These hearty bars are a fruity and flavorful treat!

1 3/4 cups chopped dried apricots
3/4 cup orange juice
3/4 cup water
1 cup plus 2 tablespoons Gold Medal™ whole wheat flour
1/2 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
3/4 cup packed brown sugar
2 tablespoons vegetable oil
2 tablespoons frozen orange juice concentrate, thawed
1 teaspoon vanilla
2 teaspoons butter or margarine, softened

Steps:

  • In 1-quart saucepan, cook all filling ingredients, stirring constantly, just to boiling over medium heat. Reduce heat to low; cover and simmer 25 to 30 minutes, stirring occasionally, until apricots are tender and filling has thickened. Cool.
  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray. In medium bowl, mix 1 cup whole wheat flour, the all-purpose flour, baking powder, baking soda and salt. In large bowl, beat egg, brown sugar, oil, orange juice concentrate and vanilla with electric mixer on medium speed until smooth. Stir in flour mixture until blended. Reserve 1/2 cup dough mixture for topping.
  • Pat remaining dough in pan. Spread filling over dough. Add remaining 2 tablespoons whole wheat flour and the butter to reserved dough mixture. With pastry blender or fork, mix until crumby; sprinkle over filling.
  • Bake 25 to 30 minutes or until top is golden and firm. Cool completely, about 1 hour. For bars, cut into 4 rows by 4 rows.

3/4 cup butter, at room temperature
1 cup sugar
1 egg
1 cup flour*
1/4 teaspoon baking powder
1 1/3 cups coconut, I used sweetened Angel Flake
1/2 cup slivered almonds plus more to sprinkle over bars
1/2 teaspoon vanilla
13-ounce jar apricot preserves (may use other flavors)

Steps:

  • Preheat the oven to 350º. Line 9 x 13 baking pan with non-stick foil (or regular foil sprayed with cooking spray).
  • In large mixing bowl cream butter and sugar. Add egg, mix well. Mix together the flour and baking powder and add to the butter mixture. Add coconut, nuts and vanilla, blending well.
  • Press two-thirds of the dough into the prepared baking pan. Spread with preserves. Crumble remaining dough over top of preserves. Sprinkle with a handful more of almonds if desired.
  • Bake at 350° for 30 - 35 minutes or until golden brown. Cool and cut into squares.

  • Preheat oven to 350 degrees F. In a medium bowl combine flour, oats, brown sugar, and baking soda. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Set aside 1/2 cup of the crumb mixture.

Originally taken from BH&G "New Cook Book", 1989--now that I live overseas, I love these older cookbooks because so many of the recipes are still "from scratch" and don't use convenience products that are too expensive or haven't come here yet. Thanks to my Grams for sending it to me when I moved! :)

  • In mixing bowl, combine flour, oats, brown sugar, and baking soda.
  • Cut in margarine/butter until mixture resembles coarse crumbs.
  • Reserve 1/2 cup of the flour mixture.

8 dried apricots, chopped into 1/4-inch pieces (about 1/3 cup)
1 3/4 cups all-purpose flour
1 packed cup light brown sugar
1 teaspoon ground cinnamon
3/4 teaspoon fine sea salt
3/4 teaspoon baking soda
1 3/4 cups old-fashioned oats
1 cup (4 ounces) coarsely chopped walnuts
1 cup (2 sticks) unsalted butter, melted
1 egg, at room temperature, beaten
1 teaspoon pure vanilla extract

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Spray a 9 by 13 by 2-inch metal baking dish with vegetable oil cooking spray. Line the bottom and sides of the pan with parchment paper. Spray the parchment paper with vegetable oil cooking spray and set aside.
  • Filling: In a small bowl, mix together the jam and the apricots. Set aside.
  • Crust: In a large bowl, whisk together the flour, sugar, cinnamon, salt and baking soda. Stir in the oats and walnuts. Add the butter, egg and vanilla and stir until incorporated.
  • Using a fork or clean fingers, lightly press half of the crust mixture onto the bottom of the prepared pan. 1 1/4 c all-purpose flour
1 1/4 c quick-cooking oats
1/2 c sugar
3/4 c butter, melted

1 jar(s) apricot preserves (10 oz.)
1/2 c flaked coconut

Steps:

  • 1. Heat oven to 350 degrees.
