2 ripe medium-size mangoes or 2 cups frozen mango pulp
3/4 cup sugar
water
3/4 cup cracked ice or 6 ice cubes

Steps:

  • If using fresh mangoes, place a mango on its side on a cutting board. With a sharp knife, cut straight down on either side of the large, flat-sided pit in the middle of the mango. Scoop out the mango pulp from both sides. Repeat with the second mango.
  • Place the mango pulp, sugar, 1/2 cup water, and the ice in a blender or a food processor with steel knife blade. Blend until smooth and frosty. pour the mixture into Popsicle mold or ice trays and freeze until solid, about 2 hours.

You only need 4 ingredients to make these delicious Mango Popsicles. They are so refreshing and perfect for a hot day.

3 cups Diced Mango (fresh or frozen (thaw first if using frozen))
1/4 cup Water
2 Tbsp Honey
1 Lime (juiced)

Steps:

  • Place all the ingredients in a food processor or a blend. Blend until the mixture is combined and smooth.
  • Pour the mixture into a popsicle molds and add popsicle sticks.
  • Place the molds in the freezer and freeze for 4-6 hours or until the popsicles are fully frozen (overnight works great too).
  • When you are ready to serve, run warm water on the outside of the molds to loosen the popsicles from the molds.
  • Then they are ready to enjoy!

Just mangos with a little bit of sugar (if needed) and a tiny bit of lemon juice to prevent browning. You could easily use stevia or erythritol for a sugar free version. I like to unmold my popsicles, wrap in wax paper, and store in a freezer bag so I can use the molds to make another flavor without having to finish the whole batch.

2 fresh mangoes (or 1 lb frozen diced mangos)
1/4-1/2 cup sugar
1 teaspoon lemon juice

Steps:

  • Peel mangoes, remove pit, and dice. I like to scoop the mango straight into the blender as I go.
  • Taste a piece of the mango, and add sugar as needed. Some mangos are very sweet and won't need any sugar added, some are a little bitter and will need the full 1/2 cup. Add the lemon juice (to prevent browning) and blend until you have a homogenous puree.
  • Divide puree among popsicle molds, and freeze until solid, about 6 hours. If you are using cups, freeze for 2 hours, then insert sticks, and freeze until solid, about 4 hours more.

1 cup water
1/2 cup sugar
1 dash salt
2 mangoes, peeled and sliced
1/2 cup light cream
1/4 cup lemon juice, fresh
2 egg whites
1/4 cup sugar

Steps:

  • Combine water, 1/2 cup sugar, and salt in saucepan. Cook 5 minutes, and cool.
  • Combine mangoes and cream in blender container. Blend til smooth. (Or, mash mangoes with a fork and add cream stirring to incorporate.).
  • Stir in cooled syrup and lemon juice. Divide and freeze mixture in two freezer containers until partially frozen (you can use one container, but it will take longer).
  • Meanwhile chill a mixer bowl. In a separate bowl, beat egg whites to the soft peak stage. Gradually add 1/4 cup sugar to the egg whites, and continue beating until the peaks are stiff.
  • Add contents of freezer containers to the chilled bowl, and break into chunks. Beat with a mixer until smooth. Fold in beaten egg whites. Return to the freezer containers, and freeze until firm.
