My aunt gave me this recipe ten years ago, when we were celebrating Christmas at her house. I have made it every year since then, and now my family considers it one of our traditions. The secret ingredient is baby food. This looks so pretty on the table. The color is fabulous. It's also great for Thanksgiving.

1 (6 ounce) package orange flavored Jell-O® mix
1 (20 ounce) can crushed pineapple with juice
½ cup white sugar
1 (8 ounce) package cream cheese, softened
2 cups frozen whipped topping, thawed
1 cup chopped pecans
1 (4 ounce) jar apricot baby food

Steps:

  • Mix orange-flavored gelatin with pineapple in a small saucepan. Cook over low heat until gelatin is completely dissolved. Remove from heat and stir in sugar. Cool completely.
  • In a medium mixing bowl, using a mixer on medium speed, beat gelatin mixture, baby food, cream cheese and whipped topping. Blend well. Stir in nuts. Spoon into serving bowl, cover, and refrigerate at least four hours.

1 (20-oz) can pineapple chunks in juice, drained and ½ cup juice reserved
1 cup (6 oz) quartered dried apricots
¾ tsp ground cinnamon
¼ tsp arrowroot
½ cup flour
½ cup quick-cook oats
1 stick unsalted butter, chilled, cut into ½-inch pieces
½ cup light brown sugar, packed
⅓ cup pecans, chopped
¼ tsp fine salt

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 425ºF. Spray 4 (10-oz) ramekins with vegetable oil cooking spray. Set aside.
  • For the filling: In a medium bowl, mix together the pineapple chunks, apricots, cinnamon, arrowroot, and reserved pineapple juice. Divide the mixture equally between the ramekins.
  • For the topping: In a food processor, combine the flour, oats, butter, sugar, pecans, and salt. Pulse together until the butter is the size of peas.
  • Spoon the topping over the filling mixture. Place the ramekins on a small baking sheet and bake until golden and the filling is bubbling, 18 to 20 minutes. Cool for 10 minutes and serve.

5-1/2 cups prepared fruit (buy about 2-1/2 lb. fully ripe apricots and 1-1/2 fully ripe medium pineapples)
1/2 cup fresh lemon juice
1 box MCP Pectin
1/2 tsp. butter or margarine
8 cups sugar, measured into separate bowl

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Pit unpeeled apricots. Finely chop or grind apricots. Measure exactly 3 cups prepared apricots into 6- or 8-qt. saucepot. Cut peel and core from pineapple; finely chop the fruit. Measure exactly 2-1/2 cups prepared pineapple into saucepot with apricots; mix well. Stir in lemon juice.
  • Stir pectin into prepared fruit mixture in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 4 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. 1-3/4 cups prepared fruit (buy about 2 lb. fully ripe apricots)
1/4 cup fresh lemon juice
1 box MCP Pectin
1 cup light corn syrup
4-1/2 cups sugar, measured into separate bowl

Steps:

  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Pit and finely chop unpeeled apricots. Measure exactly 1-3/4 cups prepared fruit into large bowl. Measure exactly 1-1/2 cups crushed pineapple with juice into bowl with apricots. Stir in lemon juice.
  • Stir pectin into prepared fruit in bowl. Let stand 30 min., stirring every 5 min. Stir in corn syrup. Gradually add sugar, stirring until well blended. Stir an additional 3 min. or until sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

1/2 fully cooked bone-in ham (5 to 7 pounds)
1 can (6 ounces) pineapple juice
1 jar (10 ounces) pineapple preserves
1 jar (10 ounces) apricot preserves
2 cans (8 ounces each) sliced pineapple, drained
1 jar (6 ounces) maraschino cherries with stems

Steps:

  • Place ham on a rack in a roasting pan. Score the surface, making diamond shapes 1/2 in. deep. Pour pineapple juice over ham. Cover and bake at 325° for 1-1/4 hours., Uncover; brush ham with preserves. Arrange pineapple slices and cherries on ham, securing with wooden toothpicks. As put in the instructions the timing of the microwave method will depend on the wattage of your microwave but unfortunately I couldn't find in the cook book any reference to what wattage oven they used. times are estimated and have based them on the conventional method..

1 1/4 cups pineapple juice (natural, NO ADDED SUGAR)
1/4 cup caster sugar
2 tablespoons orange juice
1/2 teaspoon cinnamon
1/4 cup water
1/2 cup apricot (dried and diced)

Steps:

  • Conventional Method:-.
  • In a medium sized saucepan combine the pineapple juice, sugar, orange juice and cinnamon and add the water and heat until boiling and then stir in the dried apricots.
  • Reduce the heat, cover and simmer for 10 minutes and allow to stand for 5 minutes.
  • Pour into a blender and blend until smooth and thickened.
  • Microwave Method:-.
  • Place the apricots, pineapple juice, sugar, orange juice and cinnamon in a medium sized microwave safe container and stir in the dried apricots.
  • Cover and cook on HIGH (100% for 6 minutes, stirring once and then allow to stand for 5 minutes).
  • Pour into a blender and blend until smooth and thickened.
  • Please note for the microwave method it will depend on the wattage of your microwave.
