Steps:
- Preheat oven to 350°. If desired, combine peaches and bourbon; let stand 10 minutes., Meanwhile, place 1/4 cup butter in a 10-in. cast-iron or other ovenproof skillet; heat in oven until butter is melted, 5-7 minutes. Sprinkle brown sugar evenly over butter. Arrange peach slices over brown sugar., For batter, in a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating after each addition just until combined. Spread batter evenly over peaches., Bake until a toothpick inserted in center comes out clean, 40-45 minutes. Cool 5 minutes before inverting onto a serving plate. Serve warm.

IRON SKILLET PEACH UPSIDE DOWN CAKE
I love cooking in my iron skillet, so when I ran across this recipe while thumbing through an old cookbook, I just could not resist giving it a try.

Steps:
- Preheat oven to 350°F.
- Spray skillet with non-stick cooking spray.
- Melt the 2 tablespoons butter in large iron skillet (frying pan), on top of stove.
- Add brown sugar, mix well and turn off heat.
- Press brown sugar mixture evenly onto bottom of skillet.
- Arrange peaches and cherries, in any pattern you prefer, on top of the brown sugar.
- Mix 1/2 cup softened butter and white sugar in bowl and blend well.
- Add eggs, and blend.
- Next add the flour, baking powder, salt and milk and blend until creamy.
- Add vanilla flavoring and blend.
- Spread batter on top of peaches and set pan on top of cookie sheet and bake for 1 hour.
- Allow to cool for about 5 minutes, then run a knife along the edges of the skillet to loosen.
- Place cake plate on top of skillet and invert, allowing cake to drop out of the skillet.
- Serve warm with whipped cream on top.
CAST IRON SKILLET UPSIDE DOWN CAKE
Another one I found in the Nebraska Kitchens Cookbook. Have fun and experiment with different fruits. If you don't have a cast iron skillet, any heavy pan will do.

- In bowl, mix flour, first six tablespoons of butter, eggs, baking powder, sugar, salt, and milk with a spoon to form a lumpy batter.
- Melt the remaining two tablespoons of butter and brown sugar in cast iron skillet on low heat.
- When sugar and butter are melted, sprinkle in about 1 cup of well-drained fruit. Pour batter mixture on top so that all fruit is covered.
- Bake in center of oven at 350 degrees for 35 to 40 minutes until center of cake tests done.
- Remove skillet from oven and immediately invert the skillet onto platter.
- If the cake doesn't drop on the first try, re-heat the skillet for a minute or two on the stovetop to loosen the sugars, but be careful as the fruit and sugar is very hot.

- Preheat the oven to 350 degrees F.
- For the pineapple: In a 10-inch cast-iron skillet over medium heat, melt the butter and add the brown sugar. Cook, stirring constantly, until the sugar melts, about 2 minutes. Remove from the heat and arrange the pineapple slices in the skillet. Fill in the spaces with the crushed pineapple. Set aside.
- For the cake: Meanwhile, combine the cake ingredients in this fashion: In one bowl, whisk together the flour, baking powder and salt. In bowl number 2, combine the milk, vanilla extract and 1/4 cup of the reserved pineapple juice.
- In the bowl of a stand mixer fitted with a paddle attachment, combine the granulated sugar and coconut oil on medium speed until thick and creamy, about 3 minutes. Beat in the egg. Add half of the flour mixture and mix on low until just combined. Add the milk mixture and stir until just combined. Add the rest of the flour and mix until combined, about 1 minute.
- Pour the batter over the pineapple slices in the skillet and spread evenly. Bake until the top is golden brown and a toothpick comes out clean when inserted, 25 to 35 minutes, checking after 20 minutes to make sure the top isn't getting too brown. If it is, cover loosely with aluminum foil.
- Let cool for 15 minutes. Cover with a cutting board or large plate and invert the cake. Ta daaaaaaa, you are ready to eat!
PRIZE WINNING PINEAPPLE UPSIDE-DOWN CAKE ON THE BBQ
Steps:
- Heat grill to 350 degrees F.
- Place a 10-inch cast iron skillet in the center of the grill and heat thoroughly.
- Meanwhile, make cake batter: Sift the cake flour, baking powder, and salt together; set aside. With a mixer, cream together the butter, sugar, and egg yolks. With the mixer on low speed, add the dry ingredients to creamed mixture, alternating with the milk. Add vanilla extract. In a separate mixing bowl, beat the egg whites until stiff peaks form and then fold them into the batter. Set batter aside.
- Place the 1/2 stick butter and the brown sugar in the skillet and let the mixture melt and begin to caramelize. When lightly caramelized, place pineapples and enough cherries to cover on top, in a decorative pattern. Then pour the cake batter over, filling to within 1/2-inch of the top of the skillet. Transfer the skillet to a large foil pan and cover with foil; be careful handling the skillet as the handle will also be very hot. Return to the grill and pierce the foil in the corners to allow steam to escape during the cooking process.
- Grill cake at 350 degrees F until cake is golden brown and springs back when lightly touched with your finger, about 45 minutes. Remove from the grill and run a knife around the edge of the skillet to free the cake; again, be careful handling the skillet as the handle will also be very hot. While cake is still hot, place a serving plate on top of the skillet and carefully turn the cake over onto the plate. Serve warm or cold.

