutes. Remove from over water; whisk in light sour cream. Cool to room temperature.
  • Beat cream cheese until light and fluffy. Beat in 1/3 of egg mixture. Fold in remaining egg mixture in 2 additions.
  • Line bottom and sides of 9x5-inch loaf pan with plastic wrap. Line bottom of prepared pan with angel food cake slices, trimming cake to fit bottom evenly. Combine coffee, rum and remaining sugar in small bowl. Brush cake in pan generously with coffee mixture. Pour filling over cake in pan. Brush enough remaining cake slices to cover filling lightly with coffee mixture. Place slices atop filling, coffee side down, trimming cake to fit pan evenly. Brush top of cake generously with coffee mixture. Reserve remaining cake and coffee mixture for another use. Sprinkle top with grated chocolate. Cover and refrigerate 8 hours or overnight. Serve.

  • In a large bowl, using an electric mixer with whisk attachment, beat egg yolks and sugar until thick and pale, about 5 minutes. Add mascarpone cheese and beat until smooth. Add 1 tablespoon of espresso and mix until thoroughly combined.
  • In a small shallow dish, add remaining espresso and rum. Dip each ladyfinger into espresso for only 5 seconds. Letting the ladyfingers soak too long will cause them to fall apart. Place the soaked ladyfinger on the bottom of a 13 by 9 inch baking dish, breaking them in half if necessary in order to fit the bottom.
  • Spread evenly 1/2 of the mascarpone mixture over the ladyfingers. Arrange another layer of soaked ladyfingers and top with remaining mascarpone mixture.
  • Cover tiramisu with plastic wrap and refrigerate for at least 2 hours, up to 8 hours.
  • Before serving, sprinkle with chocolate shavings.

Steps:

  • Whisk the egg yolks and sugar in the bowl of an electric mixer fitted with the whisk attachment on high speed for about 5 minutes, or until very thick and light yellow. Lower the speed to medium and add 1/4 cup rum, 1/4 cup espresso, and the mascarpone. Whisk until smooth.
  • Combine the remaining 1/4 cup rum and 1 1/4 cups espresso in a shallow bowl. Dip 1 side of each ladyfinger in the espresso/rum mixture and line the bottom of a 9 by 12 by 2-inch dish. Pour half the espresso cream mixture evenly on top. Dip 1 side of the remaining ladyfingers in the espresso/rum mixture and place them in a second layer in the dish. Pour the rest of the espresso cream over the top. Smooth the top and cover with plastic wrap. Refrigerate overnight.

  • Split the lady fingers in half, and line the bottom and sides of a large glass bowl. Brush with coffee liqueur. Spoon half of the cream filling over the lady fingers.   • To make the chocolate curls, use a vegetable peeler and run it down the edge of the chocolate bar.

1/2 cup Kahlua or 1/2 cup Tia Maria
250 g ladyfingers
500 g light cream cheese
1/4 cup caster sugar
1/2 cup prepared low-fat custard
1/2 cup light cream
1/2 teaspoon cocoa, for dusting

Steps:

  • Combine coffee and 1/4 cup Kahlua or Tia Maria. Dip 1/3 sponge fingers into this and arrange in a single layer in a 20cm square casserole dish.
  • Beat cream cheese, sugar & remaining liqueur together until well combined. Gradually fold in the custard & cream.
  • Spread a third of the cream cheese mixture over the sponge fingers. Repeat layers twice more finishing with cream cheese mixture.
  • Dust with cocoa. Refrigerate overnight to become firm and allow flavours to develop.