- Preheat the oven to 375 degrees F (190 degrees C).
- Melt 1 stick butter in the bottom of a cast iron skillet over medium heat, about 3 minutes. Remove from heat and sprinkle brown sugar evenly over butter. Add pineapple slices on top of sugar in 1 decorative layer with a cherry in the middle of each pineapple ring. Set aside.
- Sift flour, baking powder, and salt together in a bowl.
- Cream sugar and butter together in a bowl. Add eggs and mix. Add flour mixture and milk in an alternating fashion. Add vanilla extract and mix well. Pour mixture evenly over pineapples in the skillet.

- Melt 1/3 cup of the butter in a 10-inch cast-iron skillet; stir in brown sugar until well blended.
- Drain pineapple, reserving 2 tablespoons of the syrup.
- Arrange pineapple slices close together in butter-sugar mixture.
- Center each slice with a cherry.
- Sift flour, baking powder and salt onto waxed paper.
- Beat egg whites until foamy in medium bowl.
- Beat in 1/4 cup of the granulated sugar a tablespoon at a time until meringue stands in soft peaks.
- With same beater, beat remaining 1/3 cup butter with remaining 1/2 cup sugar until fluffy.
- Beat in egg yolks, lemon rind, lemon juice and vanilla.
- Blend flour mixture into creamed mixture alternately with sour cream and the 2 tablespoons reserved pineapple syrup.
- Fold meringue until no streaks of white remain.
- Pour over pineapple in skillet.
- Bake in a 350° oven for 35 minutes or until center springs back when lightly touched with fingertip.
- Cool cake in skillet on wire rack for 10 minutes; then invert over serving plate.
- Allow skillet to remain over a cake a minute for syrup to drain from pan.
- Serve warm or cold.
UPSIDE-DOWN APPLE CAKE IN CAST IRON SKILLET - MY RECIPE -
I got two of my Mom's cast-iron skillets. In one of them, i make eggs, omeletts, fried chicken, fried vegetables, fried breaded meats, etc. In the other one, i make cakes and desserts because i don't like to mix flavors in the same one. I have made this apple cake in it and it is very good, so am sharing my recipe here. Enjoy it like we do.

- Place your oven rack in the middle of the oven and preheat oven to 350ºF.
- Prepare the topping, melting the 1/3 cup butter in a 10" cast iron skillet ((2" deep), over low heat.
- Remove skillet from heat and stir in the brown sugar and ground cinnamon (or apple pie spices) using a fork.
- Spread this mixture evenly over the bottom of the skillet and arrange the apple slices over the butter/sugar mixture in the skillet.
- In a mixer, blend cake mix, 1 stick melted butter, sour cream, dark corn syrup, eggs and ground cinnamon.
- Beat on low speed for 1 minute. Increase speed to medium and beat 2 minutes longer until creamy.
- Pour the batter over the top of the apples in the skillet and then place the skillet in the oven and bake at 350ºF. for 40-45 minutes and bake until the cake rises high in the skillet, (it will spring back when lightly pressed with your finger when it's done).
- Remove skillet and cool cake in the pan for 5-10 minutes and then run a knife around the edges of the cake to loosen it from the sides of the pan and carefully flip upside down onto a serving plate.
- Cool completely for about 15 minutes and serve warm with vanilla ice cream if you like.
- I have made this cake with Duncan Hines Caramel flavor cake mix and the taste is excellent, too.
- NOTE: this cake can also be made in these baking pans. Just prepare the butter, brown sugar and spices in a skillet over the stove and then pour this mixture in the baking pan sprayed with cooking oil, add the apple slices, pour the batter and bake it.
- Here is a guide to bake the cake in those pan sizes:
- Pan Size: 13x9 inches - Oven Temp: 350ºF. - Baking time: 30-35 minutes.
- Pan Size: 9x9 inches - Oven Temp: 350ºF. - Baking time: 35-40 minutes.

SKILLET RHUBARB UPSIDE-DOWN CAKE
Steps:
- Melt margarine and brown sugar in 9-10 inch cast iron skillet. Add chopped rhubarb, sprinkle generously with cinnamon and sugar. Set aside.
- Mix remaining ingredients into a smooth batter. Pour over rhubarb mixture in skillet.
- Bake approx. 30 minutes in 350 degrees F oven. Turn onto serving platter while hot.

My boyfriend loves pineapple upside down cake and any dish that involves the iron skillet, and I am the famed cake baker in the family. That is how this cake and I introduced ourselves to one another. I am not a fan of cakes without yummy frosting or chunks of fruit. Until I put this recipe together and am in love with the cake including the pineapples! I used a 10 inch iron skillet to bake this.

- 1. Preheat oven 350 degrees.
- 2. Melt butter in skillet
- a. Sprinkle brown sugar over butter to ¼ inch thick on bottom of skillet.
- b. Place pineapple slices side by side inside pan.