Substitute heavy mascarpone for ricotta cheese and fat-free Greek yogurt for a healthier version without compromising on flavour

Steps:

  • Make the coffee and leave it to cool down slightly in a shallow dish (I use a large tupperware). You can add baileys to the mix if you want.
  • Beat the egg yolks with the sugar until you have a pale and well combined mix. Add the ricotta and the yogurt after draining them of any excess water and mix well
  • Whisk the egg whites until firm and add them to the rest of the mix delicately, so not to lose the fluffyness
  • Dip half of the the savoiardi in the shallow dish with the coffee, very briefly, on both sides. Do only one biscuit at the time, so to avoid leaving them in the coffee for too long or they'll go soggy. Transfer them to a rectangular baking dish. (I use a 28x20cm ceramic dish). Spoon over a little more than half of the cheese and yogurt mix
  • Dip the remaining half of the biscuits in the coffee and layer on top of the mix (dispose the biscuits perpendicular to the layer underneath, so it won't fall apart when you cut it). Spoon over the rest of the mix.
  • Cover with foil and leave in the fridge to firm up for a couple of hours. Dust with cocoa powers through a small sieve before serving
  • Calories per portion: 244
  • This dish can be made 1 or even 2 days in advance as the flavours intensify the longer you leave them. You can also vary the quantities of the ricotta and yogurt mix, using more of one and less of the other as long as you end up with 600gr in total.

1 ¼ cups water
1 (3.3 gram) packet instant coffee (such as Starbucks VIA®)
¾ cup water
3 tablespoons coffee-flavored liqueur

½ cup heavy cream
2 tablespoons butter, softened
1 (3.5 ounce) package instant French vanilla pudding mix

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place cake mix and 1 1/4 cup of water in a large glass or metal mixing bowl; beat with an electric mixer on low speed for 30 seconds to mix the ingredients. Change mixer speed to medium and beat 1 minute more.

Done correctly, a classic tiramisù can be transcendent. A creamy dessert of espresso-soaked ladyfingers surrounded by lightly sweetened whipped cream and a rich mascarpone, tiramisù relies heavily on the quality of its ingredients. If you don't have a barista setup at home, pick up the espresso at a local coffee shop, or use strongly brewed coffee. As for the ladyfingers, make your own or buy them, but keep in mind that store-bought varieties can range from soft and spongy (like angel food cake) to hard and crunchy (like biscotti). Both kinds will work here, but if you're using the softer variety, stick to a light brushing of espresso, instead of a deep dip.

  • Using an electric mixer in a medium bowl, whip together egg yolks and 1/4 cup/50 grams sugar until very pale yellow and about tripled in volume. A slight ribbon should fall from the beaters (or whisk attachment) when lifted from the bowl. Transfer mixture to a large bowl, wiping out the medium bowl used to whip the yolks and set aside.
  • In the medium bowl, whip cream and remaining 1/4 cup/50 grams sugar until it creates soft-medium peaks. Add mascarpone and continue to whip until it creates a soft, spreadable mixture with medium peaks. Gently fold the mascarpone mixture into the sweetened egg yolks until combined.
  • Combine espresso and rum in a shallow bowl and set aside.
  • Using a sifter, dust the bottom of a 2-quart baking dish (an 8x8-inch dish, or a 9-inch round cake pan would also work here) with 1 tablespoon cocoa powder.
  • Working one at a time, quickly dip each ladyfinger into the espresso mixture -- they are quite porous and will fall apart if left in the liquid too long -- and place them rounded side up at the bottom of the baking dish. Repeat, using half the ladyfingers, until you've got an even layer, breaking the ladyfingers in half as needed to fill in any obvious gaps (a little space in between is O.K.). Spread half the mascarpone mixture onto the ladyfingers in one even layer. Repeat with remaining espresso-dipped ladyfingers and mascarpone mixture.
  • Dust top layer with remaining tablespoon of cocoa powder. Top with shaved or finely grated chocolate, if desired.
  • Cover with plastic wrap and let chill in the refrigerator for at least 4 hours (if you can wait 24 hours, all the better) before slicing or scooping to serve.

1 package (3.4 ounces) instant vanilla pudding mix
1 cup heavy whipping cream
3 tablespoons confectioners' sugar
28 soft ladyfingers, split
2-1/2 teaspoons instant coffee granules
1/2 cup boiling water
1 tablespoon baking cocoa

Steps:

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand until soft-set, 2 minutes. In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until soft peaks form. Fold into pudding; cover and refrigerate., Arrange half of the ladyfingers cut side up in an 11x7-in. dish. Dissolve coffee granules in boiling water; drizzle half over the ladyfingers. Spread with half of the pudding mixture. Repeat layers. Sprinkle with cocoa. Refrigerate until serving.
